Today’s recipe is full of fresh summer flavor! This Greek Cucumber Salad is loaded with cucumber, tomatoes, red onion, peppers, olives and a simple lemon and olive oil dressing. I have always loved a good cold pasta salad packed with vegetables and this has become my low carb substitute.
You’ll love this salad on it’s own, but it is equally delicious paired with chopped leafy greens and grilled chicken to make a Greek Chicken Salad that is hardy enough for dinner. I love this Grilled Chipotle Chicken, but if you want something with less spice, try this Balsamic Grilled Chicken.

- Cucumbers- chopped
- Tomatoes- chopped
- Red onion- chopped
- Pepperoncini peppers
- Olives- green, black or kamalata

How to make a keto Cucumber Salad
This meal comes together in a flash! In a large bowl, combine your cucumbers, tomatoes, onion, peppers and olives. Drizzle in the olive oil and lemon juice. Add salt and pepper and combine. Fold in your feta cheese when you’re ready to serve!

Store your leftovers in a glass or plastic container with an airtight lid. This salad will stay fresh in the fridge for up to two days.

Ingredients
- 2 cucumbers, chopped
- 1 cup tomatoes, chopped
- 1/2 cup red onion, chopped
- 1/4 cup jarred pepperoncini peppers
- 1/4 cup olives (green, black or kalamata)
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1/2 cup crumbled feta cheese
- salt and pepper to taste
Instructions
- Combine all chopped vegetables, peppers and olives.
- Drizzle with olive oil, lemon juice and salt and pepper to taste. Stir well
- Fold in crumbled feta cheese when ready to serve.
