How to Make Chicken Breasts in the Slow Cooker

Season the chicken

 In a small bowl, combine the garlic powder, onion powder, paprika, thyme, salt, and pepper and set aside. Place the chicken breasts in a large bowl and toss with the 2 tbsp oil and the seasoning. 

Cook the chicken

Pour the broth into your slow cooker. Then place the seasoned chicken in the slow cooker with the chicken broth and begin cooking on low.

How Long Do I Cook the Chicken in the Slow Cooker?

You will cook the chicken on low for 3-4 hours. Closer to 3 hours if you plan to slice or dice it and 4 hours if you plan to shred it. Once done, shred the chicken inside the slow cooker. Otherwise, you can drain and shred without the liquid. 

Storage and Reheating Instructions

  • Reheating Instructions: You can reheat this recipe in the microwave in 30-second increments. If you kept the juices from the slow cooker, we recommend pouring some over the chicken to keep it from drying out while reheating.
  • Refrigerator Storage: Allow to cool completely. Then you can store in the refrigerator in an airtight container for up to 3 days. We recommend storing with its juices for maximum flavor, but you can discard the juices if desired.
  • Freezer Storage: After cooling completely, you can store this recipe in the freezer for up to 3 months in an airtight, freezer-safe container.

Typically, this is considered a Southern dish, but it has become so well loved I think it is a dish that transcends geographical boundaries. And now, thanks to a few simple changes it can also eclipse dietary boundaries! Let me show you exactly how to make perfect Chicken and Waffles that happen to be low carb, keto-friendly and gluten free!

What You’ll Need

As always, this is a quick overview of the ingredients needed for this recipe. For the complete, printable recipe card scroll to the bottom of this post.

  • Chicken: I used chicken breasts, but you could use tenderloins to skip the slicing step. You could also use thighs if you prefer. 
  • Egg and Mayonnaise: This helps the breading stick and ensures the chicken stays nice and juicy. Eggs are also used in the waffle recipe.
  • Almond Flour and Parmesan: We use almond flour and parmesan for the breading on the chicken. The parmesan is essential and helps to make it nice and crispy. Almond flour is also used to make the low-carb waffles.
  • Spices: Garlic powder, onion powder, paprika, Italian seasoning, garlic salt. These are general all-purpose seasonings, and you could swap this out with a tasty blend you prefer more.
  • Butter: This is melted and brushed on the chicken to ensure the breading is crispy and delicious!
  • Shredded Cheese: an essential ingredient in the low carb waffle recipe.

How to Make Chicken and Waffles

In addition to the ingredients listed above you will need a few bowls, large baking sheet and of course a waffle maker! I use this mini waffle maker and cannot recommend it enough! Below you will find the step by step photos and directions to make this easy chicken dish. Remember, the printable recipe card is at the bottom of the post as well.

Bread the Chicken

Preheat the oven to 425 degrees F and spray a large cookie sheet with cooking spray or line with aluminum foil. Combine the egg and mayonnaise in one shallow bowl and beat with a fork until thoroughly combined. Set aside. In another shallow bowl, combine the Keto Breading ingredients. Dip each sliced chicken tender into the egg mixture, then dredge in the breading. Make sure the tenders are entirely coated.

Bake the Chicken

These Crispy Oven Baked Keto Chicken Tenders are just what you've been craving! These delicious low carb, gluten free chicken tenders are about 1 net carb for two tenders! 

Once each tender is coated well, lay it on the cooking sheet and brush it with the melted butter. Bake 15 minutes, turn the tenders carefully using tongs, and bake an additional 5-10 minutes until the chicken is cooked through. Remember, the cook time will vary based on the size and thickness of your chicken.

Make the Waffles

While the chicken is in the oven make the waffles. Combine the eggs, shredded cheese, almond flour, and baking soda together. Carefully add the batter to the hot waffle maker, be sure not to overfill, a little goes a long way. The allow the waffles to cook 3-5 minutes (it will vary by machine) the waffles are done when steam is no longer emitting from the machine.

