How to make chaffles with cinnamon

First, preheat your waffle maker. Beat your eggs and add the rest of the ingredients- mix well. Spray your waffle maker with nonstick spray and add your mixture. I recommend filling until about 2/3rd of the way full, or about 1/8 of a cup. Cook until the steam stops coming out of the waffle maker- for me, this was about 5-6 minutes. Repeat with the remaining mixture. This does make a softer chaffle, but you can toast them or put them in the Air Fryer if you prefer a crispier texture.

For the icing, add your cream cheese, heavy cream and powdered swerve into a blender and blend until smooth. Next, combine the cinnamon and monkfruit. Top your cinnamon chaffle with the icing and the monkfruit mixture.

No, you definitely do not taste the cheese. I know it sounds like an odd combo, but trust me! These chaffles are great! If you new to the world of chaffle this Basic Chaffle recipe is a great way to experiment. These are great eaten as traditional waffles, as bread for sandwiches, or make a great appetizer! 

Do chaffles get crispy?

Savory chaffles, like Jalapeno Cheddar Chaffles, tend to crisp up as they cool. Since these cinnamon chaffles have more cream cheese than mozzarella, they stay softer than traditional chaffles. To make your low carb chaffles crispy, just pop into your toaster or Air Fryer!

What to serve with chaffles

These are the perfect breakfast for a buffet or whenever you have company. Chaffle Batter

  • 3 eggs
  • 1/4 cup almond flour
  • 3/4 cups shredded mozzarella
  • 2 ounces cream cheese
  • 2 tablespoons Monkfruit Sweetener
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Cream Cheese Frosting

  • 2 ounces cream cheese
  • 1/2 cup confectioners Monkfruit sweetener
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream (use as needed to thin the frosting)

Instructions

    1. Preheat your mini waffle maker. Spray with oil before adding chaffle batter.
    2. Whisk your eggs, then add the shredded cheese, softened cream cheese, almond flour, baking powder, sweetener, cinnamon, and vanilla extract. Mix until the cream cheese is smoothly incorporated throughout.
    3. Fill the waffle maker 2/3rd full (just a little more than 1/8th a cup). Don't overfill!
    4. Allow to cook 4-6 minutes or until waffle is crisp.

  • Combine the eggs, cream, baking powder, salt and pepper in a medium mixing bowl. 
  • Next, stir in the cooked sausage and shredded cheese.
  • Using a 1/4 cup measuring cup, put your batter into a greased muffin pan (see tips below). Finally, bake for 18-20 minutes at 350 degrees F.  When your muffins have set and you can put a toothpick in and it comes out clean, you’re ready to enjoy!

What kind of pan should I use?

This recipe is formulated to make 12 standard egg muffins. Alternatively, you can make 24 mini muffins. You can use metal or silicone. If you prefer to use liners, that will work fine as well but wasn’t necessary for mine.

Tips for the best Keto Egg Muffins

  • If you do not have a really good nonstick muffin tin I recommend using a silicone muffin tin. This will keep your eggs from sticking, and they come out very easily. 
  • Be sure to really combine the mixture well- this will help to give you really fluffy muffins
  • Make these muffins yours! If sausage isn’t your favorite, try bacon, chicken, turkey or Canadian bacon.
  • Add veggies! Bell peppers, tomatoes or asparagus would be delicious in these muffins

How to freeze Breakfast Egg Muffins

These egg muffins are good to go into the freezer for up to three months. Allow the egg muffins to cool completely, then freeze (not touching) on a baking sheet or plate. After 1-2 hours, place the muffins in a freezer safe bag. Be sure to write the date that you froze your muffins on the front.

If freezer burn is a frequent problem with your freezer or you plan to keep them frozen the entire three months, you may want to wrap each muffin in plastic wrap to protect them.

How to store and reheat Keto Egg Muffins

These egg muffins are good in the fridge for three days. They can be stored in either an airtight bag or a Tupperware container. To reheat, place in the microwave and heat in thirty second increments or until the desired temperature is reached.

These low carb waffles could not be easier. Simply beat the eggs well, then fold in the almond flour, baking powder, cheese and ham. Add the batter to the waffle maker, be careful not to overfill, and cook 2-3 minutes until you no longer see any steam coming from the machine.

You can make a chaffle with any waffle maker you have. However, I do love this handy little Ms. Dash waffle maker, they are the perfect size. This is the machine I used for this recipe and it makes 5 perfect waffles. 

This size is also great as a bread substitute, you can layer your favorite sandwich fillings in between two chaffles and enjoy a quick and easy low carb sandwich!

