Tuna Salad is one of those nostalgic meals that comes together in a flash but is always still so perfectly delicious. This Keto Tuna Salad is a low carb twist on a classic! Tuna is a great option because it is naturally low calorie, low carb and full of protein- it also tends to be inexpensive, which is always a bonus!

I made this Keto Tuna Salad with a bit of a twist- I added a variety of herbs to give this salad a ton of flavor! This Tuna Salad is made with the more traditional veggies- celery and red onion- and then we add the seasoning! I love the unique flavor of this tuna- it’s got more of an Italian blend of herbs. It really compliments the fish and vegetables perfectly and makes for a meal that has a great depth of flavor but is still super simple.

Basil Sugar Free Simple Syrup

To start, make a sugar-free simple syrup infused with basil leaves! In a small pot, combine water, basil leaves, and liquid monk fruit sweetener. Bring to a boil, then reduce heat and allow to simmer for 20 minutes. Finally, allow to cool for 20 minutes, strain, and pour into an airtight container.

This syrup will keep in the fridge for several weeks and is great in many cocktails! Use it in a gin fizz or a lemon drop for a tasty drink straight for the garden. If using a different brand of liquid monk fruit sweetener, you may want to start with half the amount and add to taste. You can add more sweetener before or after simmering, so it’s easy to adjust for your preferences!

Time Saver Tip:

Don’t have time to make the syrup? You can still make this drink! In your cocktail shaker, muddle 5-6 basil leaves with 1.5 tablespoons water and 1/4-1/2 teaspoon liquid monk fruit sweetener. Add ice, bourbon, and lemon juice, then shake and serve. I don’t feel like the basil flavor is quite as strong, but this method will work in a pinch.

How to make a sugar free whiskey sour

In a cocktail shaker full of ice, pour over your whiskey, homemade basil simple syrup, and lemon juice. Shake at least 30 seconds, then pour into a double old fashioned glass full of ice (optional). Garnish with a lemon slice and basil leaves.

Note: Some people don’t serve whiskey sours with ice because it waters down the drink. I prefer it with ice, but you can easily serve this in a smaller glass without ice if that’s your style.

Basil Simple Syrup

  • 1/2 cup basil
  • 1 cup water
  • 1 tablespoon liquid monk fruit sweetener

Basil Whiskey Sour

  • 2 ounces bourbon
  • 3/4 ounce lemon juice
  • 3/4 ounce sugar free basil simple syrup
  • Ice

Instructions

  1. In a small pot, add your water, basil, and monk fruit. Bring to a boil, then simmer on low for 15-20 minutes. Remove from heat and allow to cool for 20 minutes. Pour through a fine mesh strainer and store in the fridge up to 2 weeks.
  2. In a cocktail shaker, add your bourbon, lemon juice, simple syrup, and ice. Shake at least 30 seconds or until cocktail shaker is extremely cold.
  3. Pour over ice in a double old fashioned glass. Garnish with a lemon slice and sprig of basil.

Keto Lemon Drop

This Keto Lemon Drop is the perfect way to relax at the end of your day or to enjoy with friends! This keto cocktail pairs perfectly with almost any dish and is sure to wow your guests. I have always loved a Lemon Drop, so I’m super excited to introduce a keto recipe!

Traditionally, a Lemon Drop includes vodka, triple sec, lemon juice and simple syrup. For our keto drink, I have a recipe for sugar free simple syrup (check out my Keto Margarita or Keto Mojito for more ways to use this low carb alternative!) using Liquid Monkfruit to cut the carbs. I also omitted the triple sec for it’s high sugar content and replaced it with lemon flavored soda water, which has no sugar. This makes an amazing keto cocktail that is so simple to prepare!

How do you make this keto drink?

This drink is beautifully simple! In a shaker with ice, combine your vodka, lemon juice and keto simple syrup. Shake until very cold. Next, sugar the rim of the cocktail glass, but this is optional. Strain and pour your keto cocktail in your glass. Garnish with a slice of lemon and you’re done!

Homemade sugar free simple syrup

Simple syrup is usually made with sugar, but I have a recipe that fits with a keto diet. By using Liquid Monkfruit Sweetener, you remove the carbs! Monkfruit is very sweet, much sweetener than sugar, so you need a very small amount. One tablespoon per one cup of water is all that’s needed. If you prefer things to be a little less sweet, or if you’re using a different brand, I recommend starting at 1/2 a tablespoon per one cup of water and adjusting as needed. 

Can I use a Erythritol or Swerve for this sugar free simple syrup?

I do not recommend doing so. Erythritol does not dissolve very well, whether in cold or boiling water. This can lead to a gritty texture and an inconsistent taste. If you add xanthan gum to your hot water with your erythritol sweetener, it should prevent the mixture from crystallizing. I personally prefer using the liquid monkfruit for the taste and the ease in my simple syrup.

Can I make this keto simple syrup ahead of time?

Absolutely! This keeps very well. I can only attest to storing it with the liquid monkfruit, not the erythritol and xanthan gum blend, however. Just store in an airtight container (I used a jar) and keep in the fridge. Shake well before using and that’s all there is to it!

This simple syrup is so easy! In a small pot, bring 1/4 cup rosemary leaves (stripped from the stem), 1 cup of water, and 1 tablespoon of monk fruit liquid sweetener to a simmer. Allow to simmer 10-15 minutes, then take off of heat to cool for 10 minutes. Pour through a fine mesh strainer, and store strained syrup in the fridge up to one month.

Can I use granulated monk fruit with erythritol?

