This frosting doesn’t require tons of butter or cream cheese. Instead, it needs two simple ingredients, a spatula and an electric mixer; it is as easy as it gets.

Whipped ganache frosting is a luxurious and velvety concoction that combines the richness of traditional ganache with the lightness and airy texture achieved through whipping. To create this delectable frosting, high-quality chocolate is melted and blended with an equal amount of hot cream, forming a smooth and glossy ganache. After cooling, the ganache is whipped until it reaches a fluffy consistency, resulting in a decadent frosting that’s both luscious and spreadable. No, this recipe will not work with cocoa powder. The ratio of chocolate and heavy cream have to be precise for the correct consistancy.

These keto bars are gluten free, grain free, sugar free, and diabetic friendly. They are great for gifting to teachers, family members, or neighbors, too. Just wrap up in some cute butcher’s paper, plastic, or gift boxes (these would be cute with a festive label, or these would fit two pretty well!) for an inexpensive, thoughtful present!

This recipe has several steps, but it’s still very easy to make! This recipe is perfect for beginner cooks or a family meal prep day! The majority of the work takes place in a food processor or a very strong blender.

First, you’ll start by grinding your peanuts in a food processor until it crumbles to the consistency of graham cracker crumbs. Then you’ll incorporate your creamy ingredients (like butter, sweetener, and peanut butter), followed by coconut flour and vanilla extract. This multi-step process will require you to scrape the sides of the processor down with a spatula several times, but the stop-and-go is worth it for these delicious bars!

Finally, scrape the thick batter onto a pan (8×8 lined with parchment paper). Spread it to a nice even layer and allow it to chill for 30 minutes. Peanut Butter Filling

  • 1 cup roasted peanuts, crushed to a graham cracker crumb consistency
  • 4 tablespoons butter, melted
  • 1/2 cup powdered monkfruit sweetener
  • 3/4 cup creamy peanut butter
  • 2 tablespoons coconut flour
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup Lily's Sugar Free Chocolate Chips, chopped
  • 2 tablespoons creamy peanut butter
  • 1/2 cup heavy cream

Instructions

  1. Place the peanuts in a food processor and pulse until it reaches a graham cracker crumb consistency. (see photos in post)
  2. Push the crushed peanuts to one side of the processor and add the melted butter, sweetener, and peanut butter. Pulse several times until well blended. You will need to stop and scrape down the sides as you go.
  3. Add the coconut flour and vanilla extract, pulse a few more times.
  4. Pour the batter (it will be thick, but easy to scrape out) of the food processor into a parchement paper lined 8x8 pan. Spread the peanut butter into a nice smooth layer. Chill for 30 minutes.
  5. In a small sauce pan heat the heavy cream. When it is piping hot add the chopped chocolate and peanut butter. Remove from the heat and stir until the mixture is smooth. Pour over the peanut butter layer and chill at least 1 hour before cutting.

Notes

To get good clean cuts place the bars in the freezer 10 minutes before slicing and whipe the knife clean after each cut.

This easy dessert is super kid-friendly and is nearly impossible to distinguish from a sugary, carb-filled shake from a restaurant! Just blend your ingredients together, pour, and serve for the ultimate movie night dessert.

Can I make milkshakes ahead of time?

Milkshakes have the best texture immediately after blending. If you make this ahead of time, it can melt in the fridge. If you freeze it after blending, it will get too hard and not be the super smooth drink you want. I wouldn’t recommend making this ahead of time.

Chocolate is not off limits on a keto diet! Choosing a sugar free chocolate is what you’ll need for a low carb chocolate option. If you aren’t familiar with sugar free chocolate, it is sweetened with usually Stevia or monkfruit, which are natural sweeteners, or also sugar alcohol. Sugar free chocolate does not have a strange taste, but tastes very similar to a more traditional chocolate.

Sugar free chocolate melts the same as traditional chocolate, so you can use it in your favorite recipes! You can buy keto chocolate online- I have used Lily’s brand in this recipe, or on Amazon. You can also find low carb chocolate in grocery stores, usually either by the regular chocolate or in the pharmacy area of the store. I used low carb chocolate in these Keto Chocolate Chip Cookies, Air Fryer Brownie and this Keto Crockpot Candy and I have always had wonderful results!

How to Make Chocolate Covered Macadamia Nuts

First, melt the coconut oil over low heat in a double boiler. If you do not have a double boiler, use a microwave safe bowl and melt your oil in the microwave, or use a small saucepan and melt over the stove top. When your oil has fully melted, add the chocolate chips and stir until melted.

Fold the macadamia nuts into the chocolate mixture. Scoop the mix onto wax paper in tablespoon sized mounds. If desired, sprinkle with sea salt and allow to chill until fully set.