  1. First, you’ll need to prepare three bowls. One with a mixture of almond flour, garlic powder and garlic salt. one with the beaten eggs. And one with the pork rind panko, parsley and Italian seasoning.
  2. Slice the cheese sticks in half.
  3. Roll the cheese sticks in the almond flour mixture, then the egg, and finally the pork rind panko. 
  4. Place each breaded cheesestick on a cookie sheet and place in the freezer. Freeze at least 2 hours.
  5. When ready to cook, add enough oil to cover 2 inches of a small pot to medium heat.
  6. Cook 2-3 keto cheese sticks at a time, using tongs to rotate. Cook 3-4 minutes until the outside has browned.

Can Mozzarella Sticks Be Made in an Air Fryer?

Yes! To make keto air fryer mozzarella sticks, do the following: 

  1. Preheat your air fryer to 390 degrees F.
  2. Add the frozen cheese sticks to the air fryer basket and lightly spray with cooking spray.
  3. Cook 5 minutes.

  5. To prepare the cheese sticks roll in the almond flour mixture, then the egg, and finally the pork rind panko. Use your fingers to press the mixture tightly to the cheese. Make sure each cheese stick is covered completely. You can dip it in the egg and back into the pork rind panko mixture if you need to cover them better.
  6. Place each breaded cheesestick on a cookie sheet and place in the freezer. Freeze at least 2 hours.
  7. When ready to cook add enough oil to cover 2 inches of a small pot to medium heat. Cook 2-3 cheesesticks at a time, using tongs to rotate. Cook 3-4 minutes until the outside has browned. (air fryer instructions are below)

Notes

The cheesesticks are going into the oil frozen, which will reduce the overall temp of the oil. Make sure you give the oil a minute or two to come back up to temp betweeen batches.

Air Fryer Instructions:

Preheat your air fryer to 390 degrees F. Add the frozen cheesesticks to the air fryer basket and lightly spray with cooking oil. Cook 5 minutes.

Pork Panko: These are ground pork rinds that make a perfect sub for panko breadcrumbs. Simply put a 2.5 ounce bag of pork rinds in a food processor and pulse until it resembles panko breadcrumbs. This will result in about 2 cups of pork rind panko. Store in an air tight container.

I’m so excited to share this keto pie crust recipe with you today! I began working on this several months ago when I wanted to create the perfect keto quiche.

While I had made quiche using fat head dough, it just didn’t quite satisfy my craving. I think part of what makes a quiche so fabulous is the buttery, flakey crust that balances the smooth egg filling.

So, my quest to create the perfect keto pie crust began. In this post, I’m sharing all my tips and tricks for making the best almond flour crust every single time!

Ingredients in Almond Flour Pie Crust

Because this keto pie crust is made with almond flour, it’s naturally gluten-free and low-carb. Here’s what you’ll need for the almond pie crust: 

  • Almond flour
  • Salt
  • Butter
  • Cream Cheese
  • Egg
  • Apple Cider Vinegar (creates a crisp, flakey texture)

Can I Substitute the Almond Flour? 

No, this keto crust recipe works best with almond flour. I do not recommend substituting it. Likewise, make sure to buy almond flour and NOT almond meal. 

Can I Use Low-Fat Cream Cheese? 

Possibly, but I recommend using brick-style, full-fat cream cheese for best results.

How to Make Almond Flour Pie Crust

To make this low-carb pie crust,  you just need a few basic ingredients and a mixer or food processor. If you do not have a mixer, I have also included instructions to make this crust by hand below. 

Step 1: Add the almond flour, salt, cubbed butter, and cubbed cream cheese to a stand mixer fitted with a paddle attachment.

Step 2: Mix the crust until the butter and cream cheese begin to break down and it resembles course sand.

Step 3: Add the egg and apple cider vinegar and mix until smooth. The dough will be sticky.

Step 4: Roll the mixture into a ball and wrap with plastic wrap.

Step 5: Chill in the fridge for at least two hours to allow the butter to harden. If you use the dough without chilling again, the butter will already be soft and it will not create a crispy crust.

Can I Make This Recipe Without a Mixer? 

If you do not have a mixer, you can still make this crust with a little bit of elbow grease.

Combine the almond flour, salt, cubbed butter, cubbed cream cheese and use a pastry cutter to cut the butter and cream cheese into the flour. 

When the mixture resembles course sand, add the egg and apple cider vinegar, use the pastry cutter a few more times to mix the dough, then switch to a silicone spatula and work until a smooth dough forms.

Can I Blind Bake the Keto Pie Crust? 

Blind baking refers to pre-baking the crust, and this is not required for every recipe but some do. Often, dessert pies are blind baked until the crust is done and cooled before adding the filling.

The answer is, yes you can absolutely blind bake this keto pie crust. When blind baking this crust, I do suggest using pie weights.