I have not had success using blends with erythritol to make a simple syrup. Unfortunately, it does not fully dissolve; Once your syrup returns to room temperature, the erythritol begins to crystallize. I have read that adding a pinch of xanthan gum can prevent this, but I haven’t tried this method.

Bonus perk of using liquid monk fruit sweetener: it can be added by the drop to drinks, so people who like their drinks sweeter can easily adjust the flavor! This is awesome for carrying in your purse to sweeten ice teas or coffee.

This simple keto cocktail starts in a shaker–Combine ice, gin, lemon juice, and rosemary simple syrup. Shake for 30 seconds or until extremely cold. Pour over ice into a 12-ounce glass, then top with about 3 ounces of lemon soda water. Garnish with a rosemary sprig and a lemon slice for a beautiful, aromatic, delicious low-carb drink!

This drink is incredibly versatile because the flavors are very balanced and complementary to tons of different kinds of foods! The rosemary and lemon pair wonderfully with Italian and French cuisine especially. Gin can adapt so easily, it works well with sweets, spice, even floral notes!

If you’re making a cheese board, this citrusy gin cocktail will pair great with gouda and brie (these Cherry Brie Bites would be amazing)! This Marinated Mozzarella uses a lot of herbs that would complement the drink as well. Charcuterie meats like prosciutto and cured hams work well with the herby flavor… Consider serving it in an Antipasto Salad for a different twist!

My family LOVES brownies–Seriously, all of our childhood friends knew our house as the “Brownies for Breakfast” place when we were growing up. Some Sunday mornings, I still wake up and wonder, “Where are the brownies?”

However, now that I’ve had more than a few years to discover new tastes, I’m realizing that there are some other options out there! Now these Lemon Blondies have found a place in my dessert-filled heart, too!

We keep the nice dense texture of a brownie but brighten the whole thing up with a citrusy punch of lemon! To take it to the next level, I added lemon icing, too!

Not only is this twist delicious, it’s also great for all kinds of diets. There’s no gluten and no refined sugar, so you can just focus on how great they taste instead of what they may be doing to your insides! These are also keto and low-carb, so feel free to indulge a little! I won’t tell if you choose to have them for breakfast, either!

Ingredients for Lemon Blondies

This is just a quick overview of the ingredients you will need for this recipe. The complete recipe and instructions are below, just keep scrolling. 

  • Butter: unsalted, softened butter
  • Granular Monkfruit Sweetener: Granular Swerve also works.
  • Eggs: room temperature eggs are ideal for this recipe. 
  • Almond Flour and Coconut Flour: you need both flours to get the right rise and consistency for this recipe.
  • Lemon juice and lemon zest: this is about 2 medium size fresh lemons
  • Baking powder and Salt: provides lift for the blondies. 
  • Additional ingredients for the glaze: Powdered Monkfruit Sweetener, cream cheese, almond milk or heavy cream, vanilla extract.

How do you make Keto Blondies?

To make this low carb blondie dessert, you’ll start out by using a handheld electric mixer to cream together the unsalted butter, and granular sweetener until creamy. Then, mix in the eggs, one at a time until smooth.

In another bowl mix the almond flour, coconut flour, baking powder, salt and combine. Add the flour mixture to the butter mixture and beat with the electric mixture until combined. Add in the lemon juice and lemon zest.

Prepare a 8×8 baking pan with parchment paper and lightly spray with cooking spray. Spoon the batter into the pan and bake at 350 degrees F for approximately 25 minutes or until a toothpick placed in the center comes out clean.

Allow the blondies to cool completely and add the keto lemon glaze (recipe below).

Tips and Tricks for the Best Gluten Free Blondies

  • Line your pan with aluminum foil or parchment paper and leaving some overhang. This will make it much easier to remove the blondies from the pan. It also makes clean up a breeze!
  • Make sure the butter is softened before blending.
  • Be sure to use the correct size pan. Using anything larger than an 8×8 pan will result in very thin bars. 
  • My personal preference is to enjoy these bars at room temp. Remove the bars from the fridge 30 minutes before serving to allow the butter in the blondies to soften slightly for the best taste and texture.

Yes, these easy gluten free blondies will freeze well for up to 3 months if stored in an air tight container in the freezer. Thaw overnight in the refrigerator and bring to room temperature before serving.

Ingredients

Lemon Blondie

  • 8 tablespoons butter, softened
  • 1 cup granular monkfruit sweetener
  • 2 large eggs, room temperature
  • 1 cup almond flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons lemon juice
  • 2 tablespoons lemon zest

Lemon Frosting

  • 1 cup confectioners monkfruit sweetener
  • 3 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons almond milk or heavy cream (as needed to thin)

Instructions

    1. Preheat oven to 350 degrees F. Line an 8x8 baking pan with parchment paper and lightly spray with cooking oil. Set aside.
    2. In a large mixing bowl beat the softened butter, and granular sweetener with an electric mixer until creamy and well incorporated.
    3. Beat the eggs into the sugar mixture until completely combined.
    4. In another bowl combine the almond flour, coconut flour, baking powder and salt.
    5. Spoon the flour mixture into the sugar mixture, beating with an electric mixer until smooth.
    6. Stir in the lemon zest and lemon juice.
    7. Spoon batter into the prepared baking pan. Bake 22-26 minutes or until a toothpick inserted in the center comes out clean.
    8. Allow the blondies to cool completely before frosting.

    To make the frosting: Combine the sweetener, cream cheese, lemon juice, lemon zest, vanilla and 1 tablespoon of the milk or heavy cream in a food processor or beat with an electric mixture until smooth and creamy. Add 1 tablespoon additional liquid if needed until it reaches your desired consistency.

Notes

Garnish with toasted, unsweetened coconut flakes or poppy seeds if desired.
