That’s why I love these Chocolate Covered Macadamia Nuts! Sugar free chocolate chips are melted with coconut oil and poured over nutritious macadamia nuts and are topped off with sea salt.
This healthy keto sweet is low carb, gluten free and will help to keep you going throughout your day! On a keto diet, it is recommended to stay under 50 grams of carbs per day. Are Macadamia Nuts Healthy?
Absolutely! Macadamia nuts are an excellent choice for any healthy eater, but they are especially beneficial on a keto diet. These nuts are naturally very low in sugar and carbs. They are also high in healthy fat, which can help to lower your risk of heart disease as well as lower your cholesterol. Macadamia nuts are also high in vitamins and nutrients, as well as fiber. These nuts have a buttery, creamy flavor, and are the perfect healthy keto snack!

Besides macadamia nuts, there are several varieties of nuts you can enjoy while staying keto. Peanuts, walnuts, pecans, almonds and brazil nuts are all excellent low carb nut options.

Chocolate is not off limits on a keto diet! Choosing a sugar free chocolate is what you’ll need for a low carb chocolate option. If you aren’t familiar with sugar free chocolate, it is sweetened with usually Stevia or monkfruit, which are natural sweeteners, or also sugar alcohol. Sugar free chocolate does not have a strange taste, but tastes very similar to a more traditional chocolate.
Sugar free chocolate melts the same as traditional chocolate, so you can use it in your favorite recipes! You can buy keto chocolate online- I have used Lily’s brand in this recipe, or on Amazon. You can also find low carb chocolate in grocery stores, usually either by the regular chocolate or in the pharmacy area of the store. I used low carb chocolate in these Keto Chocolate Chip Cookies, Air Fryer Brownie and this Keto Crockpot Candy and I have always had wonderful results!
How to Make Chocolate Covered Macadamia Nuts
First, melt the coconut oil over low heat in a double boiler. If you do not have a double boiler, use a microwave safe bowl and melt your oil in the microwave, or use a small saucepan and melt over the stove top. When your oil has fully melted, add the chocolate chips and stir until melted.
Fold the macadamia nuts into the chocolate mixture. Scoop the mix onto wax paper in tablespoon sized mounds. If desired, sprinkle with sea salt and allow to chill until fully set.
Tips for Melting Chocolate
To melt chocolate, you will need to heat your chocolate over a low heat slowly and stir continuously. Coconut oil helps to loosen the chocolate so that you get a smooth melt. If you have melted your chocolate too fast, it can become gritty. If that is the case, you can add 1 teaspoon of coconut oil at a time and stir until your chocolate is smooth again.

Chocolate Covered Macadamia Nuts

Ingredients
- 2 cups roasted salted macadamia nuts
- 1 (8 ounce) Lily's Semi Sweet Chocolate Chips
- 1-2 tablespoons coconut oil
- sea salt (optional)
Instructions
- In a double boiler, small saucepan, or micorwave proof bowl, melt the coconut oil over low heat. When the oil is completely melted add the chocolate chips and stir until completely melted.
- Fold the nuts into the melted chocolate. Scoop the clusters into heaping 1 tablespoon mounds and place on wax paper.
- Sprinkle with sea salt if desired and chill until set.
Notes
You can use another nut such as peanuts, almonds, pecans or walnuts if you prefer.
