What is Zuppa Toscana? 

Zuppa Toscana, which can be loosely translated as Tuscan Soup, is known to many as “Olive Garden Soup.” This hearty, comforting soup is beloved by many because of its unique combination of flavors. However, this soup is actually an Italian classic that originated in Tuscany. This soup features sausage, bacon, kale, onion, and garlic in a creamy broth. 

Today, I am sharing a shortcut recipe that is made in an Instant Pot. It only takes 5 minutes of prep time and 5 minutes of pressure cooking time! As a bonus, this recipe is low-carb and keto-friendly by making one clever substitution without sacrificing its incredible taste! 

Ingredients for Keto Zuppa Toscana

As always, this is a quick overview of the ingredients you need for this low-carb soup recipe. For the complete recipe, just keep scrolling. 

  • Meat: Ground Italian Pork Sausage and Bacon (you could use turkey sausage if looking to reduce fat)
  • Vegetables: onion, garlic, turnips, kale
  • Spices: onion powder, garlic powder, salt and pepper
  • Liquids: Chicken broth, heavy cream (you can make this recipe dairy-free by subbing coconut milk for the heavy cream)
  • Optional Ingredients: shredded parmesan cheese or Asiago are highly recommended! Spinach is another common addition.

How to make Zuppa Toscana in an Instant Pot?

  • Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon, remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
  • Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
  • Add the spices, cubed turnip and broth. Secure the lid and pressure cook for 5 minutes. Allow it to naturally release pressure for 10 minutes. 
  • Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
  • Stir in the cooked, crumbled bacon and parmesan if desired, just before serving. 

How do you make Keto Zuppa Toscana?

This recipe is very easy to make keto. Instead of Russet potatoes, we use peeled, cubed turnips. Hear me out, turnips have a very similar consistency to potatoes when cooked in a soup like this. This is the same method I used for my Keto Beef Stew

When I served this my family members did not even realize these were turnips, so give it a shot! It really is a great low carb alternative for potatoes. 

What other low-carb substitutes can you use instead of potatoes?

While I love turnips, there are other keto variations! If you don’t have turnips but do have radishes available, I have read that those make great replacements, though I haven’t used them in this recipe. Cauliflower florets are another good option. I love Keto Roasted Radishes instead of roasted potatoes, and these Keto Fries are made with rutabaga. It makes sense that these would work as replacements in soup, too!

Tips for the Best Low Carb Sausage and Kale Soup

  • Make sure your ingredients are in bite size chunks for the best results. For example, large cubes of turnip or long ribbons of kale will be hard to enjoy with a spoon. 
  • Brown and break up the sausage well so there are no big chunks. 
  • Do not add the kale or heavy cream until after the pressure cooking cycle. 
  • For a little more heat, try adding some red pepper flakes.

What should I serve with Zuppa Toscana?

I love to have a whole Italian night when I serve this Instant Pot Zuppa Toscana! This Keto Antipasto Salad brings in beautiful Italian flavors without even needing to cook. If you make a half portion as an appetizer, you’re only adding 2.8 net carbs. These Italian Baked Mushrooms are always a hit, whether served as an appetizer, protein, or side dish! These Three-Cheese Keto Biscuits work wonderfully to dip in the soup instead of breadsticks, too, for only 2 net carbs each.

Ingredients

  • 4 slices bacon, cut into small pieces
  • 2 pounds ground Italian sausage
  • 4 cloves of garlic, minced
  • 1/2 cup white onion, chopped
  • 2 cups turnip, peeled and cubed
  • 32 ounces chicken or vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 cups of kale, chopped very finely, tough stems removed
  • 1 cup heavy cream

Instructions

    1. Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
    2. Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
    3. Add the spices, cubed turnip and broth.
    4. Secure the lid and pressure cook for 5 minutes. Once the cooking cycle has ended allow it to naturally release pressure for 10 minutes. 
    5. Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
    6. Stir in the cooked bacon and parmesan if desired, just before serving.

