All you need to do is mix a few spices together to make the perfect pork rub and turn your oven on! Below you will find the step-by-step guide to making the perfect oven-baked pork chops!

Ingredients for Baked Pork Chops

As always, this is a quick overview of the ingredients you will need to make this pork chop recipe. For the complete, printable recipe just keep scrolling.

  • Pork Chops: this recipe is perfect for 1-inch thick pork chops. You can use boneless, or bone-in chops. However, I do not recommend this method for thick-cut pork chops. For thick chops use this method, it is incredible and absolutely foolproof.
  • Olive Oil: any good quality neutral oil such as olive oil, or avocado oil. Don’t skimp, this keeps things nice and juicy and helps the spices adhere to the pork.
  • Spices: for this recipe, we make a homemade spice rub. You will need brown sugar monkfruit (or regular brown sugar if not low carb), chili powder, paprika, garlic powder, onion powder, oregano, salt, and pepper.

Oven Baked Pork Chops

The best baked pork chops can be made in just three simple steps. These pork chops are great with collard greens, a classic Wedge salad, or air fryer green beans! Follow the guide below to see the step by step photos.

Make the Pork Rub

Combine the spices in a small bowl or jar. Mix the spices well until completely combined. This spice mix is excellent on pork chops and pork tenderloin. If you want to make a double batch will make at least two meals worth of pork.

Using a paper towel pat the pork chops dry. This is important because if the surface of the pork chops has moisture that moisture will actually steam the chops instead of allowing the exterior of the chops to caramelize and brown during the cooking process. To the naked eye, it may not seem that your chops have very much moisture, but you will be really surprised when you pat them well with a paper towel.

Rub the Chops with Oil

Drizzle the pork chops with olive oil and make sure both sides are coated well. The oil will not only help the rub adhere to the pork, but it aids in keeping the pork chops juicy and help the outside of the chops caramelize and brown perfectly. This is a step you do not want to skip!

Season the Pork Chops

Sprinkle the outside of the chops liberally with the spice rub. You want to make sure everything is coated nicely so each bite is loaded with flavor!

  1. Add your pork chops and ranch seasoning to a bag and shake to coat. Turn the Instant Pot to the saute function and add the olive oil and pork chops. Sear for 2-3 minutes on each side and remove.
  2. Place the butter, garlic and onion inside the Instant Pot. Saute until onions are soft. Add the beef broth and deglaze the bottom of the pan. Stir in the Worcestershire sauce and mustard and add the pork chops back to the Instant Pot.
  3. Cook for 6 minutes and allow the Instant Pot to release the pressure for 10 minutes.
  4. Remove the pork and allow the gravy to cool a little, then stir in the sour cream. If you want the gravy to be thicker, add your thickening agent here. Add the pork back to the sauce and serve.

  • If you are wanting your gravy to be thicker, there are two different thickening agents you can use. You can use corn starch, but if you are strict keto, you can also use xantham gum.
  • Do not release the pressure inside of the pressure cooker- allow the Instant Pot to do so.
  • Be sure to scrape the bottom of the pan when you are adding in your beef broth.
  • You do not have to thicken the gravy- it’s totally optional!

These Instant Pot pork chops are so easy to make, and take less than half an hour. They're packed with flavor from ranch seasoning and Worcestire sauce, and they're tender and juicy.

Ingredients

  • 1 tablespoon olive oil
  • 4 (2-inch thick) pork chops
  • 1 (1-ounce) package Hidden Valley Ranch seasoning
  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 2 teaspoons garlic, minced
  • 1 cup beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1/2 cup sour cream

Instructions

  1. Place the pork chops and ranch seasoning in a large plastic bag. Seal the bag and shake to coat.
  2. Turn on the sauté function on the Instant Pot. Add the olive oil and carefully place the pork chops in the base of the pressure cooker. If there is any seasoning left in the bag then sprinkle it over the chops. Allow the chops to sear 2-3 minutes on each side until golden brown. Remove the prok from the pressure cooker.
  3. Add the butter, garlic and onion. Sauté until the onions are soft, then add the beef broth to deglaze the pan. Be sure to scrape up all the little brown bits that have stuck to the bottom of the Instant Pot.
  4. Stir in the Worcestershire sauce and mustard. Add the pork chops back to the Instant Pot.
  5. Close the lid and and set the cook time to 6 minutes. When the cooking cycle has ended allow the machine to manually release the pressure for 10 minutes.
  6. Remove the pork chops from the Instant Pot. Let the gravy to cool slightly so it doesn't curdle, then add the sour cream and stir until smooth.
  7. If you wish to thicken the sauce you can use corn starch (if not keto) or xanthan gun. See notes below.
  8. Add pork chops back to sauce and serve.