Serve

Serve the crispy chicken and fresh waffles while they are piping hot! If you are keeping low carb skip the traditional syrup and use a sugar free syrup. If you love a sweet and savory combo, serve this with a dash of hot sauce along with the syrup!

Storage and Reheating

  • Separate the chicken from the waffles. This will help prevent the waffles from becoming soggy.
  • Allow the chicken and waffles to cool to room temperature before storing them in separate airtight containers.
  • Consume the leftovers within 3-4 days for the best taste and quality.

To reheat chicken and waffles preheat the oven to 300°F. Place the waffles on a baking sheet and the chicken on another. Cover the chicken with aluminum foil to prevent it from overcooking or drying out. Heat in the oven until both the waffles and chicken are warmed through. This usually takes around 10-15 minutes, but times may vary depending on your oven.

However, I challenge you to find a more quick, convenient way to prepare it without sacrificing flavor. These foil packs take a few simple ingredients and create a delicious, complete meal. Even better, nearly zero cleanup will be required when you finish your meal! This is a really great summer recipe to prepare on the grill, but I will let you in on a little secret. Put a few of these packets together prior to your next camping trip and cook them over a campfire with family or friends. You won’t regret it!

What You Will Love About this Recipe

  • Minimal prep needed. Prep for this meal only requires a few simple steps and only takes a couple of minutes.
  • Little clean up required. Since nearly every step of prep and cooking takes place on the foil, there is minimal clean up required.
  • Incredible flavor and texture. These foil packs utilize an incredibly simple and easy cooking method to provide that amazing buffalo chicken flavor!

Ingredients for Buffalo Chicken Foil Packs

  • Boneless skinless chicken breasts: Boneless chicken thighs would also work if you prefer dark meat.
  • Vegetables: for this recipe I use bell peppers, cauliflower florets and green onions for the best flavor combination.
  • Cooking oil: This is for heat transfer, flavor, browning ingredients and to avoid sticking. Any neutral oil will work. We prefer olive oil or avocado oil.
  • Buffalo sauce: The key component to “buffalo” chicken. It adds an amazing tangy, spicy flavor
  • Blue cheese or a drizzle of ranch (optional): Helps create the perfect flavor and texture
  • Spices: salt, smoked paprika, garlic powder, dry parsley, onion powder, black pepper

How to Make Buffalo Chicken Foil Packs

In addition to the ingredients listed above you will need a cutting board, aluminum foil, and a knife. To make the best Buffalo Chicken Foil Packs follow the instructions below:

Prep

Heat the grill to medium-high heat. Lay out 4 large pieces of aluminum foil on your counter or work surface. In a small bowl, combine the seasoning ingredients and set aside. 

Add Ingredients to the Foil Packs

Divide the 4 chicken breasts, bell peppers, and cauliflower equally between the 4 pieces of aluminum foil, placing them in the center. Drizzle the oil over the chicken breasts and vegetables. Then sprinkle the seasoning (about 1 ½ tsp per packet) evenly over the 4 foil packets as well. Add 1 tbsp of the buffalo sauce to each foil packet, spreading it over the chicken. Sprinkle with the green onions.

Cook

Fold the foil packets by bringing 2 sides together and folding them over, then closing the ends. Be sure to leave enough room for the air to circulate. Grill the packets for 30-35 minutes, or until the chicken reaches an internal temperature of 165 degrees. 

Serve

Open the foil packets and add 1 tbsp of the remaining buffalo sauce to each packet, drizzling it over everything. Sprinkle with bleu cheese crumbles or drizzle with ranch dressing! Foil packs are best when served immediately after they have finished cooking. Be very careful handing the foil packs as they will be hot. Remember, the packet will be full of steam so use tongs or heat resistant gloves when opening, and be very careful to avoid a burn.

Storage and Reheating Instructions

  • Refrigerator-You can store this recipe in an airtight container for up to 3 days. For the best reheating results, drain off any excess moisture to prevent a soggy dish.
  • Freezer– We don’t recommend freezing this recipe.
  • Reheating-To reheat a whole foil pack add the pack to a preheated air fryer and cook at 350 degrees for 5 minutes or until warmed. Alternatively, you can add the ingredients to a microwave-safe plate and warm in 30-second increments until done.

