As always, this is a quick overview of the ingredients needed to make this recipe. For the complete, printable recipe, simply scroll to the printable recipe card below. To make this chicken recipe, you will need a mixing bowl, pan and spatula in addition to the ingredients listed below:

  • Ground Chicken: We are skipping the chicken breasts and chicken thighs for this meal and going for simple ground chicken. It is a great alternative to ground beef and is usually quite economical. you can also use ground turkey if you prefer.
  • Jalapenos: for this recipe, I use fresh, seeded jalapenos. If you prefer a milder pepper you can use green bell peppers. And just in case you don’t have access to fresh peppers you can use pickled jalapenos as well, just check out my note in the recipe card.
  • Sharp Cheddar Cheese: sharp cheddar pairs so well with fresh jalapeno peppers. You can also use mozzarella cheese or Colby-jack if you wish.
  • Chopped Green Onions and Minced Garlic: this adds great flavor, but if you are out, finely chopped red onion works in a pinch.
  • Egg and Coconut Flour: This binder helps hold the fritters together.
  • Spices: garlic powder, onion powder, paprika, and seasoned salt.

How to make Chicken Fritters

  1. Mix: In a large bowl, combine the ground chicken, chopped jalapeños, green onions, minced garlic, and spices. Add the egg, shredded cheddar cheese, and coconut flour. Stir again until everything comes together, set the mixture aside for a few minutes to allow the coconut flour to absorb the moisture.
  2. Shape and Form: With your hands (make sure they’re clean!), form the mixture into small patties. I used a 1/4 cup measuring cup, an ice cream scoop also works well, but the size is up to you. Remember, you just want to keep this small and thin enough that the outside gets golden and crispy, while the inside is juicy and cooked through.
  3. Ready, Set, Fry: Heat vegetable oil in a skillet over medium heat. Once hot, carefully place the fritters in the oil, ensuring they have enough space to crisp up. Fry each side until golden brown, usually about 3-4 minutes per side.
  4. Drain and Savor: As your fritters reach that perfect golden hue, transfer them from your large frying pan to a plate lined with paper towels to drain any excess oil. Let them rest for a moment – although we won’t blame you if you dive right in!

Recipe FAQ

Can I use almond flour?

This recipe uses one tablespoon of coconut flour as a binding agent. I have tested this recipe with coconut flour, almond flour, pork rind panko, and then using no binder at all. My suggestion is to use the coconut flour or use NO binder at all. The almond flour and pork rind panko versions weren’t as good, and the texture was lacking.

This keto cocktail is going to be your go-to drink of the summer! Made with a sugar free jalapeno simple syrup, lime juice, chopped watermelon and your favorite tequila, you won’t be able to get enough of this skinny cocktail! At only 3.4 net carbs and 111 calories a serving, you can still enjoy this refreshing drink while sticking to your keto diet!

This keto drink is perfect for entertaining. The pretty light pink color makes it a great addition to any table, but especially bridal showers, brunch or any celebration you’re having! This sugar free cocktail doesn’t use any margarita mix and it also doesn’t contain erythritol, so if you are sensitive to sugar alcohols, you won’t have a problem with this low carb drink!

I added some orange sparkling water to this skinny margarita as a substitute for triple sec, but it’s completely optional. I also think a lime sparkling water would have complimented this very well. Serve with Shrimp con Queso or Steak Fajitas for an amazing keto meal! This recipe can easily be made as a frozen margarita or on the rocks.

Whether you want your margarita sparkling, on the rocks, or frozen, it’s super easy to customize. You can also adjust the amount of spice in your simple syrup to your personal preference. This drink will cure your summer watermelon craving!

Ingredients for Watermelon Margarita

As always, here is a quick overview of the ingredients used in our keto margarita. For the complete recipe, just scroll to the bottom of the page.