Tips for Melting Chocolate

To melt chocolate, you will need to heat your chocolate over a low heat slowly and stir continuously. Coconut oil helps to loosen the chocolate so that you get a smooth melt. If you have melted your chocolate too fast, it can become gritty. If that is the case, you can add 1 teaspoon of coconut oil at a time and stir until your chocolate is smooth again.

  • Make sure that no water comes into contact with this mixture while you’re mixing–It’ll cause the chocolate to seize up and separate into a grainy, gloopy mess.
  • Chop your chocolate very finely
  • The heavy cream should be VERY hot! As soon as it has begun to boil remove it from the heat and carefully pour it over the chocolate. 
  • Do not let the mixture sit too long before you stir it- two minutes is my recommended time.

What do I do with Chocolate Ganache after it cools?

  • 1 cup heavy whipping cream

Instructions

    1. Chop Semi Sweet Lily's Sugar Free Chocolate Chips as finely as you can. Pour them into a heatproof bowl and set aside. 
    2. In a sauce pan (not the microwave) slowly heat heavy whipping cream to a simmer. When the cream is piping hot pour it over the chopped chocolate and place a lid on top of the bowl.

These cookies are soft and a little bit chewy. The best part about them is that they are made with basic keto pantry staples that you probably already have on hand. So when your sweet tooth starts calling, you can satisfy it without running to the grocery or blowing your keto diet.

Ingredients for Keto Chocolate Cookies 

For this keto chocolate cookies recipe, you’ll need the following basic ingredients: 

  • Butter: prefer salted butter for this recipe.
  • Coconut flour: almond flour is not a good substitute here. 
  • Keto Sweetener: Swerve or monkfruit sweetener 
  • Eggs: size large eggs
  • Cocoa powder, Baking powder, and Salt
  • Vanilla extract
  • Sugar-free chocolate chips

What Are the Best Keto-Friendly Chocolate Chips? 

I always use Lily’s sugar-free chocolate chips in my baked goods. They don’t have a weird aftertaste and they are widely available at most grocery stores.  You can also buy them in many different flavors now so you can easily switch up the flavor of these cookies by using regular chocolate chips, peppermint, or salted caramel! 

Can the Coconut Flour Be Substituted? 

No, you need to make this recipe as keto coconut flour cookies. In my experience, almond flour or another keto flour won’t work. If you prefer an almond flour cookie recipe this is the BEST Keto Chocolate Chip Cookie! This Chocolate Sugar Cookie or these Double Chocolate Sheet Pan Cookies both use almond flour as well.

How to Make Keto Chocolate Cookies 

This is one of my go-to low-carb chocolate desserts because it’s so quick and easy to make. Here are the basic steps: 

  1. Combine the melted butter, coconut flour, sweetener, eggs, baking powder, cocoa powder, salt and vanilla. 
  2. Fold in the chocolate chips. Use a standard size cookie scoop and scoop the cookie dough onto a greased baking sheet.
  3. Bake until done, then let cool completely before serving. 

Why do I need to let the cookies cool?

Grain free flours do not have the same qualities as wheat based flours. They do not contain gluten, which makes them more likely to crumble. A hot coconut flour or almond flour cookie will crumble. For the perfect keto cookie that stays together, allow it to cool before moving.

Tips for Perfect Keto Cookies 

  • When you scoop out the cookie dough, make sure to leave room between the cookies as they tend to spread as they bake.
  • Make sure to grease the cookie sheet well before adding the cookie dough. I prefer using a silicone baking sheet.  
  • I added Lily’s sugar-free chocolate chips. You can also add other things such as unsweetened coconut and pecans if you prefer.

How to Store Low Carb Chocolate Cookies

Allow cookies to cool completely, then transfer to an air-tight container. If left on the counter, they’ll need to be eaten within a week for the best taste and texture. If you’d like to store them longer, they’ll stay fresh in the fridge several weeks and in the freezer up to 3 months.

You can make the cookie dough in advance and store in the fridge up to 24 hours (makes it easy to bake fresh cookies for a sleepover or party) or even frozen. It’s easiest to scoop the cookie dough into individual cookies, freeze on a baking sheet for an hour, then transfer to a freezer bag. The cookie dough should be good 3-6 months. To cook from frozen, simply add 1-3 extra minutes to the cooking time.

Ingredients

  • 1/2 cup butter, melted (8 tablespoons)
  • 1/3 cup coconut flour
  • 3/4 cup confectioners monkfruit sweetener
  • 2 large eggs, beaten
  • 1/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup Lily's sugar free chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium size mixing bowl combine the melted butter, coconut flour, sweetener, eggs, baking powder, cocoa powder, salt and vanilla. Mix until a thick batter forms.
  3. Fold in the chocolate chips.
  4. Grease a baking sheet or line with a silicone baking sheet.
  5. Use a standard size cookie or ice cream scoop (about 1.5 inches wide) to scoop the batter onto the baking sheet. Lightly press the batter down (just lightly, do not flatten)
  6. Bake 8-10 minutes until cookies are set, allow to cool completely.