If you do not have pie weights, simply line the bottom of the crust with parchment paper or foil and add dry rice or beans. This just weighs down the bottom of the crust so it does not create any bubbles and instead forms a perfect pie crust.

Tips for Making Keto Pie Crust

  • You must let the dough chill in the fridge for at least 2 hours before rolling it out and using it. If you skip this step, the pie crust won’t hold its shape or turn out nice and flaky. 
  • The apple cider vinegar in this recipe doesn’t affect the flavor at all. It just makes the crust flaky! 
  • Make sure you’re using almond flour and not almond meal. They’re two separate products!

This is an excellent all purpose almond flour crust. I use this for my favorite quiche recipes as well as decadent pies. This can also be used to line muffin tins to create smaller pies if you prefer.

Ingredients

  • 1 1/2 cups almond flour
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1 ounce cream cheese
  • 1 teaspoon apple cider vinegar
  • 1 egg

Instructions

    1. Combine almond flour, salt, butter and cream cheese in a food processor or mixer and mix until it resembles course crumbs.
    2. Add in one egg and apple cider vinegar (this helps to achieve a crisp, flaky crust) and mix again until well combined.
    3. Roll the dough into a ball and wrap in plastic wrap. Chill in the fridge for at least 2 hours to allow the butter time to harden again. (I like to prepare the dough the day before)
    4. When ready to use the dough press it into the prepared pan (you can roll the dough, but it is sticky and I find it easier to press the dough into the pan)
    5. Bake at 350 degrees

    To Blind Bake

    Bake at 350 degrees for 15 minutes with pie weights. Remove pie weights and bake for an additional 7-10 minutes until set and golden brown.

For quiche: I prebake at 350 degrees for 10-12 minutes without pie weights. Add the quich filling and bake an additional 20-25 minutes until the eggs are set.

Have you heard of a chaffle? These are low carb keto friendly waffles that are usually made from shredded cheese and eggs, and sometimes the addition of coconut or almond flour. Actually, I can’t believe I haven’t posted one before because I make them all of the time!

Recently, I began thinking ahead to Spring and those old favorites I know I will be craving and the first thing that came to mind was a Strawberry Shortcake! That is when I knew I wanted to make a keto friendly waffle that wasn’t cheese based so that I could create low carb Strawberry Shortcake Waffles. 

These almond flour keto waffles fit the bill perfectly. One recipe makes two small waffles you can enjoy anyway you would like! They would be great with butter and keto friendly syrup, or like this with strawberries and whipped cream!

What ingredients do you need to make Keto Waffles?

The great thing about this recipe is that just need 7 pretty basic ingredients! They are:

How do you make Keto Strawberry Shortcake Waffles?

For this recipe I use my favorite tiny waffle maker, it makes exactly 2 perfectly sized waffles. The first step is to plug in your waffle maker and it is ready to go when the light goes off. Though this waffle maker does have a nonstick coating I always spray a very light coat of cooking spray just to be careful.

Next, in a small bowl combine the almond flour, egg, sweetener, heavy cream and baking powder and whisk until smooth. Carefully pour half of the mixture into the waffle maker. It will take 2-3 minutes and the waffle maker will “pop” up a bit when the waffle has expanded and risen. Remove the first waffle and set aside. Repeat the steps for the second waffle.

The final step is to assemble the strawberry shortcake stacks! Place one waffle on the bottom top with 1 1/2 thinly sliced strawberries and whipped cream and repeat for the second layer. 

Lastly, you can dust a bit of powdered keto friendly sweetener if you like to make your waffles extra decadent!

How to Make Keto Pumpkin Cookies

As you might have guessed, these sugar-free pumpkin cookies have an almond flour and pumpkin base. Cookies need a fat — which is usually butter — to make them have a nice soft, chewy texture. However, these cookies are unique because pumpkin works in place of butter.

They feature a pumpkin dough with pumpkin spice and sprinkled with chopped pecans and low-carb dark chocolate chips. I think they have the perfect texture. Here’s how the almond flour pumpkin cookies are made: 

  1. Preheat the oven to 350F. 
  2. While the oven preheats, measure out the pumpkin puree and squeeze out any excess moisture. 
  3. Once the pumpkin is dried out somewhat, simply combine all the ingredients in a large bowl. 
  4. Chill the dough for 10 minutes. 
  5. Scoop the dough onto parchment paper-lined baking sheets. Bake until done. 

You can enjoy these cookies warm with the melted dark chocolate, but they are very good served chilled too.

Of course! I made this recipe as keto pumpkin chocolate chip cookies, but you’re welcome to omit them if you’d like to make classic pumpkin cookies. 

Can I Substitute the Almond Flour? 