  • Sugar free simple syrup- made with liquid monkfruit sweetener and Jalapenos
  • Tequila- Silver tequila (sometimes referred to as tequila blanco) is best for margaritas
  • Lime juice- I used freshly squeezed, but the bottled version is also fine.
  • Watermelon- chopped & seedless
  • Optional: Orange sparkling water- you can use a different flavor or an unflavored sparkling water here. This just adds back some citrus flavor since we are omitting the triple sec
  • Ice
  • Garnish- lime wedges, salt or watermelon wedges (don’t add too much watermelon if you’re keto- it does have a high amount of carbs)

How to make Sugar Free Simple Syrup with Jalapenos

To make this keto simple syrup, slice up 1-2 jalapenos and add to a small pot with 1.25 cups of water. Bring to a boil, lower the heat and simmer for 10 minutes. Strain your water into a jar and add 1 tablespoon of liquid monkfruit. Store in the fridge for several weeks. Give your jar a good shake to make sure you get good, balanced flavor. 

This sugar free simple syrup is so easy to make and can be customized to your particular spicy or sweetness level! If you prefer more or less sweetness, then adjust your liquid monkfruit accordingly. For additional heat, increase your jalapenos. 1 jalapeno without the seeds is going to give you a very mild flavor with just a hint of spice (perfect for those who don’t love spicy recipes). Two jalapenos without the seeds is mildly spicy, but if you prefer a hotter flavor, just add the seeds of the jalapenos!

How to make a Keto Margarita

Add your tequila, lime juice, simple syrup and watermelon to a blender. If you’re making frozen margaritas, add a glass full of ice. Blend until the watermelon is well incorporated with the rest of the ingredients. If you’re using ice, blend to a slushie consistency. Salt the rim of your glass. If you’re serving on the rocks, add ice to your glass. Add your blended ingredients, top with sparkling water and serve!

Can you make frozen margaritas?

Absolutely! Just blend everything with ice, except for the sparkling water, which you’ll add right before serving. You can use fresh or frozen watermelon.

This Jalapeño Popper Stuffed Chicken is a six ingredient supper that requires one pan and only 30 minutes to make! Each generous serving has just under 2 net carbs each!

It’s no secret… Chicken is clearly one of my favorite proteins. I love that it’s lean and healthy as well as naturally gluten-free and low-carb! I’m not a big fan of eating meat with bones, so the boneless, skinless chicken breasts are usually my go-to.

If you’ve been reading Best Keto Recipes long, you’ll notice that my new favorite thing is stuffing these delicious, simple chicken breasts with every type of creamy, cheesy fillings I can think of! These new Jalapeno Popper Stuffed Chicken Breasts is exactly what I was looking for–Just a hint of spice in the creamy mixture and rubbed with delicious Cajun seasoning!

This recipe is so simple and convenient. It can be meal prepped, stored in the fridge, and then cooked when you’re ready for a super impressive meal that looks like it took all evening! It’s actually finished in 30 minutes, and I only use one single pan for a super easy clean up. 

These are also super keto-friendly at only 1.8 net carbs each! You can serve a big, filling meal with some Roasted Broccoli and a Three-Cheese Keto Biscuit and still stay under 7 net carbs! You will absolutely love both the taste and the convenience of this amazing keto one pan dinner!

Mix softened cream cheese, sharp cheddar cheese, crispy bacon, and fresh sliced jalapenos for a delicious keto chicken filling in this Jalapeno Popper Stuffed Chicken recipe! Spoon the filling into the split chicken breast, leaving a small space around the edge so the creamy jalapeno filling doesn't cook out too far. Fold the top of the chicken breast back over and secure it closed with a toothpick. Rub the chicken with the tasty Cajun seasoning, making sure it is well covered.

Ingredients Needed For Jalapeño Popper Stuffed Chicken

You will find the exact recipe and instructions in the recipe card below, but this is a quick overview of what you will need:

  • Chicken breast: small chicken breast are best in this recipe. However, if you can only find large chicken breast pound them thin before stuffing. 
  • Jalapeños: fresh, seeded and chopped jalapeños. 
  • Shredded Cheddar Cheese: Colby-Jack, or Pepper-Jack also works well
  • Cream Cheese: full fat or reduced fat work. 
  • Bacon: Cooked, chopped bacon. To save time you can purchase cooked, bacon bits if desired. 
  • Cajun Seasoning: many varieties of Cajun seasoning are available in the spice aisle. Simply use your favorite Cajun, or all purpose seasoning in this recipe. 

