You can freeze chicken in this marinade up to 3 months without sacrificing taste or texture. Honey can be used instead of sugar free maple syrup if you’re not keto.

Marinade chicken

In a shallow bowl or Ziplock bag, mix together your oil, sweetener, lime juice, zest, cilantro, garlic powder, onion powder, salt, and pepper. Once well mixed, add chicken and allow to marinate for at least 8 hours in the fridge. If you’re meal prepping, you can go ahead and put it in the freezer, then you’re defrosting time will be your marinating time.

Grill chicken thighs

Heat your grill to medium-high heat. Remove the chicken from the bag, allowing the excess marinade to drip off. Place it on the grill and cook for 10 minutes, then flip and grill another 5 minutes. Once the chicken is cooked through (to 165 degrees F as measured by a meat thermometer), remove from the grill.

  • Oven – Place chicken in a baking dish and add about 1 teaspoon of water per thigh. Cover with foil or a tight lid, then reheat at 350 degrees. Time needed will depend on the number of thighs you’re reheating at once. If you don’t have a baking dish, you could simply wrap your chicken thighs in foil and reheat that way as well.
  • Stove – Add just enough water to a skillet that it barely covers the bottom. Add in chicken thighs (preferably sliced into 1-inch-thick slices to speed up the process). Simmer on low, gently and occasionally stirring/flipping to evenly reheat all pieces.
  • Microwave – Only blast at 50% power in 45- or 60-second increments. Using full power will likely overcook some spots while leaving other spots cold. Flip chicken and rotate it 90 degrees between blasts for even reheating. Adding a teaspoon of water per thigh to the plate will help further ensure the chicken is moist.
  • Air Fryer – If you crispy edges, this is the best reheating method for you! Preheat air fryer to 350 degrees F for 3 minutes, then add chicken thighs. Make sure they are not touching, then spray with oil. Allow to reheat about 2 minutes, then squeeze with lime juice and check temperature. Continue cooking until warmed through.

Yes! Freezing chicken in marinade is a great meal prep tip. The chicken does not actually marinate WHILE it’s freezing–The cells constrict and cannot absorb the flavors. Because of this, you don’t have to worry about the chicken getting mushy from being in the marinade too long. Instead, the marinating process actually happens when you remove the chicken from the freezer and allow it to defrost overnight in the fridge. It’s best to cook marinated, frozen chicken within 3 months for the best taste and texture.

Can you freeze grilled chicken?

Blend margarita

Place all of your ingredients in the blender and give it a whirl! You just want to make sure there are no big chunks of strawberry; the smoother the margarita, the easier the popsicles are to eat.

Pour margaritas

Line up 6 5-ounce cups and pour about 4 ounces of margarita into each one. Get these as even as you can so that they will all be frozen at the same time when you’re ready to serve.

Assemble lime popsicle sticks

Cut and discard the ends of the limes. Cut each lime into three slices (about 1/4″ thick, depends on the size of your limes). Place a slice on the cutting board, then stab the popsicle stick through the center. Push it in 1 1/2-2″, then put in one of the margarita cups. The lime should sit right on top of the margarita. Transfer cups to the freezer and freeze for 4-6 hours. Once frozen solid, you can serve immediately! If the popsicle doesn’t pull out immediately, gently rub the outsides of the cup with your hands to warm it slightly, then lightly tug the popsicle again.

These popsicles will last 3-6 months, but they have the best flavor and texture the sooner you eat them. If you plan to keep them longer than 2 weeks, place them in a freezer bag to protect them from other freezer smells in the freezer.

  • Test before freezing – Strawberries can range from super sweet to a bit tart, so you want to taste test the margarita before pouring and freezing. Add more lime juice if it’s too sweet, more simple syrup if it’s too tart.
  • Salt just before serving – Salt is tricky because it will cause the popsicle to melt much faster. If you want to salt them, I recommend placing one side of the popsicle (out of the cup) in a plate of salt and then serving immediately. We enjoyed these without salt, so feel free to skip this if you’re worried about melty messes.
  • Change it up – This is a great base recipe that can be tweaked for tasty popsicles no matter your season or vibe! Swap out the strawberries for raspberries or blueberries, maybe use vodka or rum instead of tequila, or use lemon juice instead of lime juice. This homemade simple syrup will last for 2 months in the fridge, so go ahead and whip up a batch so you can be prepared for your next keto happy hour!

Here’s how you make sugar free simple syrup- stir one tablespoon of the liquid monk fruit into one cup of water. That’s it! The simple syrup can be used immediately and can be stored in the fridge or on your counter. Alternatively, you can also make a simple syrup by dissolving 1 1/4 cup of allulose into 1 cup water! This results in a thicker syrup and has less of an aftertaste than monk fruit. It’s a great option as well!

This sugar free limeade has a delicate floral aroma that is complimented by the strawberries. Add in the vodka and soda water and this tastes just like a limeade from your favorite restaurant, but without the carbs! You can enjoy this low carb alcoholic drink for only 3.2 net carbs! And if you aren’t a fan of vodka, omit it and add more soda water instead! This drink is incredibly delicious with or without alcohol.

Substitutions for this low carb alcoholic drink

  • If you want to make this a vodka lemonade, swap out the lime juice for lemon juice!
  • You can switch out the rose syrup for this Blueberry Lavender flavor, then muddle blueberries for a fun blue/purple drink!
  • If you don’t like vodka or want to make this a mocktail, leave out the vodka. This cocktail is still incredibly delicious without the alcohol. Just replace the amount with soda water.
  • To cut more carbs from this drink, don’t add the strawberries. The syrup has a lovely strawberry flavor on its own… It’s not as bold this way, but it’s still tasty.
  • Some people don’t like the strawberry pieces in their drink. Instead, make the drink in a shaker instead of your cup, then strain before pouring into your glass.
