If you’ve spent much time on our website, you will know we love our cabbage recipes. There is a lot to love about cabbage. Cabbage recipes are some of our favorite comfort foods.

Another reason cabbage is so great is because of its health benefits. It is naturally low in carbohydrates and full of vitamins in minerals. Cabbage also helps decrease inflammation and improve digestion.

Health aside, this particular Cabbage Soup recipe is a personal favorite because it requires common, inexpensive pantry staples and provides 8 servings. We nearly always have the needed ingredients on hand. If not, they’re easy to find and budget-friendly.

The recipe is even more budget-friendly, considering it provides enough servings for multiple meals. This makes it perfect for meal prepping too. Utilize leftovers for lunch or dinner later in the week, or even freeze in smaller servings to serve up to 3 months later!

Why You Will Love This Recipe

  • Inexpensive. All of the ingredients are common, inexpensive items that you can easily find at your local grocery store without breaking the bank. This recipe also provides 8 servings so you will have plenty of leftovers!
  • Hearty. Packed full of vegetables, this soup is a filling dinner option. Cabbage is especially great with several health benefits, such as those discussed above. To make this recipe lower in calories, you could hold the bacon, although bacon does make everything better.
  • Easy. With a few simple steps, you can have this recipe on the table in about 30 minutes!

Recipe Ingredients

Here’s a quick overview of what you’ll need for this recipe. Keep scrolling down to the printable recipe card for the exact measurements.

  • Proteins: chopped ham and bacon (try pepper bacon if looking for a little more flavor with a hint of heat)
  • Vegetables: minced garlic, onion, celery, bell pepper, carrots, and of course cabbage.
  • Canned crushed tomatoes: for a little extra flavor, try fire-roasted canned tomatoes.
  • Beef broth: for the best flavor, choose a high-quality broth.
  • Spices: onion powder, garlic powder, paprika, and oregano.

How to Make Cabbage Soup

Aside from the ingredients listed above, you will need a Dutch oven or large pot, as well as a cutting board and knife. I’ve documented each step so you can easily make this at home! Follow this step-by-step guide to make this vegetable soup in about 30 minutes! Scroll to the recipe card at the bottom of the page for the exact measurements.

Cook the Bacon

overhead shot of bacon in dutch oven

Heat a Dutch oven or large pot to medium heat. Add the chopped bacon to the skillet, stirring occasionally until the bacon is crisp. Once the bacon is crisp, use a slotted spoon to remove the bacon from the pot and set aside on a paper towel-lined plate to drain.

Saute the Vegetables

Once the bacon has been cooked and removed from the pot pour off some of the bacon grease if desired. Leave at least 1 tablespoon in the skillet to saute the vegetables. Next,  add the garlic, onion, celery, bell pepper and carrots. Saute the vegetables, stirring occasionally, for 4-5 minutes. Remember, the vegetables continue to cook as the soup cooks so you do not need to cook them until they are totally soft.

Cook the Cabbage

Stir in the broth, crushed tomatoes, chopped cabbage, spices and ham. Allow the soup to simmer (not boil) for 10-15 minutes or until the cabbage has reached your desired consistency. Then stir the bacon into the soup, and add salt and pepper to taste.

What to Serve With Cabbage Soup

  • Keto Dinner Rolls– These keto dinner rolls are so perfectly soft and fluffy you would never guess they are low carb!
  • Shaved Brussels Sprouts Salad– This healthy, easy salad is perfect for lunch, potlucks, holiday parties, and more!

Storage and Reheating Instructions

  • Reheating Instructions: To reheat, my preferred choice is heating on low on the stovetop. Stirring intermittently. However, if you’re in a hurry, this recipe reheats well in the microwave. Reheat in 30-second increments until heated to your desired level. To reheat from frozen, allow to thaw in the fridge overnight before reheating.
  • Refrigerator Storage: Allow to cool completely. Then, you can store this soup in an airtight container for up to 3 days in the refrigerator. We like to store leftovers in single serving containers so we can just grab and go!
  • Freezer Storage: This cabbage soup freezes well. After allowing to cool completely, freeze in a freezer-safe container for up to 3 months. This recipe provides 8 servings so I usually store in multiple containers so we don’t have to thaw it all at once.

