I focus on recipes that are easy to make using ingredients that are easy to find. Some of these are freezer-friendly meal prep recipes, and some are quick no-cook recipes you can whip up in the morning.

Monday through Friday Keto Lunch Recipes

Here are five low-carb lunches that would work with a keto diet! I’ll be honest — Because I’m not feeding a lot of mouths, I usually stick to 2-3 recipes, and then I repeat lunches in the week. If you’re planning for more people or if you just love variety, here are 5 days-worth of low-carb recipes that are perfect for lunch! Just scroll down to the bottom to download the grocery list.

Monday – Italian Pinwheels

These Keto Italian Pinwheels are the perfect appetizer or party snack! Enjoy five cheesy, salty pinwheels for about 4 net carbs each!

Keto Meal Prep Tips

  • Cook Italian Sausage Balls ahead of time and freeze. They will last 3-6 months in an airtight freezer bag — Suck or press out as much air as possible to prevent freezer burn.
  • Italian Pinwheels can be made up to 4 days in advance. The whipped feta, once cold, holds the pinwheels together perfectly.
  • The Italian Chopped Salad can be made up to 3 days ahead of time — Just make sure that any wet ingredients are kept separately from the greens to prevent them from becoming soggy.
  • Italian Lettuce Wrap is best made 24 hours or fewer ahead of time. These are best as fresh as you can make them.

Bonus – Simple Iced Coffee

This Simple Iced Coffee is made using cold brew coffee. Learn just how easy it is to make a perfect large batch of iced coffee for a fraction of the coffee house price!

A Simple Iced Coffee is such a great way to start any day! A sugar-free syrup of your choice (vanilla is my favorite!) and homemade cold brew bring the coffee house to your kitchen. This recipe makes 1 iced coffee, just 2 carbs.

Keto Meal Prep Tips:

  • You can prep the sausage by cooking a pound of sausage. Separate into 1 cup and 1/2 pound portions. Prep the bacon by cooking it all at once, then chop 1 cup of bacon and set aside 2 slices. You can air fry it, too!
  • Wash and dry your blueberries, then store them in a mason jar to keep them fresh if you’re not ready to cook until later.
  • Make 2 batches of fat head dough, 1 for the pinwheels and 1 for the pizza. The fat head dough can be made up to 3 days ahead of time, wrapped in plastic, and left in the fridge, but you will need to reheat it well to be able to roll out for the crust. If you want to make more batches, fat head dough can be frozen up to 3 months.
  • Cold brew your coffee ahead of time–It will keep in the fridge 7-10 days, so you can mix up an iced coffee every morning of the week.
  • Each recipe (except the coffee) this week can be frozen for easy breakfasts this week and longer!
    • To keep a crispy crust on the sausage pinwheels and the pizza when reheating, use the air fryer or toaster oven.
    • Freeze muffins, egg muffins, pinwheels, and pizza slices by cooling completely then wrapping individually in a couple layers of plastic wrap. This will prevent freezer burn and will allow you to take out only the amount you need.
    • To freeze and reheat the breakfast tortilla, just cook it, allow it to cool, then wrap it in foil before freezing in a freezer bag. Make several of these one day and be prepared for a quick on-the-go meal. It’s best to thaw overnight in the fridge, then air fry (or microwave) to reheat.

Making a Keto Meal Plan

Everyone is different, so it’s important to find a sustainable meal prep strategy to fit your life! Some people enjoy the simplicity of eating the same rotating meals every week, and some people prefer more variety. If you’re cooking for others who are reluctant to try new keto-friendly foods, it can be important to find simple, family-friendly meals that just happen to be keto as well! This prevents you from needing to cook two meals which can take up a ton of extra time, is expensive, AND leads to the temptation of your old favorites being nearby.

If you’re looking for an easy-to-follow keto meal plan, check out my page of Easy Keto Meal Plans. Each week I put together 5 keto dinners and a bonus low-carb recipe (usually a meal prep breakfast or dessert to help out). I include a printable grocery list, meal prep tips, net carb counts, and serving amounts for each recipe. I do my best to pick family favorites, meaning you don’t have to cook one meal for yourself and one meal for the non-keto folks in the house… You can all just enjoy delicious low-carb dinner together!

