Ingredients

Marinara Cream Cheese Mixture

  • 4 ounces cream cheese, softened
  • 2 1/2 tablespoons marinara (low carb if keto)
  • 3 teaspoons Italian seasoning

Pizza Pinwheels

  • 4 tortilla (low carb, gluten-free, or flavored work as well)
  • 16 large deli pepperoni
  • 12 slices of mozzarella

Instructions

  1. Mix together your cream cheese, marinara sauce, and Italian seasoning in a small bowl, set aside.
  2. Lay one tortilla on a plate, then spread 1/4 of the marinara cream cheese mixture over 3/4 of the tortilla. Leave the top 1/4 bare as it will spread when we roll the tortilla.
  3. Place your deli pepperoni and mozzarella slices on the bottom 3/4ths of the tortilla.
  4. Starting at the bottom, carefully roll the tortilla upwards, making sure to keep the roll tight. With the seam-side down, secure with toothpicks.
  5. Chill in the fridge for at least 30 minutes -- This makes it easier to cut the pinwheels. Take out of fridge, cut into 1 inch slices, and serve! Optional: serve with marinara or pesto for dipping.

Notes

To reduce the carbs, you could use a cheese wrap instead of a tortilla and skip the cheese slices on the inside. With these changes, each 1 inch pinwheel comes to 29 calories, 2.6 grams fat, 7.1 mg cholesterol, 58.4 mg sodium, 0.4 gram carbs, 0.1 gram fiber, 0.1 gram sugar, 1.2 grams protein

Today I am sharing one of my favorite, super easy, go-to recipes! These Pepperoni Pizza Chaffles are a cinch to make. They require very basic ingredients you probably already have on hand, minimal effort and only one bowl for clean up! We enjoy these as an effortless lunch option, but they make a great appetizer too! Simply quarter the chaffles and serve with warm marinara for a low carb, crowd pleasing dish!

What is a Keto Chaffle?

Chaffles are a keto staple for many! While the term chaffle may be new to some, most of you probably know it as a “cheese waffle.” The term chaffle came to be because this is a waffle that is made from a cheese base. Most chaffle recipes contain some variety of egg, cheese and a low carb flour, such as coconut or almond flour.

The mixture may sound off, but I can assure you, they make perfectly crisp waffles on the outside and delightfully fluffy waffles on the inside!

How do you make a Pepperoni Chaffle?

These low carb pizza waffles are so simple to make. Simply beat the eggs, then fold in the almond flour, baking powder, seasoning, shredded mozzarella cheese and pepperoni.

Add the batter to a mini waffle maker, be careful not to overfill, and cook 2-3 minutes until you no longer see any steam coming from the machine. Enjoy hot from the waffle maker with warm, low carb marinara sauce!

What waffle maker should I use for chaffles?

You can make a chaffle with any waffle maker you have. However, I do love this handy little Ms. Dash waffle maker, they are the perfect size. This is the machine I used for this recipe and it makes 5 perfect waffles.

This size is also great as a bread substitute, you can layer your favorite sandwich fillings in between two chaffles and enjoy a quick and easy low carb sandwich!

Are these good for Meal Prep?

These cheese waffles do reheat well. You can microwave until warmed through, reheat in a toaster or air fryer, or enjoy cold! I like to serve these with low carb marinara for dipping and an Italian side salad that consists of greens, parmesan, a few tomatoes, pepperoncini peppers and Italian dressing.

Are you missing pizza night? Believe it or not, you don’t have to give up pizza on a keto diet! Friday night has always been pizza night in our house. When I started keto I was so bummed that we wouldn’t be able to continue our tradition.

Luckily, I figured out the best fathead keto pizza dough. Spoiler alert, I don’t use an egg! It makes it way easier to make and great for those with egg allergies. I use this dough in our house all the time! It’s perfect for Keto Cinnamon Rolls or my nephew’s favorite- Keto Pigs in a Blanket!

This Keto Chicken Bacon Ranch Pizza is insanely good. A crispy, keto crust (similar to a regular thin crust pizza) is piled with a creamy homemade ranch pizza sauce, grilled chicken, crispy bacon and loads of cheese. This is one dish your entire family will love, and not miss any of the carbs! I promise!

Keto Chicken Bacon Ranch Pizza Ingredients

As always, here is a quick overview of the ingredients used in our homemade chicken bacon ranch pizza. For the complete list of ingredients, just scroll to the bottom of this page.

  • Mozzarella cheese- shredded
  • Cream cheese- full or reduced fat both work fine
  • Almond flour
  • Flax meal- ground
  • Butter
  • Garlic- minced
  • Half and half- heavy cream will also work
  • Cream cheese
  • Ranch seasoning mix
  • Chicken- grilled
  • Bacon- cooked and chopped
  • Mozzarella- shredded
  • Green onions

How to make Homemade Chicken Bacon Ranch Pizza Keto

First, you’ll make your keto fathead dough. Heat your mozzarella and cream cheese in the microwave in 30 second increments until completely melted, then add the almond flour and flax meal. Mix well and spread onto a greased pan. Bake in a 400 degree oven for 7 minutes.

Next, make your ranch pizza sauce. Melt the butter and saute the garlic in a sauce pan over medium heat. Add half and half and cream cheese and mix until smooth. Stir in the ranch seasoning and remove from heat. Spread the ranch pizza sauce on top of your prebaked crust and top with mozzarella, chicken and bacon. Bake an additional 7-10 minutes or until the cheese is bubbly. Top with bacon and green onions!

Is Ranch Pizza Sauce keto?

Store bought pizza sauces tend to have added sugar, but this homemade ranch pizza sauce does not! This ranch pizza sauce is keto, low carb and gluten free.

Is pizza good for keto meal prep?