Tips and Tricks

  • Add some kick with pepper bacon or cayenne pepper. Pepper bacon is my personal favorite.
  • Personalize this soup with your preference of protein and/or vegetables. Add pulled pork, beef chunks, extra vegetables, or even potatoes just to name a few ideas!
  • Easily make this a vegetarian dish. Substitute the beef broth with vegetable broth and hold the bacon and ham. You will also need to use some olive oil (any neutral oil) to saute the vegetables.

Tender and Juicy Chicken Cordon Bleu

I love to go out for a fancy meal. But sometimes it can be even better to just make one at home. This chicken cordon bleu recipe is my go-to when I want an upscale dinner at home. It looks and tastes like something you would splurge for at your favorite restaurant. But it’s surprisingly easy to make at home! Whether you’re having a date night or just want to eat well, you’ve got to try this recipe the next time you need a nice meal.

Chicken cordon bleu is a popular European dish. It’s basically chicken that’s stuffed with ham and cheese, then breaded and cooked. What’s not to love about that? This recipe uses black forest ham and Swiss cheese, and they go together so well. I promise you that you’ll love this keto dinner!

Why You’ll Love This Cheesy Keto Chicken

This is one of my favorite recipes to make. And it’s definitely one of my favorite recipes to eat! Here’s why I know you’ll be a big fan of it.

  • So much flavor. This is one of the most flavorful recipes I know. Think of a ham and cheese sandwich, but then imagine the bread is made out of chicken. That’s basically this recipe! But the secret to this dish is the breading. It’s packed with herbs and spices that give the chicken a great kick.
  • Impressive. If you ever need to impress someone, I recommend making them this dish. This is the kind of recipe that people won’t believe is homemade. Everything about this dish is restaurant quality, but it’s still easy to make at home.
  • Protein-packed. There are really only 3 main ingredients in this keto recipe: chicken, ham, and cheese. That’s about as full of protein as you can get!
Overhead view of the ingredients needed for chicken cordon bleu: a plate of chicken breasts, a plate with ham and cheese, a bowl of dijon, a bowl of almond flour, a bowl of parmesan cheese, a bowl of garlic powder and Italian seasoning, a ramekin of butter, and two eggs

Ingredients Needed

Here are the ingredients that you need to make this juicy and cheesy chicken dish. Check out the recipe card at the bottom of the article to see the exact amounts for each ingredient.

  • Chicken breasts – Use boneless and skinless breasts for this recipe.
  • Ham – I like to use black forest ham.
  • Swiss cheese
  • Dijon mustard
  • Eggs
  • Almond flour – Almond flour is my go-to, but you can use any type of gluten-free flour.
  • Grated parmesan – You can use pre-grated parmesan or grate your own.
  • Italian seasoning
  • Garlic powder
  • Salt
  • Pepper – Be sure to use freshly-cracked black pepper.
  • Butter – You want to use unsalted butter.
  • Lemon – Lemon is an optional garnish.
  • Parsley – Parsley is also an optional garnish.

What is Italian Seasoning?

Italian seasoning is a fairly common herb blend that you can find at most grocery stores. Each company has a different recipe, but it usually includes dried basil, rosemary, thyme, oregano, and marjoram. If you don’t have any Italian seasoning, you can replace it with those individual ingredients.

How to Make Chicken Cordon Bleu

Here’s how to make this rich keto dinner. It’s surprisingly quick and easy!

  • Cut the chicken. Cut your chicken breasts in half lengthwise, the way you would if you were butterflying the chicken.
  • Pound. Cover the chicken with plastic wrap and hit it with a mallet until it’s about ¼-inch thick.
  • Assemble. Spread the mustard on top of the chicken, then add ham and cheese.
  • Roll. Place each piece of chicken on a large square of plastic wrap. Roll the chicken like a log, as tight as you can make it. Hold it in place with the plastic wrap.
  • Chill. Put the rolled chicken breasts in the fridge for at least 1 hour.
  • Prep the breading. Put the eggs in one bowl and beat them until well combined. In a second bowl, add the almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir to combine.
  • Bread the chicken. Remove the chicken from the fridge, and place it in the eggs until well covered. Then place them in the breading until well coated.
  • Freeze. Put the breaded chicken on a plate or on a wire rack, and place them in the freezer. Leave them there for 15 minutes.
  • Turn on the oven. While the chicken is in the freezer, preheat your oven to 400F, and grease an oven-safe dish with melted butter.
  • Bake. Remove the chicken from the freezer and place it in the baking dish. Put the dish in the oven and bake until the chicken has an internal temperature of 165F. This should take 25-30 minutes. Remove from the oven and serve!