Meal Prep with Beef

You can meal prep ground beef to add to casseroles, pasta, and soups! Add garlic, onion, and peppers if you want to add more flavor. Meatballs can be easily meal prepped then used for subs, with pasta, on salad, or in soup! Meal prepping shredded beef is great for adding to tacos, wraps, nachos, and salads! Meal prepping steak for salads, wraps, and breakfast burritos is a great way to add more protein!

 

When you see a great deal on beef, you should buy in bulk if you can! You can easily meal prep beef in several different ways, then freeze it for a ton of future recipes! This makes a busy weeknight dinner a breeze. Ground beef can be browned to add to casseroles, pasta, or tacos (and sautéing onions, garlic, and even peppers with it adds a ton of flavor). While many store-bought taco seasoning packets are not keto-friendly, here’s a great Homemade Keto Taco Seasoning recipe you can use!

Ground beef can also be formed into meatballs (even stuffed like these Cheddar Stuffed Meatballs) to be used for meatball subs, with pasta, in soup, or over a salad! You could also prepare a big, flavorful batch of Shredded Beef which is perfect for tacos, nachos, burritos, or even salads. Steak can be prepared (sliced or shaved) for adding to omelets, salads, wraps, and low-carb pasta (like Spaghetti Squash or Zoodles). All of these options add a ton of protein and make it super convenient for weeknight dinners.

These keto chicken recipes make the low-carb lifestyle easier to handle! Meal prep these keto recipes for easy low-carb breakfasts, lunches, and dinners.

How to make a keto meal plan?

Everyone has their own preferences, but the most important thing is finding the most sustainable plan for you. Some people enjoy the simplicity of eating the same rotating meals every week, and some people prefer more variety. If you are cooking for others as well, it’s much easier if you can simply find family-friendly keto recipes instead of trying to cook both keto and non-keto. Not only does cooking two meals take up a ton of extra time, it’s also expensive AND it means you have your old favorite carb-loaded foods nearby, tempting you.

If you’re looking for an easy-to-follow keto meal plan, check out my page of Easy Keto Meal Plans. Each week I put together 5 keto dinners and a bonus low-carb recipe (usually a meal prep breakfast or dessert to help out). I include a printable grocery list, meal prep tips, net carb counts, and serving amounts for each recipe. I do my best to pick family favorites, meaning you don’t have to cook one meal for yourself and one meal for the non-keto folks in the house… You can all just enjoy delicious low-carb dinner together!

How to prep keto meals for the week?

While keto tends to be only 20-35% protein, prepping your proteins in advance can often save you a lot of time during the week. You can also use the same protein to make a variety of breakfasts and lunches so you’re not resorting to eggs and sandwiches every day.

Once you have your protein cooked, just pair it with a good dose of fat and veggies. We’re dairy lovers in this house, so we have creamy sauces or cheesy fathead dough regularly with our meals. Roasted vegetables (like cauliflower or radishes) are quick to prepare and have few ingredients, so we like to add something simple like that on busy weeknights.

It’s always easy to throw protein on a salad or wrap it up in a low-carb tortilla. If you don’t have low-carb tortillas available nearby or you are gluten-free, you can meal prep several batches of these Keto Zucchini Tortillas or use cheese wraps, lettuce wraps, or even deli meat to roll up your wrap ingredients. It’s incredibly easy to cook chicken in a slow cooker, then shred or cube it for other recipes. You could season it with a basic mix of salt, pepper, garlic powder, etc. or save the seasoning for after cooking so that each recipe can be different. Grilling chicken provides a TON of flavor, too! Tuesday: Keto Beef Stew

This Instant Pot Keto Beef Stew is loaded with tender shredded beef, and vegetables in a savory broth. Each serving of this stew is about 5 net carbs! This is the perfect low carb comfort food with stove-top, Instant Pot, or slow cooker directions! 

Oh my word, this Beef Stew! This is one of my newer recipes, but I loved it so much, I had to add it into the rotation. It has only 5.1 net carbs per bowl, and the recipe makes a hearty 8 servings. This packs and reheats perfectly for lunch, too! You can make this in an Instant Pot (about 1 hour), on the stovetop (about 3 hours), or in a slow cooker (8-10 hours).