Notes

  • If you want to thicken the sauce, then turn the Instant Pot onto the sauté setting after you've added the sour cream. Add 1/2-1 teaspoon of xanthan gum or, if you're not keto, a combination of 1 tablespoon water and 1 tablespoon cornstarch stirred together. Cook until the sauce is the desired thickness, then turn off the Instant Pot and add the pork chops.
  • Store leftover pork in an an airtight container in the fridge for 4 days, or in the freezer for 3 months.

By searing your pork on both sides at a high heat, you are browning the protein in the meat as well as caramelizing the outer layer. As always, here is a quick run down of the ingredients needed to make this recipe. For the complete instructions, simply scroll to the recipe at the bottom of this page.

  • Pork Chops: look for a thick 2 inch pork chop for this recipe. You can use bone in or boneless if you prefer, the cooking times will not change as long as you stick with a nice thick chop. 
  • Mushrooms: I prefer Baby Bella mushrooms, but other varieties such as button, or cremini will also work.
  • Butter:  salted butter works best in this recipe. 
  • Steak marinade: use your favorite variety. 
  • Balsamic vinegar: adds excellent depth and flavor to the mushrooms. 
  • Garlic: freshly minced garlic.
  • Herbs and spices: Parsley, chives, salt and pepper.

How to make Cast Iron Pork Chops

  • Marinate your pork. Allow your pork chops to marinate in the fridge  for at least an hour and up to 24 hours. 
  • Season. Mix the melted butter, balsamic vinegar, garlic, herbs, salt and pepper and drizzle over the mushrooms. Toss until coated and set aside. 
  • Sear. In an oven safe skillet (I used a cast iron), heat one tablespoon of olive oil over high heat. When the skillet and the oil are very hot, add the pork chop. Sear two minutes on each side. After searing, add the mushrooms to the skillet. Place the skillet in the oven and bake ten minutes. Flip and bake for another 5-10 minutes, or until the internal temperature reads 145 degrees. 

Do I have to use thick cut pork chops?

For the particular recipe, yes. Thin pork chops will overcook if kept in the oven this long. If you only have thinly cut chops, I recommend reducing the cooking time by 5-10 minutes. The mushrooms will need the full cooking time of 15-20 minutes.

How to store and reheat Pork Chops 

Store in a plastic or glass container with an airtight lid in the refrigerator. These pork chops and mushrooms will stay fresh for up to four days. To reheat, you can either pop your leftover pork and mushrooms in the microwave until they are warm enough for you, or bake. If you decide to bake, place your leftovers in an oven safe pan or skillet.

Add two tablespoons water or broth to the skillet and cover with aluminium foil. Bake at 350 degrees for 10-15 minutes. You can also warm the mushrooms in a skillet over medium heat.

Can you make Keto Pork Chops ahead of time?

Absolutely! You can prepare your pork chops as described above and then place in the freezer. Place each pork chop in it’s own individual freezer bag. When you are ready to serve, simply thaw and reheat as detailed previously.

Pork Chops

  • 2 (2 inch) thick cut pork chops
  • 1/3 cup steak marinade (your favorite variety)
  • salt and pepper to taste

Mushrooms

  • 16 ounces Baby Bella Mushrooms, washed and sliced
  • 2 tablespoons butter, melted
  • 2 tablespoons Balsamic vinegar
  • 3 tablespoons garlic, minced (3-4 large cloves)
  • 2 tablespoons parsley, chopped
  • 1 tablespoon chives
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper

Instructions

  1. Marinate the pork chops in the steak marinade up to 24 hours ahead of time.
  2. Combine all of the mushroom ingredients in a bowl and set aside.
  3. When ready to cook preheat the oven to 400 degrees F. Remove the chops from the marinade and season well with salt and pepper on each side. 
    Heat an oven safe skillet over high heat, add one tablespoon of olive oil. When the skillet and oil are piping hot add the pork chop and sear 2 minutes on each side.
  4. Remove the pork chops from the skillet and quickly pour the mushrooms into the pan. Place the chops back into the skillet and place the entire skillet with the chops in the oven and bake 10 minutes, flip and bake another 5-10 minutes until the internal temperature reaches 145 degrees F.