Tips and Tricks for the Best Buffalo Chicken Foil Pack

  • Make sure to use heavy-duty aluminum foil, it doesn’t tear or rip as easily making it easier to use for foil packets.
  • To ensure ingredients cook evenly, be sure to leave enough room for the air to circulate in the foil packs.
  • Customize based on your personal preferences. Broccoli could be substituted for the cauliflower. If you are not worried about the recipe being keto friendly, you could add black beans and/or canned corn.

    3. Divide the 4 thin chicken breasts, bell peppers, and cauliflower equally between the 4 pieces of aluminum foil, placing them in the center. Drizzle the oil over the chicken breasts and vegetables. Then sprinkle the seasoning (about 1 ½ tsp per packet) evenly over the 4 foil packets as well. 
    4. Add 1 tbsp of the buffalo sauce to each foil packet, spreading it over the chicken. Sprinkle with the green onions.
    5. Fold the foil packets by bringing 2 sides together and folding them over, then closing the ends. Grill the packets for 25-30 minutes, or until the chicken reaches an internal temperature of 165 degrees. 
    6. Open the foil packets and add 1 tbsp of the remaining buffalo sauce to each packet, drizzling it over everything. Sprinkle with bleu cheese crumbles or drizzle with ranch dressing!

Notes

  • These taste SO good with ranch dressing. Although it’s optional, I highly recommend it. 
  • We recommend Frank’s buffalo sauce for these packets, it’s the best by far.
  • These are low-carb, but you can add corn and beans if desired!
  • Make sure to use heavy-duty aluminum foil, it doesn’t tear or rip as easily making it easier to use for foil packets.
  • I used my Traeger grill, heated to 400 degrees to cook these. It took 25 minutes for smaller chicken breasts, and up to 35 minutes for larger ones!

A lot of times recipes this rich and flavorful take all evening to make. But not this one! It only takes about 30 minutes, so you can easily make in any night of the week. It’s cheesy, garlicky, and loaded with protein … what more could you want?

Here’s everything you need to make this rich chicken dish. Head to the recipe card at the bottom of the page to see the exact amounts for each ingredient.

For the Chicken:

  • Chicken breasts – I like to use boneless, skinless breasts because they’re healthy, lean, and easily accessible. You could use boneless, skinless thighs instead, if you prefer.
  • Italian seasoning, Salt, Pepper – Always use freshly ground black pepper when possible. If you don’t have Italian seasoning, a blend of thyme, rosemary, basil, and oregano would be perfect.
  • Butter – Use unsalted butter for this recipe, then you can always add extra salt at the end when you’re ready to serve. This helps control the amount of sodium.

For the Garlic Parmesan Sauce

  • Butter – You want to use unsalted butter for the sauce, too. Again, this just helps control the sodium and saltiness.
  • Garlic – We love fresh garlic straight from the garden, but you can even opt for the pre-minced jar at the grocery store to save your time and effort if needed.
  • White wine and Heavy cream – Chicken broth (or your own Homemade Chicken Stock) works as a substitute for the wine if you prefer. There really isn’t an adequate substitute for heavy cream… The perfect texture and flavor provided is unmatched.
  • Parmesan cheese – For best results, grate your own parmesan cheese. However, pre-grated cheese works fine too.

What is Italian Seasoning?

Italian seasoning is a pretty common spice blend that you should be able to find at your local grocery store. It usually includes a mixture of dried basil, rosemary, thyme, marjoram, and oregano. If you don’t have any Italian seasoning you can just use those individual ingredients. 

How to Make Garlic Parmesan Chicken

This easy keto dinner comes together in 30 minutes. Here’s a step-by-step guide to show you how to make this simple yet impressive recipe.

Prep

Preheat the oven to 350 degrees F. Cut the chicken in half lengthwise and horizontally, as if you were butterflying it. Instead of stopping, cut straight through each chicken breast so you have two thin pieces from each breast.