Wednesday: Keto Shrimp and Grits

This cheesy Keto Shrimp and Grits recipe is the ultimate low carb comfort food! At under 5 net carbs per serving this will be a new favorite!

If you’ve missed some downhome, Southern cooking while going keto, don’t worry! This Keto Shrimp & Grits is here to save the day. Only 4.4 net carbs per generous bowl and ready in about 30 minutes! Cream cheese, cheddar, butter, and broth turn cauliflower into a tasty low-carb substitute for cheesy grits!

Thursday: Easy Sheet Pan Chicken Fajitas

These Easy Sheet Pan Fajitas are the perfect low carb dinner! Pile your fajita fillings into low carb tortillas, lettuce wraps or on a big salad! This is the perfect recipe for quick and easy meal prep!

I love having these Easy Sheet Pan Chicken Fajitas ready to go after a busy day! I like to eat this all on its own (only 4.4 net carbs per serving!), but you could easily add a low-carb tortilla if you prefer. A Mission Carb Balance tortilla would add 4 net carbs, or you could make these Zucchini Tortillas for only about 1 net carb each!

Friday: Pepperoni Pizza Bites with Cheesy Keto Breadsticks

Easy Keto Pepperoni Pizza Bites are bursting with pepperoni and mozzarella cheese! At less than one net carb each these make the perfect low carb lunch! #keto

These Pepperoni Pizza Bites are the perfect way to end the week! Grab some low-carb marinara and enjoy a keto pizza night. These bites are only 1 net carb each, so it’s super easy to customize your meal based on your dietary needs! If you prefer Italian sausage over pepperoni, try these instead, or these if you’re a Supreme pizza lover

Try these Cheesy Keto Breadsticks for a low-carb appetizer or light lunch. At just 1.9 net carbs per breadstick, this is a great low-carb game day snack!

Those pizza bites pair perfectly with these Cheesy Keto Breadsticks for only 1.9 net carbs per slice! You could have 2 cheesy breadsticks and 3 pizza bites for under 7 net carbs! Feel free to mix and match these two dishes to stay satisfied while also staying keto!

Keto Meal Prep Tips:

Cheesesteak-

This meal could be cooked entirely on your prep day, just skip the last step of adding the cheese. Instead, toss the meal back into a skillet to reheat, top with cheese, cover, and warm 5-10 minutes on medium low heat until sizzling and warmed throughout! I have a hunch that this dish is even better the next day because all the veggies and chicken get to soak in the juice together.

Beef Stew-

This meal is PERFECT for cooking entirely on your prep day! It’ll keep in the fridge up to 4 days, or you can freeze it after cooking for 2-3 months. If you don’t want to cook it beforehand, you could brown the beef and sauté the onions ahead of time and store them together in a pot, bowl, or slow cooker in the fridge. 

The day of serving, you could dump the remaining ingredients and allow the soup to cook all day in the slow cooker while you’re working!

Shrimp & Grits-

For the “grits,” you can use a fresh head of cauliflower like the recipe suggests, or you can speed it up a bit with a bag of frozen cauliflower rice. Just boil in broth until tender, then mash the cauliflower with the cream cheese, butter, and cheddar cheese. This will make a great keto-friendly substitute for grits, and this can be kept in the fridge up to 5 days.

For this meal, I recommend only preparing the cauliflower grits ahead of time. Luckily shrimp cooks quickly, so save that step for right before serving to avoid overcooking. Reheat the grits in a medium-sized pot, stirring frequently to prevent clumps from forming and to get even heating throughout. If it’s too thick, thin it out with more broth.

Chicken Fajitas-

You can cook this sheet pan in advance, but I would recommend undercooking it by about 5 minutes if you plan to do this. To reheat, toss it back onto a lined sheet pan at 400 degrees F for 5-10 minutes. This would definitely make this a super quick meal for a busy day!

**If you want to make low-carb tortillas, these Zucchini Tortillas require only 5 ingredients and can be made in about 40 minutes. They keep in the fridge for 5 days or in the freezer for months! Meal prepping this recipe pays off majorly when you want a wrap, burrito, or taco but don’t want to give up 4-6 carbs for each one! These also come together similarly to the breadsticks, so you could easily prep both recipes at the same time.

