Monday – Cacio e Pepe Zoodles
Cacio e Pepe Zoodles are so simple yet so delicious! The strong parmesan and pepper flavor complements zucchini perfectly. If good zucchini isn’t available, spaghetti squash makes a great substitution. This recipe makes 2 servings, 2 net carbs each.

Keto Meal Prep Tips:
- Separate and prepare ground beef
- With 1 pound, mix with crushed pork rinds, ranch seasoning, and an egg, then form 24 meatballs. Stuff with cheddar cheese cubes and cook. These will keep 3-4 days in the fridge or up to 6 months in the freezer.
- Cook 1 pound with taco seasoning and water for taco meat. This will last 3-4 days in the fridge, or you can freeze in individual portions to pull out servings as you need. Frozen meat will last up to 6 months.
- Spiralize zucchini noodles. These will keep 2-3 days in the fridge in an airtight container (line with a paper towel to absorb moisture).
- Lunch Rollups, Turkey Wraps, and Turkey Rollups all require no cooking and can be prepared in under 5 minutes. These all can be prepped up to 2 days ahead of time as long as there’s a barrier between wet ingredients (tomato, pickles, etc.) and delicate ingredients like lettuce.