Tips and Tricks

These are a few of my favorite tips for making the best chicken cordon bleu.

  • Let it rest. Anytime you’re cooking meat, you want to let the meat rest before cutting into it. After removing the chicken from the oven, let it rest for at least 5 minutes, and ideally 10. This gives the chicken time to reabsorb its juices. If you cut into the cordon bleu immediately after removing it from the oven, all the juices will spill out. Then you’ll be left with dry chicken, which nobody wants.
  • Mallet alternatives. If you don’t have a meat mallet, don’t worry! There are plenty of kitchen items you can use to pound the chicken breast flat. I like to use a small cast iron skillet or the back of a big wooden spoon. You can also use a rolling pin and simply roll the chicken until it’s flatter.
  • Use the dry hand method. When breading your chicken, make sure to use the dry hand method. Use one of your hands for the egg mixture and the other hand for the breading mixture. That will keep your hands from getting unnecessarily messy and will make the breading stick better on the chicken.

What to Serve it With

Honestly, this chicken cordon bleu is a complete meal all by itself. But I never turn down the opportunity to make some good side dishes! Here are a few of my favorite sides to serve with this keto chicken.

How to Store and Reheat Leftover Chicken

Leftover chicken cordon bleu will last in the fridge for at least 3 days if you store it in an airtight container. To reheat, place it in a 350F oven for 10 minutes. You can also reheat the chicken in the microwave, but the breading will likely get soggy.

Can This Recipe Be Frozen?

Yes, you can absolutely freeze this recipe. Store it in an airtight container and it will last in the freezer for up to 3 months. Thaw or defrost before reheating, or reheat straight from the freezer in a 350F oven for 15-20 minutes.

Chicken Cordon Bleu

Five slices of chicken cordon bleu on a plate with spinach, mustard, and a lemon slice, with more slices in the background

This chicken cordon bleu is easy to make at home, but tastes restaurant quality. The chicken is juicy, tender, and stuffed with black forest ham and Swiss cheese.

Prep Time 20 minutes
Cook Time 25 minutes
Additional Time 1 hour
Total Time 1 hour 45 minutes

Ingredients

  • 2 large chicken breasts, skinless and boneless
  • 8 thin-cut slices black forest ham
  • 4 slices Swiss cheese
  • 4 teaspoons dijon mustard
  • 2 eggs, beaten
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 3 tablespoons melted butter, unsalted
  • Salt and pepper to tast
  • Lemon, parsley, and dijon for serving

Instructions

  1. Cut the chicken lengthwise, as if you are butterflying it, but cut it all the way through. This will leave you with 4 thinner chicken breasts. Put plastic wrap on the chicken and beat it with a meat mallet until it's about 1/4-inch thick.
  2. Spread 1 teaspoon of dijon mustard on each chicken breast, then top with 2 slices of ham and 1 slice of Swiss cheese.
  3. Cut 4 12x12-inch squares of plastic wrap and place a chicken breast on each square. Roll one of the chicken breasts tightly, then secure it with plastic wrap. Repeat with the other breasts.
  4. Place the rolled chicken in the fridge to chill for 1 hour.
  5. While the chicken is in the fridge, set up the breading stations. Put the beaten eggs in one bowl, and the almond flour, parmesan, Italian seasoning, garlic powder, salt, and pepper in the other.
  6. Remove the chicken from the plastic wrap. Place it in the eggs until covered, then put it in the breading. Make sure the chicken is well coated.
  7. Put the breaded chicken in the freezer for 15 minutes to help the coating stay on the meat.
  8. While the chicken cools, preheat your oven to 400F and grease an oven-safe dish with melted butter.
  9. Put the chicken in the dish, and bake for 25-30 minutes, until the meat has an internal temperature of 165F.

Notes

  • Store leftovers in an airtight container in the fridge for 3 days or in the freezer for 3 months.
  • Reheat in a 350F oven for 10 minutes.

Keto Lunch Ideas

Coming up with tasty but easy lunch ideas is tough, but sometimes we overthink it! Staying low carb can be as simple as stacking 2 ingredients and rolling them up. With a few different cheeses and meats, you can create an easy no-cook lunch that doesn’t get too boring. Add in extras like pickles, olives, or pepperoncinis for even more flavor!

