Monday – Coconut Flour Muffins
These Coconut Muffins are perfectly fluffy, soft, and buttery. It’s easy to take these on the go to enjoy at your desk, on the bus, or as a part of brunch! This recipe makes 6 large muffins, 4.7 net carbs each. These can even be frozen for long-term meal prepping or to provide an easy breakfast option for new parents, sick family members, or friends who need a little help.

You will LOVE these Keto Bagels. The texture is SO similar to real bagels, can be frozen, and they make fantastic breakfast sandwiches. This recipe makes 8 bagels, just 3.4 net carbs each. This week’s grocery list includes ideas for breakfast sandwich fillings, but you could always just top with cream cheese and a little seasoning!

These Ham Quiche Cups bring the great flavor of a quiche with the convenience of a muffin! This recipe just uses FOUR ingredients (the grocery bill will be so happy), and each quiche cup has just 0.8 carbs. You’ll have 12 delicious egg muffins, easy to freeze and reheat later.

Bonus Recipe – Avocado Chaffle Toast
This Avocado Chaffle Toast is straight from brunch! This recipe makes 1 chaffle toast, just 4.8 net carbs when made with a basic chaffle (it’ll be a part of our lunch plan this week, too)! If you’d like to make it with the Bacon Cheddar Chaffle from Friday, it will be 5.6 net carbs.
Keto Breakfast Meal Prep
This week’s meal prep is so easy because EVERYTHING is freezable! On your prep day, turn on a good podcast and cook your heart out. When the muffins, quiche, chaffles, and bagels are all cooked, allow them to cool completely. For each of these recipes, place the baked goods on a baking sheet (not touching) and freeze for 30 minutes to an hour. Transfer to freezer bag and eat within 3 months for the best texture.
To further prevent freezer burn (and to make them easily travel-friendly), wrap each item multiple times with plastic wrap before storing in the freezer bag. This is optional, but it provides more protection and means you can quickly transfer it from the freezer to fridge to thaw.
