That’s why I love these Chocolate Covered Macadamia Nuts! Sugar free chocolate chips are melted with coconut oil and poured over nutritious macadamia nuts and are topped off with sea salt.

This healthy keto sweet is low carb, gluten free and will help to keep you going throughout your day! On a keto diet, it is recommended to stay under 50 grams of carbs per day. Are Macadamia Nuts Healthy?

Absolutely! Macadamia nuts are an excellent choice for any healthy eater, but they are especially beneficial on a keto diet. These nuts are naturally very low in sugar and carbs. They are also high in healthy fat, which can help to lower your risk of heart disease as well as lower your cholesterol. Macadamia nuts are also high in vitamins and nutrients, as well as fiber. These nuts have a buttery, creamy flavor, and are the perfect healthy keto snack!

Best Nuts for Keto

Besides macadamia nuts, there are several varieties of nuts you can enjoy while staying keto. Peanuts, walnuts, pecans, almonds and brazil nuts are all excellent low carb nut options.

Keto Chocolate

Chocolate is not off limits on a keto diet! Choosing a sugar free chocolate is what you’ll need for a low carb chocolate option. If you aren’t familiar with sugar free chocolate, it is sweetened with usually Stevia or monkfruit, which are natural sweeteners, or also sugar alcohol. Sugar free chocolate does not have a strange taste, but tastes very similar to a more traditional chocolate.

Sugar free chocolate melts the same as traditional chocolate, so you can use it in your favorite recipes! You can buy keto chocolate online- I have used Lily’s brand in this recipe, or on Amazon. You can also find low carb chocolate in grocery stores, usually either by the regular chocolate or in the pharmacy area of the store. I used low carb chocolate in these Keto Chocolate Chip Cookies, Air Fryer Brownie and this Keto Crockpot Candy and I have always had wonderful results!

How to Make Chocolate Covered Macadamia Nuts

First, melt the coconut oil over low heat in a double boiler. If you do not have a double boiler, use a microwave safe bowl and melt your oil in the microwave, or use a small saucepan and melt over the stove top. When your oil has fully melted, add the chocolate chips and stir until melted.

Fold the macadamia nuts into the chocolate mixture. Scoop the mix onto wax paper in tablespoon sized mounds. If desired, sprinkle with sea salt and allow to chill until fully set.

Tips for Melting Chocolate

To melt chocolate, you will need to heat your chocolate over a low heat slowly and stir continuously. Coconut oil helps to loosen the chocolate so that you get a smooth melt. If you have melted your chocolate too fast, it can become gritty. If that is the case, you can add 1 teaspoon of coconut oil at a time and stir until your chocolate is smooth again.

Ingredients

  • 2 cups roasted salted macadamia nuts
  • 1 (8 ounce) Lily's Semi Sweet Chocolate Chips
  • 1-2 tablespoons coconut oil
  • sea salt (optional)

Instructions

  1. In a double boiler, small saucepan, or micorwave proof bowl, melt the coconut oil over low heat. When the oil is completely melted add the chocolate chips and stir until completely melted.
  2. Fold the nuts into the melted chocolate. Scoop the clusters into heaping 1 tablespoon mounds and place on wax paper.
  3. Sprinkle with sea salt if desired and chill until set.

Notes

You can use another nut such as peanuts, almonds, pecans or walnuts if you prefer.

However, if you are anything like me you do need something sweet on hand! These No Bake Cookies are only 1.5 net carbs each and they are quick and easy. But today’s no-bake keto dessert recipe is even easier!

These Keto Almond Butter Cups have three simple ingredients and endless possibilities. These are everything you love about the peanut butter cups you grew up eating, but instead they feature rich dark chocolate and your favorite creamy almond butter.

This is a dessert recipe you will want to double!

Ingredients in Keto Almond Butter Cups

What I love about these almond butter chocolate cups is that you can easily make them low-carb or use regular ingredients to make a full-sugar treat.

No matter your dietary preferences, this no-bake dessert can be tailored to suit whatever ingredients you have on hand! 

  • Chocolate Chips: I use Lilly’s Sugar-Free Chocolate Chips, which is what the nutrition is calculated on. 
  • Coconut Oil: this adds additional fat and helps to melt the chocolate into a perfectly smooth silky consistency.
  • Almond Butter: any low carb option will work.
  • Sea salt: optional, but I love a sweet and salty combo. 

Is Almond Butter Keto? 

Yes, so long as you’re using a natural almond butter that’s made solely with almonds. Almond butters that contain added sugar are not keto-friendly. 

What’s the Best Almond Butter for Keto? 

Any natural almond butter will work. Read the ingredients list and make sure that it contains only almonds. 

These three ingredient Keto Almond Butter Cups are the perfect low carb way to satisfy your sweet tooth!

How to Make Almond Butter Cups

No-bake almond butter chocolate cups are so easy to make! Here’s how they’re made: 

  1. Place a silicone muffin tin on a cutting board or baking sheet so it is stable (you will need to be able to move it around). Set aside for later.
  2. Melt the coconut oil by microwaving in 20-second increments in a medium size mixing bowl.
  3. When the coconut oil is completely melted, add the sugar-free chocolate chips and stir.
  4. Microwave in 20-second increments until the chocolate is smooth. Be sure to stir in between heating to make sure the chocolate melts evenly.
  5. Carefully spoon the melted chocolate into standard size silicone muffin tins. Spoon enough to cover the bottom well. 
  6. Once the base of the muffin tins are covered carefully, tilt it back and forth so it covers up the sides slightly. Place in the freezer or fridge and let chill for 10 minutes. 
  7. Spoon the almond butter into each cup (you can heat this for 15 seconds so it is smooth if you want) 
  8. Spoon the remaining chocolate over the almond butter and tilt back and forth so it’s smooth. 
  9. Place in the fridge or freezer until set. 

Can the Chocolate Coating Be Sweetened? 

The chocolate chips I use are dark chocolate, while there are other varieties, this is my personal favorite. If you find them too bitter, you can certainly make the chocolate mixture sweeter.

Once the coconut oil and chocolate are melted, add 1-2 tablespoons confectioners monkfruit or swerve and stir until smooth.

Can I Use Another Nut Butter? 

Certainly! Almond butter is a low-carb option, which is why I chose it. However, the possibilities are endless. You can also fill these with creamy or crunchy peanut butter.

  • Coconut Butter
  • Sugar-Free Jams