Yes! Store this homemade chicken bacon ranch pizza in either a plastic container with an air tight lid or in a plastic bag. You can reheat this chicken bacon ranch pizza in a few different ways. You can warm in the microwave in 30 second increments until your desired temperature is met. You can also warm on the stovetop or in the oven. If you have an air fryer, warming this pizza in the air fryer will give you the crispiest crust!

Ingredients

For the Keto Pizza Crust

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 3/4 cup almond flour
  • 2 tablespoons ground flax meal

For the Ranch Pizza Sauce

  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 1/4 cup half and half
  • 1 ounce cream cheese
  • 1 tablespoon dry Ranch seasoning mix

For the Topping

  • 3 cups sliced grilled chicken
  • 3 slices of bacon, cooked and chopped
  • 1 cup shredded mozzarella
  • green onions for garnish (optional)

Instructions

    FOR THE CRUST:

    1. Preheat the oven to 400 degrees
    2. In a microwave proof mixing bowl combine 2 cups shredded mozzarella cheese and 2 ounces cream cheese. Heat in 30 second increments, stirring in between until completely melted. Add the almond flour and ground flax meal.
    3. Mix the dough well until you have a soft ball
    4. Spread onto a greased pizza pan. I had a roughly 10-11 inch crust.
    5. Pre-bake the crust for 7 minutes. It should be slightly brown (see photo in post for step by step photos)

For the Ranch Pizza Sauce:

    1. In a small saucepan heated over medium heat melt the butter and sauté the minced garlic.
    2. Add the half and half and cream cheese and stir until the cream cheese dissolves and the mixture is smooth.
    3. Stir in the ranch seasoning mix and remove from heat.
    1. Spread the ranch sauce on the pre-baked crust and top with the sliced grilled chicken HALF the bacon and top with the mozzarella.
    2. Bake an additional 7-10 minutes until the cheese is browned and bubbly.
    3. Top with the remaining bacon and green onions if desired.
      IMPORTANT NOTE: Since this is a cheese based crust the edges are prone to brown quickly. If you find the edges of your crust are browning a little quicker than you would like use thin strips of aluminum foil to cover the crust and this will prevent over browning.

Yes, you read that right — keto fruit pizza! This is a low carb version of that delicious fruit pizza made of a sugar cookie crust, sweet vanilla frosting, and loads of fruit!

Aside from my favorite strawberry lemonade (which I’m working on a keto version of!) fruit pizza was a favorite summer dish I was really missing.

This is my take on a healthy fruit pizza, and it’s a recipe everyone can enjoy. Take this to your next picnic or bbq, it’ll be gone in minutes!

Keto Fruit Pizza Ingredients

At first glance, you may think that a fruit pizza is off limits for a keto or low-carb diet. However, I believe the best approach to nutrition or any diet is moderation. Fruits do have carbs, but instead of saying you cannot have them, I advocate moderation instead.

For this recipe you will need:

  • Butter
  • Almond flour- Anthony’s is a brand I’ve had a lot of success with!
  • Keto-friendly sweetener- I used Swerve
  • Vanilla extract
  • Cream cheese
  • Heavy cream
  • Almond milk
  • Strawberries 
  • Blueberries
  • Blackberries

How to Make Keto Fruit Pizza

This fruit pizza crust is made from the same sweet almond flour base I use for my Keto Lemon Bars. It is a simple mixture of butter, sweetener, vanilla extract and almond flour pressed onto a pizza pan and baked until lightly browned.

Then, we top it with a sweet vanilla cream cheese frosting that complements that delicious almond flour crust perfectly!

Next comes the controversial part, the fruit. If you are on keto you know it is all about your net carb consumption and fruit happens to have quite a few carbs in it. For this pizza, I stuck with blueberries, blackberries and strawberries.

What fruit can I have on keto? 

I used blackberries, strawberries, and blueberries to make this easy fruit pizza recipe. However, you may use any keto-friendly fruits you’d like such as raspberries or shredded coconut.

How Long Does Fruit Pizza Last? 

I recommend serving this healthy fruit pizza within 24 hours of assembling it. However, it will last up to four days in the fridge. 

Note that the crust will soften over time as the frosting and fruit juices sink into it. 

Tips for Making Keto Fruit Pizza

  • The frosting also makes a good fruit dip if you want to make extra for any additional fruit you may have.
  • To keep the fruit to a minimum, I sliced the strawberries very thinly. I actually only used 3 strawberries for this entire pizza.
  • By thinly slicing the strawberries and spacing the fruit out a bit, you’ll be able to keep the carbs low and still enjoy a summer favorite!

  2. In a bowl combine the melted butter, almond flour, sweetner, and vanilla extract until a soft dough forms.
  3. Spray a pizza pan or baking sheet lightly with cooking spray or parchment paper to make it easier to slice and remove.
  4. Carefully press the crust into an even layer. Tip: I place a silicone baking sheet on top of the crust and press or roll the dough into an even layer and then carefully, slowly peel the silicone off the dough. My crust is between 10-11 inches in diameter.
  5. Bake the crust 6-7 minutes until lightly browned and completely set. BE CAREFUL NOT TO OVERCOOK. Cooking time may vary slightly depending on how thick you press your crust.
  6. Allow crust to cool.
  7. In a food processor, blender or with a hand mixer combine the cream cheese, sweetner, cream, almond milk and vanilla and blend or mix until smooth.
  8. Spread the cream cheese frosting on the crust and top with fruit

Notes

Please note the crust is an almond flour base. Almond flour is a courser grain than regular flour and can tend to crumble. To help you can bake your crust on parchement paper so it is easier to remove from the pan.

You can also place in the freezer 10-15 minutes before slicing and serving and this will help come out with clean slices.