Keto Meal Prep Tips:

  • Separate and prepare ground beef
    • With 1 pound, mix with crushed pork rinds, ranch seasoning, and an egg, then form 24 meatballs. Stuff with cheddar cheese cubes and cook. These will keep 3-4 days in the fridge or up to 6 months in the freezer.
    • Cook 1 pound with taco seasoning and water for taco meat. This will last 3-4 days in the fridge, or you can freeze in individual portions to pull out servings as you need. Frozen meat will last up to 6 months.
  • Spiralize zucchini noodles. These will keep 2-3 days in the fridge in an airtight container (line with a paper towel to absorb moisture).
  • Lunch Rollups, Turkey Wraps, and Turkey Rollups all require no cooking and can be prepared in under 5 minutes. These all can be prepped up to 2 days ahead of time as long as there’s a barrier between wet ingredients (tomato, pickles, etc.) and delicate ingredients like lettuce.

This Simple Iced Coffee is made using cold brew coffee. Learn just how easy it is to make a perfect large batch of iced coffee for a fraction of the coffee house price!

A Simple Iced Coffee is such a great way to start any day! A sugar-free syrup of your choice (vanilla is my favorite!) and homemade cold brew bring the coffee house to your kitchen. This recipe makes 1 iced coffee, just 2 carbs.

Keto Meal Prep Tips:

  • You can prep the sausage by cooking a pound of sausage. Separate into 1 cup and 1/2 pound portions. Prep the bacon by cooking it all at once, then chop 1 cup of bacon and set aside 2 slices. You can air fry it, too!
  • Wash and dry your blueberries, then store them in a mason jar to keep them fresh if you’re not ready to cook until later.
  • Make 2 batches of fat head dough, 1 for the pinwheels and 1 for the pizza. The fat head dough can be made up to 3 days ahead of time, wrapped in plastic, and left in the fridge, but you will need to reheat it well to be able to roll out for the crust. If you want to make more batches, fat head dough can be frozen up to 3 months.
  • Cold brew your coffee ahead of time–It will keep in the fridge 7-10 days, so you can mix up an iced coffee every morning of the week.
  • Each recipe (except the coffee) this week can be frozen for easy breakfasts this week and longer!
    • To keep a crispy crust on the sausage pinwheels and the pizza when reheating, use the air fryer or toaster oven.
    • Freeze muffins, egg muffins, pinwheels, and pizza slices by cooling completely then wrapping individually in a couple layers of plastic wrap. This will prevent freezer burn and will allow you to take out only the amount you need.
    • To freeze and reheat the breakfast tortilla, just cook it, allow it to cool, then wrap it in foil before freezing in a freezer bag. Make several of these one day and be prepared for a quick on-the-go meal. It’s best to thaw overnight in the fridge, then air fry (or microwave) to reheat.

  • Lunch skewers, Pepperoni wraps, and Lunch rollups could be prepped ahead of time, but they’re best within about 24 hours, so making them the night ahead would be easy and take maybe 5 minutes.
  • Crack chicken is great as a sandwich filling or as a dip with chips! The bonus is a chip recipe, so I recommend having it for lunch with chips, then later in a sandwich with two chaffles!
  • Both chip recipes stay crispy for a whole week, though the pepperoni chips do soften quicker than the tortillas. These don’t freeze well, so try to eat them in that first week.

  • Lit’l Smokies – I used Hillshire Farm pork, but other brands work, too. They carry pork, beef, and turkey. Check the nutrition label — Some have higher carbs, but Hillshire Farm pork has just 2 carbs.
  • Sugar-Free Hickory Barbecue Sauce – I used G Hughes hickory sauce, but you can use whatever low-carb barbecue sauce you like best. Adding 1/2-1 teaspoon of liquid smoke can help give more of that hickory flavor.
  • Golden Monk Fruit – I used the Lakanto brand, but you can use another 1:1 brown sugar replacement if you prefer something else. Granular sugar replacements also work just fine, but you don’t get quite the depth of flavor.
  • Worcestershire Sauce – This adds a great depth of flavor and helps balance out the sweetness of the recipe. If you don’t have this, replace it with your favorite steak marinade.
  • Liquid Smoke (optional) – If you love that smoke flavor, add a bit of liquid smoke. I’d start with 1/2 teaspoon, then increase in small amounts until it reaches your preferred taste.

Make the sauce

First, add the barbecue sauce, sweetener, and Worcestershire sauce to the slow cooker. Stir these ingredients to form a well-combined sauce, then pour in both (drained) packages of little smokies. Mix all of this together, making sure every single piece is coated in sauce. This helps ensure they will soak up flavor and not dry out during cooking.