Pizza Bites & Breadsticks-

Because the pizza bites need at least 10 minutes of chilling, I like to make the mixture ahead of time. 1-24 hours before serving, make the pepperoni pizza bite mixture, then cover and keep in the fridge. Then when ready to eat, you just scoop and bake! You could also cook the batch ahead of time and store in the fridge up to 4 days or in the freezer a few months. To reheat, just microwave in 30-second increments, bake at 350 degrees F about 5 minutes, or Air Fry at 350 degrees F for 3-5 minutes. 

I like to meal prep the cheesy breadsticks for the best “crust.” Up to 5 days before serving, shred and dry your zucchini. Sometimes I’ll let the zucchini sit in the fridge overnight, then squeeze off any moisture remaining just to make sure it’s perfectly dry! Once dry, I bake according to instructions in the post. If you want the freshest, cheesiest breadsticks, save the final step (topping with cheese and baking 5-7 more minutes) until right before serving!

This dish is ready in 20 minutes, making it the perfect meal before a movie night or before all the kids go their separate direction for weekend plans. It’s even low-carb enough to justify one or two of those leftover biscuits from Wednesday!

Keto Meal Prep Tips:

For many people, meal prepping on the weekend helps the week go much smoother! Here are some tips in case you’d like to spend a little time prepping your meals and spending less time cooking during the week!

Broccoli Cheddar Chicken:

This dish can be cooked entirely, then warmed up and served whenever is most convenient for you! Because it’s a cheesy, delicious, one-pan dish, you can cook on your prep day, cover and keep in the fridge, then reheat (covered) in the oven at 350 degrees F until bubbly (about 10-15 minutes).

This makes it a super easy meal, even if your Mondays are packed with presentations, practices, meetings, and more! It also makes a perfect meal for taking to loved ones who might be sick or super busy.

Bacon Cheeseburger Soup:

This can be made entirely on your prep day and then stored up to 3 days before serving. To reheat, microwave individual bowls in 30-second increments until warmed throughout (stirring between to ensure even heating).

You could also reduce meal prep time by finely chopping vegetables and cooking the meats up to 3 days ahead of time. You could even complete steps 1-4 (everything before adding the cream cheese, shredded cheese, and bacon), then freeze it until you need it. 

Asparagus Chicken & Biscuits:

For the Asparagus-Stuffed Chicken, you can prepare (butterfly & stuff) 1-3 days ahead of cooking and serving. You don’t want to add any salt to the chicken if you’re prepping it more than an hour before cooking though–This can draw moisture out of the chicken, making the filling soggy and the chicken dry after it cooks. Save the seasoning until right before you start cooking!

If you choose to cook 1-2 days before serving, undercook by just a few minutes. Then when reheating in the oven, you may want to cover with aluminum foil so it doesn’t get too browned. Reheat in the oven at 350 degrees F five minutes or until cooked and warm throughout.

These biscuits can stay in the fridge cooked for an entire week, so feel free to cook these during your meal prep day! Then you can enjoy these 2-carb biscuits during any meal you like throughout the week! The recipe makes 22 biscuits, so you could be able to stretch this through a few breakfasts, lunches, and dinners.

Salmon & Broccoli:

While you can easily prep this recipe, I wouldn’t recommend cooking the salmon or broccoli ahead of time. You could prep the jalapeno lime butter up to 3 days ahead of time, then just leave it covered in the fridge until you’re ready for this meal. I wouldn’t season or cook the salmon until you’re ready to serve for the best quality.

You could easily trim your broccoli florets up to 3 days ahead of time (maybe at the same time you’re trimming broccoli for the Broccoli Cheddar Chicken dish?), then store them in an air-tight container (with a paper towel to absorb moisture) in the fridge. You could shred your parmesan up to 3 days ahead of time as well. Then when ready to serve, toss with butter, cheese, and seasonings, then throw in the air fryer!

Pork & Green Beans:

This dish can be prepared and/or cooked up to 3 days in advance. If cooking in advance, reheat in a hot skillet until sizzling and warmed throughout. You may want to undercook by 2-3 minutes to avoid overcooking during reheating.

If you’re just interested in prepping, you can cut the meat and trim the beans 1-3 days ahead of time, then store separately in air-tight containers in the fridge.

This Keto White Chicken Chili is loaded with shredded chicken, chilis, peppers and cauliflower rice! At about 7.5 net carbs per heaping serving this is the ultimate creamy keto comfort food!