How do you make lunchmeat rollups?

The concept is extremely simple. Two steps: Picking you meat and cheese pairings, then rolling it up and securing it. Here are some tips:

Pair cheeses and meats

These are best when you pair flavors that work well with one another. Here are some that I enjoyed:

  • Prosciutto and Mozzarella – The tender prosciutto works great with the creamy mozzarella.
  • Turkey and Provolone – I love this best with a smoked turkey, but any type will do.
  • Ham and Swiss – The light sweetness of the ham is delicious with the stronger swiss cheese flavor.
  • Salami and Provolone – I also added a pickle in this one because I just love those two flavors together.

Of course, there are SO many options! I love a prosciutto with a tangy, aged swiss or a pepper jack and smoked turkey.

Roll and secure

Lay your deli meat on your plate, then top it with your cheese. Roll it up gently, then stick a toothpick into it to secure it. If your cheese is too stiff to roll, you can zap it in the microwave for 5-10 seconds to melt it slightly. You don’t want to melt it entirely as it releases the oil in the cheese.

These Easy Lunch Rollups are quick, kid-friendly, and inexpensive. Customize and meal prep these for easy keto lunches all week long!

Storage

If your rollup is only meat and cheese, you can prepare these and store them in an airtight container for about a week. If your rollup includes ingredients with more moisture (pickles, pepperoncini, olives, etc.), you likely want to eat those within the next day or two for the best texture. Any airtight container is fine, even just a ziplock bag.

FAQ’s about Keto Lunch Ideas

Which cheeses go with prosciutto?

With prosciutto, salty cheeses like parmesan, asiago, or feta go great with prosciutto, but they’re not easy to wrap up. Provolone, gorgonzola, mozzarella, or even brie also go well!

Which cheeses go with ham?

Sharp cheddar and Swiss cheese are great go-to cheeses with ham. You could also wrap some creamy brie or a tangy blue cheese in ham for a richer flavor.

Which cheeses go with turkey?

Cheddar is a great classic with turkey, but provolone and gouda really bring out the best in turkey. A brie or a pepper jack would put a different twist as well!

How can I make this lunch better?

You could add dipping sauces like pesto, ranch, salsa, whipped feta, or even a sugar free honey mustard. Some keto chips (linked in the section above), nuts, or crunchy grain-free granola would add great texture, too!

Here’s a quick overview of what you’ll need. For exact measurements and specific instructions, keep scrolling down to the printable recipe card!

  • Eggs
  • Heavy cream
  • Baking Powder
  • Salt & Pepper
  • Ham – I used leftover smoked spiral ham, but you could use whatever you have. If using country ham or bacon, you may want to reduce the amount of salt you add to your egg mixture.
  • Broccoli – Lightly steamed. You could also use leftover roasted broccoli if necessary. It doesn’t need to be heavily cooked, but being lightly cooked results in nice, tender broccoli pieces.
  • Cheese – I used white cheddar, but you can use your favorite variety.

How to make Egg Muffins

While your oven is preheating, combine your eggs, cream, baking powder, salt, and pepper in a medium sized bowl. Beat until well combined, then stir in your ham, steamed broccoli, and cheese. Make sure the mixture is well combined so that every bite will have a little bit of each ingredient.

Pour the mixture into your silicone muffin tin (about 1/4 cup of mixture per muffin). Bake 18-22 minutes or until you can tell that the muffins have set. Allow them to cool a few minutes, then pop them right out of your pan!

Note: I highly, highly recommend using a silicone pan! The egg mixture will stick to metal pans unless they are extremely well greased. I also do not recommend using paper muffin liners–The eggs stick to the paper, and you’ll lose a lot of the muffin this way!

Can you freeze egg muffins?

Yes, these freeze perfectly! The heavy cream included helps prevent the eggs from getting rubbery, so these will be good in the freezer for about 4 months. This makes it the PERFECT keto meal prep recipe! Just cook a couple batches and have breakfast for a month!

First, allow your egg muffins to cool completely (if they are still warm, that moisture will lead to freezer burn). Freeze them in a single layer on a plate or cookie sheet in the freezer for about an hour, then transfer to a freezer bag with all the air sucked out. Remove as many as you’d like at a time, then reheat according to the instructions below.