Notes

You can also use unsweetened coconut and pecans for another flavor combo.

Yes, cheesecake is a fantastic dessert for the keto lifestyle! The trick is to choosing a good keto sweetener, a delicious low-carb crust, and (for this version’s ganache) sugar-free chocolate. I like to use Confectioners Swerve or Powdered Monkfruit because they have zero calories, don’t impact our blood sugar, and make a creamy filling without major aftertaste. 

Ingredients for Keto Chocolate Cheesecake Bars

As always, this is a quick overview of the ingredients you will need to make these low carb cheesecake bars. For the complete printable recipe just keep scrolling. 

  • Almond flour
  • Confectioners Keto sweetener (such as Monkfruit or Swerve)
  • Cocoa Powder
  • Butter
  • Cream Cheese
  • Sour Cream
  • Eggs
  • Vanilla Extract

How to make Keto Chocolate Cheesecake Bars

This recipe features three layers: a chocolate shortbread crust, a chocolate cheesecake layer, and an ultra rich chocolate ganache topping. 

  • Chocolate Crust: combine the melted butter, almond flour, sweetener and cocoa powder. Press the soft crust dough into a parchment paper lined 8×8 pan. Bake the crust for 7-8 minutes until set and allow the crust to cool completely. 
  • Chocolate Cheesecake: using an electric mixer combine the cream cheese, sour cream, sweetener, cocoa powder, egg and vanilla extract. Carefully spread the filling over the cooled crust. Bake the cheesecake 25-30 minutes until it has set in the center. Cool the cheesecake completely. 
  • Chocolate Ganache: Chop the dark chocolate chips finely and add to a heat proof bowl. Heat the heavy whipping cream until almost simmering. Pour the heavy cream over the chocolate and allow it to sit at least one minute to soften. Carefully stir the chocolate mixture until completely combined. Allow the chocolate to sit a few minutes until it has thickened slightly. Pour over the cooled cheesecake. 

Tips for the Best Cheesecake Bars

While these cheesecake bars are SUPER easy, there are a few simple tips that help these come out flawlessly every time.

  • Use room temperature cream cheese and eggs — This helps the cheesecake filling become extremely smooth without lumps and clumps. Everything is easier to mix as well!
  • Don’t overbeat the mixture — When beating the mixture, you’re incorporating a lot of air. This is great when making scrambled eggs, but it’s not good for a cheesecake! Too much air means you’ll have cracks in your dessert. If you think you may have mixed a bit too much, leave the mixture sitting on the counter for about 15 minutes so some of the air bubbles can work their way up to the top.
  • Use an 8×8 pan — This recipe was developed specifically for an 8×8-inch pan. If you use a 9×9 or other size, your cheesecake will be much thinner and overdone.

How do you make keto chocolate ganache?

For this keto chocolate ganache, I used equal parts hot heavy whipping cream and sugar-free dark chocolate. This allows the chocolate to gently melt and combine with the cream for a luscious, smooth ganache worthy of any dessert. Make sure that no water comes into contact with this mixture while you’re mixing–It’ll cause the chocolate to seize up and separate into a grainy, gloopy mess.

Other Cheesecake Flavors

While this triple chocolate cheesecake is amazing on its own, you can easily change a few things for new flavors if you’d like! If you want a mocha-flavored cheesecake, add a bit of coffee into your mixture or a packet of instant coffee into the cookie crust. You could add a layer of Keto Caramel Sauce or Sugar-Free Strawberry Sauce for an extra punch of flavor. 

You could easily top these cheesecake bars with whipped cream (sugar free), too! Use flavored whipped cream to switch it up–Peppermint for Christmas, chocolate for a quadruple chocolate cheesecake, etc. Mocha, peanut butter, or any other options could be great, too!

  • 1 cup Lily's dark chocolate chips, finely chopped
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8x8 baking dish with parchment paper and set aside.
  2. To make the crust combine the melted butter, almond flour, sweetener, and cocoa powder. Press the dough into the baking dish. (dough will be soft and sticky, that is okay)
  3. Bake the dough 7 minutes or just until the dough has set. Allow the dough to cool completely.
  4. Using an electric mixer beat the cream cheese, sour cream and egg until combined. Add the sweetener, cocoa powder and vanilla extract until smooth.
  5. Carefully spread the cheesecake mixture evenly over the cooled crust.
  6. Bake the cheesecake bars 25-30 minutes until cooked through. Allow the cheesecake bars to cool completely.
  7. To make the ganache place the finely chopped chocolate in a heat proof bowl, set aside. In a sauce pan bring the heavy cream to a simmer. Carefully pour over the chocolate and let the chocolate sit 1 minute to soften. Stir the chocolate until smooth. Allow it to cool a few minutes and carefully pour over the cooled cheesecake.
  8. Chill the cheesecake at least 3 hours before serving.