Cook sausages

Now that everything is covered in the slow cooker, cook on low for 1-2 hours. This cooking time will depend on the size and power of your slow cooker as well as the temperature of the ingredients when you started cooking. If you allow all ingredients to reach room temperature, your appetizer will be ready quicker!

It’s safest to check at the 45 minute mark, then I’d check and stir every 15 minutes after that until they are warmed throughout. Stir at least once during the cooking to ensure even cooking.

Little Smokies can be frozen, and it’s very easy! Allow your cooked sausages to cool completely before storing — Warm food lowers the temperature of the freezer, and the condensation from warm food can lead to freezer burn.

Pour your Keto Little Smokies into a freezer bag, closing and sucking out any remaining air in the bag. Double bag if your freezer struggles with freezer burn. If possible, lay the bag flat in the freezer for 1 day, then it can be leaned up vertically to save you freezer space. These are best eaten within 2 months as the freeze can alter the texture.

Raw little smokies can be frozen, too! For a super easy meal prep appetizer, just pour your sauce ingredients in a freezer bag and mix or shake until all the ingredients are well combined. Add your raw sausages, close, and freeze like the cooked sausages above. When frozen raw, this can keep in the fridge 6-12 months.

  • Slow Cooker – Just pour back into the slow cooker, then turn on low to reheat. You can reheat on high, just make sure you’re nearby to stir and check it often.
  • Skillet – On medium low, pour the sauce and Lil Smokies into the skillet. Cover with a lid and reheat 5-15 minutes, stirring occasionally.
  • Microwave – Add 1-2 servings to a microwave safe bowl and heat in 30-second bursts, stirring between cooking times. Cover with a paper towel as the sausages can burst and pop.
  • Oven – Preheat to 350 degrees F, and pour your leftover Lil Smokies into a baking dish. Cover with foil or a lid, and reheat 10-20 minutes. Stir occasionally. If the sauce looks too thick, thin it out with a bit of water or broth.

FAQ’S ABOUT LITTLE SMOKIES

Do you have to use pork for little smokies?

No, this recipe works great with little smokies made of other meats, too. Beef, turkey, and other options will use the same cooking instructions.

What size crock pot is best for lil smokies?

I used a small 2 quart slow cooker, and it was the perfect size. If you are making a double batch, you will want a larger slow cooker. If you are bringing this to a party or potluck, try finding a slow cooker with the “warm” function so you aren’t burning them on low for hours. Do not make a single batch in a large crock pot — Manufacturers recommend filling your cooker at least 1/2 full for proper cooking.

What if I don’t have a crock pot?

You can still enjoy this appetizer without a slow cooker! In a medium sized pot, combine your ingredients and cover with a lid. On medium low heat, cook 30 minutes to an hour. Make sure to stir every 10 minutes or so to make sure the sauce isn’t burning.

This recipe is SO easy! Butter a tortilla on one side, then lay it flat on a warm skillet. Top it with all the fillings and wait for the tortilla to become golden brown and the cheese to melt. Fold one side over the fillings and flip, then continue cooking until both sides are beautifully browned.

Are tortillas keto? 

Regular tortillas are not keto-friendly, and most are not gluten-free. Luckily, there are other options! Low carb tortillas (like Mission Carb Balance tortillas) have the same flour tortilla taste and texture with way fewer carbs! The nutritional information in the printable recipe card below was calculated using a Mission Carb Balance tortilla.

Unfortunately, those low-carb tortillas are not gluten-free, and they won’t work for people who calculate total carbs vs. net carbs. To reduce the carbs even further, you can meal prep and use these Keto Zucchini Tortillas! The large ones are just 2.4 net carbs (2.8 total carbs) and are gluten-free + grain free! For even fewer carbs, make a Keto Quesadilla using cheese wraps instead!

  • Air Fryer – Quick, crispy;
    Reheat at 300 degrees F for 5-6 minutes. Check to make sure the tortillas aren’t getting too crispy.
  • Oven – Slowest method, crispy;
    cover and reheat in a 350 degree F oven for about 10 minutes. In the last 4-5 minutes, remove cover and allow the tortilla to crisp up.