The best way to reheat egg muffins

If you’ve frozen your egg muffins, the quickest way to reheat is by using the microwave. About 90 seconds at 50% power usually does the trick, but this may vary based on your personal microwave and the number of egg muffins you are reheating. You can also pull out your egg muffins the night before and allow them to thaw in the fridge.

If you are reheating thawed, refrigerated egg muffins, you can quickly warm them up in the microwave (about 30 seconds) or you can use the air fryer. The air fryer gives the edges a little bit of a crispy, toasted feel–I usually do about 90 seconds to 2 minutes for mine.

What to serve with Keto Egg Muffins

These Keto Egg Muffins are packed full of protein and nutrients, so you can easily enjoy them on their own! However, I love starting my day with a delicious Keto Coffee Frappuccino, too. For some variety, you could meal prep these 5-Ingredient Keto Sausage Balls, a Jalapeno Cheddar Chaffle, or some sugar-free Homemade Breakfast Sausage.

These Ham and Cheese Chaffles require just 5 ingredients and are about 1 net carb each! This is the perfect easy keto breakfast or snack recipe!

Today I am introducing you to one of our most favorite recipes! These Ham and Cheese Chaffles are the perfect grab and go breakfast recipe. They are perfectly soft on the inside and crisp on the outside. They are loaded with cheese and chunks of savory ham. You can enjoy these chaffles by themself or with a side of eggs!

One of our favorite ways to serve these is as a light lunch or appetizer! Simply cut into triangles and serve with your favorite mustard as dipping sauce. It is easy, satisfying and so delicious!

Ingredients for Ham and Cheese Chaffles

As always, you will find the complete recipe and instructions below, simply keep scrolling. This is just a quick overview of the ingredients you will need:

  • Eggs: you will need size large eggs for this recipe
  • Shredded cheese: any variety works, but I usually do a mixture of mozzarella and cheddar
  • Baking Powder
  • Almond Flour
  • Ham: preferably chunks of ham verses thin deli slices

What is a Chaffle?

While the term chaffle may be new to some, most of you probably know it as a “cheese waffle.” The term chaffle came to be because this is a waffle that is made from a cheese base. Most chaffle recipes contain some variety of egg, cheese and a low carb flour, such as coconut or almond flour.

The mixture may sound off, but I can assure you, they make perfectly crisp waffles on the outside and delightfully fluffy waffles on the inside! For more chaffle ideas and recipes, check out this post – Everything You Should Know about Chaffles!

How do you make a Ham and Cheese Chaffle?

These low carb waffles could not be easier. Simply beat the eggs well, then fold in the almond flour, baking powder, cheese and ham. Add the batter to the waffle maker, be careful not to overfill, and cook 2-3 minutes until you no longer see any steam coming from the machine.

What waffle maker should I use?

You can make a chaffle with any waffle maker you have. However, I do love this handy little Ms. Dash waffle maker, they are the perfect size. This is the machine I used for this recipe and it makes 5 perfect waffles.

This size is also great as a bread substitute, you can layer your favorite sandwich fillings in between two chaffles and enjoy a quick and easy low carb sandwich!

This savory Keto Ham and Cheese Quiche is the perfect low carb brunch recipe! Packed with smoked ham, tender asparagus and sharp cheddar cheese this will be a family favorite!

Quiche has always been one of my families favorite meals. The buttery, flakey crust paired with eggs, cheese and breakfast meat is total comfort food. It is perfect for breakfast, brunch or an easy dinner. When I made the transition to keto I really missed our weekend quiches. It was the driving factor in creating the perfect keto crust. You truly won’t be able to tell this is a keto-friendly, gluten free quiche recipe!

Pair a slice of this quiche with a simple side salad for a delicious spring brunch. Serve with a slice of my Lemon Cheesecake Bars for dessert for a truly decadent treat! For more brunch recipes, try this list of 90+ Perfect Spring Brunch Ideas!

Ingredients in Keto Quiche Cups

As always, you will find the recipe and instructions at the bottom of this post, this is a quick overview of what you will need. To make these Keto Ham and Asparagus Quick Cups, you’ll need the following basic ingredients:

  • Eggs
  • Heavy cream
  • Fresh asparagus
  • Sliced ham
  • Shredded cheddar cheese
  • Keto Pie Crust: almond flour, butter, cream cheese, apple cider vinegar, egg

How to Make Ham and Asparagus Quiche Cups

These low carb quiches are easy to make! Here’s an overview of the process:

  1. In a stand mixer fitted with a paddle attachment, combine the Keto Pie Crust ingredients and prepare according to the recipe instructions.
  2. Lightly press the dough into the bottom of a 12-count muffin tin and up the sides.
  3. In a second mixing bowl, combine the eggs and heavy cream, whisk until smooth, set aside.
  4. Add the chopped ham, asparagus and cheese to the muffin tins and pour egg mixture over top until each cavity is 3/4 full.
  5. Bake for 20 minutes at 350F.

