Keto Lunch Meal Prep Tips
- Separate and cook chicken – Reserve a 1/2 cup (or cut a 4 ounce tender) for the lettuce wrap, 2 1/2 cups for the stuffed peppers, and 2 cups for the hot pocket. Chicken will keep up to 4 days in the fridge, so you may want to freeze the portion for the stuffed peppers.
- Separate and cook bacon – Reserve 2 slices for the lettuce wrap, the rest for the broccoli salad.
- Make the fathead dough and cook both the hot pocket and pigs in a blanket. These will keep in the fridge up to 4 days. You can freeze either recipe by allowing the food to completely cool, wrapping it in multiple layers of plastic wrap, then storing it in a freezer bag up to 6 months.
- Broccoli salad stays fresh in the fridge for 3-4 days, and leftover portions do not freeze well. Cut the recipe in half if you won’t be able to eat 11 servings. Store individual portions in tight mason jars to keep the broccoli perfectly crisp. Bacon may lose its crunchiness, so keep portions in baggies if you prefer it nice and fresh.