How do you make Cheesy Stuffed Chicken?

While your oven is preheating, combine the softened cream cheese with the chopped jalapenos, cheddar cheese, and bacon, then set aside. Butterfly each chicken breast (meaning you slice them open lengthwise but you don’t cut all the way through). Spread the cheesy mixture onto one side of the chicken, fold the other side over to cover, and then secure it closed with a toothpick.

Finally, sprinkle the Cajun seasoning on each side of the chicken and cook for 25-30 minutes on a greased baking dish, removing when the chicken is cooked through. That’s all it takes for this impressive, guest-worthy keto meal!

In this one-pan, 30-minutes keto chicken recipe, a chicken breast is a one-pan,is stuffed full of creamy, spicy filling!

Tips for the BEST Stuffed Chicken:

  • Make sure your cream cheese has softened to room temperature. This well help you incorporate the shredded cheese, bacon, and jalapeno into a smooth, creamy filling.
  • If possible, don’t spread the cream cheese filling all the way to the edges. It will naturally melt out a little, so try to leave some space around the edges so that it doesn’t ALL melt out.
  • Try to find four chicken breasts that are all the same relative size. This will help them cook at the same time and provides for a more even cook.
  • If you are out of toothpicks, you can hold the stuffed chicken together with a dry piece of spaghetti. It may not hold if your chicken breast is super thick, but the thicker, straight pasta is actually pretty strong and a good substitute! You could also tie the chicken breast closed with a piece of butcher’s twine.

  • 4 small chicken breast
  • 3/4 cup shredded cheddar cheese
  • 3 ounces cream cheese, softened
  • 1/4 cup chopped, seeded fresh jalapeño
  • 1/4 cup chopped, cooked bacon
  • 2 teaspoons cajun seasoning (or your favorite all purpose seasoning)

Instructions

    1. Preheat the oven to 400 degrees F
    2. In a small bowl combine the chopped jalapeños, cheddar cheese, bacon  and softened cream cheese, set aside.
    3. Slice each chicken breast lengthwise so that the breast folds open (be sure not to slice all the way through) 
    4. Spread the cheddar mixture on one side of the chicken and fold the other side over, secure with a toothpick.
    5. Sprinkle the cajun seasoning on each side of the chicken. Place in a greased baking dish.
    6. Bake 25-30 minutes until the chicken is cooked through.

Lately I can’t get enough chaffles! This, in my opinion, is one of keto’s biggest accomplishments. A cheesy, savory waffle that can have any number of flavor combinations, can be eaten in the car when I’m in a hurry, AND can be frozen in batches so I never have to go without?! Yes, please!

If you’ve tried my Ham and Cheese Chaffles or the Pepperoni Pizza version, you know how this goes. They become nice and crispy on the outside, soft and fluffy on the inside. For a great snack, cut your chaffle up into triangles or sticks, then dip in ranch or even jalapeno ranch if you want to up the spice! I like to add different toppings to mine, like these Keto BBQ Stacks.

This is a perfect way to use up leftover sausage (perhaps after making these Sausage Cream Cheese Pinwheels). This recipe is quick to cook, easy to clean up, and simple to meal prep. You’ll love this no-fuss, tasty recipe!

Tips for making the best Keto Chaffles

These are so simple they don’t even really need tips, but here’s what I’ve learned…

  • Be careful not to overfill the waffle maker. In my experience, filling it about 2/3rd full is perfect! By the time it cooks, it has expanded just enough to fill the whole waffle iron.
  • If you know that you are going to reheat these in the oven or in a toaster, undercook them by maybe 30 seconds to a minute. This will help them become perfectly crispy after reheating instead of dried out.
  • Customize for your preference! This is my favorite thing about chaffles. It’s SO easy to make them fit your favorite flavors! Make your chaffle base with the eggs, cheese, flour, and baking powder, then add 3/4ths cup of whatever meat or veggie you prefer! Add 1/2-1 teaspoon of dried seasonings if you wish.