Can I Make Substitutions?

You can easily sub another meat, vegetable or cheese if you prefer. For example, chopped bacon or spinach would work well in this recipe. However, I do not suggest making any changes to the crust recipe. Coconut flour is not a good substitute for almond flour in this recipe.

Can I Prepare the Quiche Cups in Advance?

Yes! You can go ahead and bake these mini breakfast quiche ahead of time and then reheat them on a baking sheet at 300 degrees F for 15-20 minutes. They reheat beautifully, which makes these perfect for a Spring brunch, baby shower, or any other entertaining event you have!

This savory Keto Ham and Cheese Quiche is the perfect low carb brunch recipe! Packed with smoked ham, tender asparagus and sharp cheddar cheese this will be a family favorite!

Can I Freeze Mini Quiche?

Yes! Let them cool completely, then seal them in a freezer bag for up to three months. You can reheat the frozen quiche from frozen, either in the microwave or the oven.

Tips for Making Mini Breakfast Quiche Cups

  • You can omit the crust altogether if desired. If skipping the crust, I’d recommend using muffin liners or a silicone muffin tray so the crustless quiche cups don’t stick.
  • I’ve only used fresh asparagus to make this recipe and don’t recommend using frozen.

Cook Time 20 minutes
Total Time 20 minutes

Ingredients

Keto Pie Crust

  • 1 1/2 cups almond flour
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1 ounce cream cheese
  • 1 teaspoon apple cider vinegar
  • 1 egg

Quiche Filling

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup chopped ham
  • 1/2 cup asparagus, chopped tough ends removed
  • 1/2 cup shredded cheddar cheese

Instructions

    To prepare the crust:

    1. Combine almond flour, salt, butter and cream cheese in a food processor or mixer and mix until it resembles course crumbs.
    2. Add in one egg and apple cider vinegar (this helps to achieve a crisp, flaky crust) and mix again until well combined.
    3. Roll the dough into a ball and wrap in plastic wrap. Chill in the fridge for at least 2 hours to allow the butter time to harden again.
    4. When ready to use the dough press it into the prepared pan (you can roll the dough, but it is sticky and I find it easier to press the dough into the pan)
    5. Lightly press the dough into the bottom of a 12-count muffin tin and up the sides.

    For the filling:

    1. Preheat the oven to 350 degrees F.
    2. In a second mixing bowl, combine the eggs and heavy cream, whisk until smooth, set aside.
    3. Add the chopped ham, asparagus and cheese to the muffin tins and pour egg mixture over top until each cavity is 3/4 full.
    4. Bake for 20-22 minutes until the quiches have set.

Notes

This recipe easily makes 12 very full quiche cups. If you prefer to roll your dough a little thinner and use less filling in each quiche cup (about 1/2 full) you can stretch it to 18 quiche cups.

Easy Keto Bites Recipe

Keto is a high fat, low carb diet. When your body is in a state of ketosis it burns fat for fuel instead of carbs. The total amount of suggested net carbs can vary from person to person, but generally people can reach ketosis when they have had 40-20 net carbs.

It can be difficult to find grab and go or meal prep-style foods that fit this diet because so many of those go to options are full of carbs. These Keto Ham, Cheddar and Jalapeño Bites are great on their own, with a side salad, or alongside a bowl of soup!

These low-carb treats are packed with chopped ham, sharp cheddar cheese, and diced jalapeños. This is an incredible keto breakfast or snack option that is completely meal prep friendly. They’re also great for lunch because they are good warm or cold.

Ingredients for Ham & Jalapeno Bites

To make the jalapeño cream cheese bites, you’ll need the following basic ingredients:

  • Ham
  • Shredded Cheddar Cheese
  • Cream Cheese
  • Eggs
  • Jalapeño
  • Almond Flour
  • Baking Powder

Can the Ham Be Omitted?

