Here are five low-carb lunches that would work with a keto diet! I’ll be honest — Because I’m not feeding a lot of mouths, I usually stick to 2-3 recipes, and then I repeat lunches in the week. Monday – Buffalo Chicken Bites
Buffalo Chicken Bites are easy to love because they are easy, delicious, and meal prep friendly! This recipe makes 24 bites, each one just 0.8 net carbs. If you freeze these, they can be thawed and reheated in the microwave or be eaten cold, making them perfect for the office or school!

Thursday – Crack Chicken
Cheesy and creamy, people love Crack Chicken! It works well as a sandwich (just use chaffles as buns) or as a dip with Keto Chips (check out the bonus recipe!). It makes 8 servings (3/4 cup each) for 1.1 net carbs. I wouldn’t freeze this, but I don’t think you’ll have many leftovers at the end of the week!

Bonus Recipe – Keto Tortilla Chips & Pepperoni Chips
These are unbelievably easy! Keto Tortilla Chips are made with just 0-carb tortillas and spray oil! A serving is 8 chips, and it’s 0 net carbs. Pepperoni Chips are made the same way, but the pepperoni becomes your chip! Each serving is 14 chips for 0 carbs.

Keto Lunch Meal Prep Tips
- Buffalo Chicken Bites can easily be frozen and reheated! If you have leftovers or want to cook an extra batch for future lunches and snacks, it’s a great idea!
- Lunch skewers, Pepperoni wraps, and Lunch rollups could be prepped ahead of time, but they’re best within about 24 hours, so making them the night ahead would be easy and take maybe 5 minutes.
- Crack chicken is great as a sandwich filling or as a dip with chips! The bonus is a chip recipe, so I recommend having it for lunch with chips, then later in a sandwich with two chaffles!
- Both chip recipes stay crispy for a whole week, though the pepperoni chips do soften quicker than the tortillas. These don’t freeze well, so try to eat them in that first week.