Almond flour works best in this recipe, so I can’t recommend a substitute. Coconut flour isn’t a 1:1 substitute, so don’t try using it in these cookies. 

Can you freeze low carb pumpkin cookies? 

Absolutely! Since this makes a pretty big batch, I freeze mine and pull them out and let them thaw for a few minutes before enjoying.

Tips for Making Almond Flour Pumpkin Cookies

The most important step is to dry the pumpkin before you begin baking. Pumpkin has a high moisture content and to create the perfect cookie you need to allow some of the moisture to release from the canned pumpkin.

This is a very simple process:

  1. Simply line a bowl with several layers of paper towels and spoon the 1 cup of pumpkin onto the paper towels.
  2. Top with additional paper towels and pat down lightly.
  3. Allow the pumpkin to rest while the oven preheats.
  4. You need to let the pumpkin sit for 10-15 minutes. 

When ready to use, the paper towels will be soaked through with moisture from the pumpkin. Simply discard the paper towels and add the pumpkin to the mixing bowl as the directions state.

  • 2 teaspoons pumpkin spice
  • 1/2 cup Lilly's dark chocolate chips
  • 1/4 cup pecan pieces

Instructions

    1. Preheat oven to 350 degrees F.
    2. While the oven preheats measure out the pumpkin and place it in a paper towel lined bowl, cover with extra paper towels, pressing down lightly. Allow the pumpkin to sit for 10-15 minutes. The paper towels will absorb the extra moisture. Discard the paper towels when moisture has been absorbed. These Keto Pumpkin Chocolate Chip Cookies come to about one net carb each!     3. Once the pumpkin has been dried out, combine all ingredients in a medium size mixing bowl and mix until well combined.

    7. Bake for 14-16 minutes. Allow cookies to cool before removing from the baking sheet. **Cookies will be slightly soft when you remove from the oven and firm upon cooling, do not overcook.**

  • Cream cheese: Full- or low-fat cream cheese can be used without a significant change in the texture or flavor. Make sure you allow it to soften to room temperature before using.
  • Bacon: You could also use candied bacon or another meat if you prefer. Store-bought bacon bits can be used if you are short on time and looking for a quick, convenient option.
  • Shredded cheese: We recommend to use a mixture of pepper jack and cheddar cheese because of the sharp and slightly spicy flavor. You could use others such as havarti, Swiss, mozzarella, or another blend based on your personal preference. Easy-melting cheese works best so avoid crumbly options like blue cheese or feta.
  • Coconut flour (or almond flour):  Coconut flour creates fluffy, light muffins. The muffins will be denser and less fluffy if using almond flour. We have used both and each version will create delicious, gluten-free, and low-carb, so choose based on your own personal preferences.
  • Baking powder: Adds lift and structure, making these keto egg muffins light and fluffy.

Mix the ingredients

Preheat oven to 350 degrees F. Then mix all ingredients in a medium-sized bowl. After well combined, let the mixture sit for 5 minutes so that the coconut flour can absorb the moisture.

Bake

Spray a mini muffin pan and fill each cup until each is about 3/4 full. Bake until golden brown and cooked through. Let cool slightly before popping out of the pan.

  • Refrigerator Storage: These keto egg muffins with bacon can be stored in an airtight container for 4 days in the refrigerator. Allow them to completely cool before placing in an airtight container.
  • Freezer Storage: They can be stored in an airtight container for up to 3 months in the freezer.

Do I Have to Make Muffins? 

No, you can bake the egg mixture in a 9-inch baking pan instead. Note that the bake time may need to be increased. 

Tips for Making the Best Bacon Egg Muffin Cups

  • These bacon, egg, and cheese muffins freeze well and are easily customizable. Make a batch for each member of the household so anyone can pull one out to tide them over until lunch time!
  • Use a silicone muffin tray. A regular muffin tin will work but a silicone muffin tray is easier to clean up which will save you even more time!
  • Use any cheese you’d like to make this recipe such as Swiss, cheddar, gouda, or Colby jack. Pepper jack is great if you food with a little heat! Likewise, you can use any kind of bacon. 
  • If you’re out of bacon, feel free to swap in browned, crumbled sausage. Diced ham also works well.

Ingredients

  • 4 large eggs
  • 2 ounces cream cheese, softened
  • 1 cup chopped cooked bacon (5-6 thick slices)
  • 1 1/4 cup shredded cheese (cheddar, pepper jack, havarti, swiss, any variety will do)
  • 1/3 cup coconut flour OR almond flour (see notes)
  • 1/2 teaspoon baking powder

Instructions

    Preheat oven to 350 degrees
    In a medium size mixing bowl combine all of the ingredients.
    Allow the mixture to sit for 5 minutes for the coconut flour to absorb some of the moisture.