Yes, the chopped ham can be omitted if you want to make classic cheddar jalapeño bites that are vegetarian.

Are Jalapeños Keto Friendly?

Yes, fresh jalapeño peppers are low in carbs and are suitable for a keto diet. That’s great news since they add so much flavor!

These Cheesy Ham and Jalapeño Bites contain just 1 net carb each, making them perfect for low-carb meal prep!

  2. Combine the chopped ham and cream cheese until completely combined.
  3. Stir in the shredded cheese, chopped jalapeño, eggs, almond flour and baking powder until a thick dough forms.
  4. Chill the dough 15 minutes.
  5. Use a 1 inch cookie scoop to portion the bites out. Drop onto a silicone lined baking sheet and bake 15-18 min until golden brown and cooked through.

How Many Net Carbs Per Bite?

One batch makes over 20 bites (24 for me) and they contain just 1.1 net carbs each!

These Cheesy Ham and Jalapeño Bites contain just 1 net carb each, making them perfect for low-carb meal prep!

How to Store & Reheat Jalapeño Bites

Simply reheat these ham and cheese bites in 30 second increments until warmed through.

What to Serve with These Keto Bites

You can pair the jalapeño cream cheese bites with a side salad or low-carb soup for a hearty lunch that will keep you full all day!

These Cheesy Ham and Jalapeño Bites contain just 1 net carb each, making them perfect for low-carb meal prep!

Tips for Making Jalapeño Bites

  • You can use leftover dinner ham, thickly sliced deli ham, a ham steak, or even country ham if you prefer a more flavorful dish.
  • Use brick-style cream cheese for best results.
  • I do not recommend substituting the almond flour. Coconut flour will deliver another texture and flavor.

I’ve been following a keto diet for over a year now. For the most part, I rarely crave carbs but every once in while those tricky cravings sneak back and I need something that reminds me of my “carbful” days.

Most recently, my cravings for a good old ham and biscuit were absolutely out of control! Fortunately, I created a keto version that totally hit the spot!

These Keto Ham and Cheese Biscuits are great as a quick breakfast, amazing little sliders, or the perfect thing to serve with soup!

Ingredients for Keto Ham and Cheese Biscuits

To make these cheesy low-carb biscuits, you’ll need the following simple ingredients:

  • Cream cheese
  • Shredded cheddar cheese
  • Eggs
  • Almond flour
  • Baking powder
  • Salt
  • Heavy cream
  • Butter
  • Chopped ham

Can the Almond Flour Be Substituted?

No, this almond flour biscuit recipe must be made as written. Almond flour is the best keto flour I’ve found for this recipe, so that’s what I recommend.

How to Make Ham and Cheese Biscuits

This recipe is based off of my Keto Cheddar Garlic Biscuits that I shared on my other website, Maebells. That version tastes insanely like Red Lobster Cheddar Bay Biscuits and only has two net carbs each!

These Ham and Cheese Biscuits have the same cheesy base that contains a cream cheese, cheddar and egg base. This mixture makes the perfect soft, fluffy, cheesy biscuits.

Here’s an overview of how these cheesy keto almond flour biscuits come together:

  1. Once the cream cheese, cheddar and eggs have been mixed, until smooth add the almond flour, baking powder, salt, butter and heavy cream.
  2. Next, fold in the chopped ham. The dough will be quite thick and you may be tempted to add more moisture, but don’t.
  3. After you’ve mixed the batter, chill in the fridge for 10 minutes (otherwise they will spread out too much as they bake).
  4. Use a small cookie or ice cream scoop to scoop them out onto a greased or lined baking sheet. Lightly press the dough down to flatten it slightly.
  5. Bake for 13-15 minutes until golden brown.

How to Store Keto Biscuits

After baking, store these low-carb biscuits in the fridge. Since the recipe does make 22, I like to freeze about half of my batch for quick sandwiches or a side dish.

They freeze beautifully, so just store in an airtight freezer bag and reheat in 20-second increments until warm.

Tips for Making Ham and Cheese Biscuits

  • You can use unsweetened almond milk instead of cream if you want, but the fat content decreases.
  • The dough will be thick, be careful not to overmix, watch the video to see exactly how it should look.
  • I use a SMALL cookie/ice cream scoop to get 22 biscuits. If you want to use a large/full size scoop, you will get approximately 12 biscuits with about 4 net carbs each. The baking time is 16-18 minutes for the large biscuits.