This White Chicken Chili can be made in an Instant Pot or cook for 4-8 hours in the slow cooker. It makes a great gameday food or potluck item for Labor Day as it makes 10 big servings! Each big bowl is 7.5 net carbs.

Tuesday: Pizza Stuffed Peppers

Friday: Shrimp & Broccoli Stir-Fry

This super quick Shrimp & Broccoli Stir-Fry is ready in 20 minutes–Exactly what you need at the end of a long, busy week! Shrimp & Veggies simmer in a delicious, flavor-packed sauce… You won’t believe it, but there’s only 6.1 net carbs per serving!

Keto Meal Prep Tips:

For many people, meal prepping on the weekend helps the week go much smoother! Here are some tips in case you’d like to spend a little time prepping your meals and spending less time cooking during the week!

Chili:

If you are using the slow cooker method for the chili, go ahead and put all ingredients (except cream, cream cheese, and shredded cheese) in the slow cooker (or a bowl/plastic bag) the night before. and leave it in the fridge. In the morning, just plug it in (or dump the container in the slow cooker) and walk away! You could even measure out your heavy cream, cream cheese, and shredded cheese, put those in a covered bowl, and they’ll be ready to add once you get home and remove the cooked chicken!

Peppers:

You can make the pizza stuffing up to 3 days before serving! Cook your Italian sausage and mix it with the marinara, pepperoni, and half the cheese. A day before serving, you can prep the peppers by cutting and de-seeding. Just store in a bag or covered container, then fill with the sausage mixture and top with cheese when ready to cook!

Fajita Chicken:

This dish could be cooked entirely, then reheated and served up to 3 days later. Store covered in the fridge, then cover with aluminum foil and bake at 350 degrees F until warmed throughout (about 10 minutes). Alternatively, you could cook the chicken and veggies on your prep day and store those in the fridge, then make your cheese sauce and finish on Wednesday!

Zucchini Boats: 

You could make the cheeseburger filling up to four days before serving. Store covered in the fridge, then fill zucchini boats and bake on Thursday. Zucchini boats can be cut and hollowed out up to one day beforehand and stored in a bag or closed container in the fridge.

Stir-Fry:

You could make the sauce up to one week before cooking, just store in a tight jar in the fridge. Broccoli and peppers could be chopped 1-2 days before cooking as well. I wouldn’t recommend cooking the shrimp until ready to serve to make sure they don’t end up overcooked.

Welcome to the 15th week of Easy Keto Meal Planning! This guide is complete with net carb counts and a printable shopping list.

This week we have a delicious Keto Cabbage Casserole, Spinach Artichoke Stuffed Chicken, Cheesy Smoked Sausage Soup, One Pan Mushroom Chicken Skillet, and Parmesan Halibut with Air Fryer Broccoli!

Because I know you also need something to energize you throughout your day, I included an easy breakfast that can be meal prepped (store in the fridge or freezer)–Ham & Cheese Chaffles!

I want to take the stress out of keto meal planning, so I’m sticking with simple, delicious recipes that don’t require ingredients that are difficult to find. Most of these recipes are one pan meals that can be made in 30 minutes or less!

Monday: Keto Cabbage Casserole

This Keto Cabbage Casserole is a low-carb, easy dinner recipe ready in 30 minutes! The perfect easy keto dinner! Under 9 net carbs per serving!

Meal Prep Tips:

  • Both Wednesday and Friday’s recipes use cooked, shredded chicken. You can pick up a rotisserie (about 3-4 lb chicken will work) or cook a chicken ahead of time. Here’s a great recipe for Roast Buffalo Chicken that will give you super flavorful, juicy chicken. If you’re looking for a more “hands off” method, this Slow Cooker Shredded Chicken can cook overnight or while you’re at work! If you want to add the ultimate flavor, try one of these grilled recipes: Jalapeno Lime, Chipotle, Balsamic.
  • Go ahead and cook the entire pack of bacon on Monday when preparing the One Pan Keto Bacon Cheeseburger Skillet. This cooked bacon will also be needed on Wednesday, saving you a bit of time later in the week! Bonus: if your pound of bacon has more than 8 slices, you’ve got bacon ready for lunch wraps or breakfast sandwiches!