Season & cook chicken

Pat the chicken dry and sprinkle each side with salt, pepper, and Italian seasoning. Heat up an oven-safe skillet over medium heat, then add butter. Once melted, add the chicken and sear until golden brown (about 2-3 minutes). Flip and brown the other side, then remove the meat from the pan.

Cook garlic & deglaze

With the chicken set aside, add more butter to the skillet, then the garlic. Saute until the garlic is fragrant, about 30 seconds. Don’t get distracted–Garlic burns very quickly if you’re not careful! Once the aroma is strong, pour the wine into the pan and use a wooden spoon or spatula to scrape up all the bits on the bottom of the skillet. Stir in all the flavor from those stuck-on pieces, bring the wine to a simmer, and allow it to reduce for 5-6 minutes.

Finish sauce

Add the heavy cream and parmesan to the pan, then stir until the cheese is fully melted and a smooth sauce has formed.

Bake chicken

Place the browned chicken back into the skillet and place it in the oven. Bake until the chicken is cooked all the way through (about 15 minutes). Serve immediately with a generous spoonful of sauce.

What to Serve it With

I recommend eating this creamy, cheesy chicken with some simple sides. Start with serving Instant Pot Artichokes with a butter dipping sauce as an appetizer, and maybe a bowl of Keto Dinner Rolls! Air Fryer Broccoli or Cauliflower keeps things simple and healthy while also giving perfectly crispy pieces to dip in the chicken’s sauce. Maybe serve it all atop of bed of Spaghetti Squash or Zoodles for a super filling, low-carb pasta night.

Here are some tricks for cooking this juicy keto chicken recipe. 

  • Get a meat thermometer. We’ve all had overcooked chicken, and it’s no good. But undercooked chicken is a lot worse! To make sure you don’t have either of those, I recommend using a meat thermometer. That way you can stop cooking the chicken as soon as it hits 165F. 
  • Let the meat rest. Most people know that you’re supposed to let steak rest. But you should also let your chicken rest. After the dish is done cooking, let it rest for 5-10 minutes before serving. That will allow the meat to reabsorb its juices so that it stays moist even when you cut into it. 
  • Use fresh garlic. It’s become popular lately to use pre-minced or pre-peeled garlic. This can definitely help you save time, but the quality is a lot worse. For a dish like this, where garlic is such a strong flavor, you really want to start with fresh garlic that hasn’t been peeled yet. You’ll get such a better taste.

Ingredients

For the Chicken:

  • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon unsalted butter

For the Garlic Parmesan Sauce:

  • 1 tablespoon unsalted butter
  • 8 cloves of garlic, smashed with the back of a knife and minced
  • 3/4 cup white wine (or chicken broth)
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 350F.
  2. Cut both chicken breasts lengthwise, the way you would if you were butterflying the meat. But slice it all the way through to turn each chicken breast into two thinner breasts.
  3. Sprinkle both sides of the meat with the salt, pepper, and Italian seasoning.
  4. Melt the butter in an oven-proof skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden. Remove the chicken from the pan and set aside.
  5. Melt the remaining butter and add the minced garlic. Sauté until fragrant, about 30 seconds.
  6. Add the white wine and scrap the pan well to deglaze. Bring the wine to a simmer, and reduce for 5-6 minutes.
  7. Stir in the heavy cream and parmesan until the cheese has melted and a creamy sauce forms.
  8. Place the chicken in the cream sauce, and put the skillet in the oven for 15 minutes, or until the chicken reaches an internal temperature of 165F.

I love to go out for a fancy meal. But sometimes it can be even better to just make one at home. This chicken cordon bleu recipe is my go-to when I want an upscale dinner at home. It looks and tastes like something you would splurge for at your favorite restaurant. But it’s surprisingly easy to make at home! Whether you’re having a date night or just want to eat well, you’ve got to try this recipe the next time you need a nice meal. 

Chicken cordon bleu is a popular European dish. It’s basically chicken that’s stuffed with ham and cheese, then breaded and cooked. What’s not to love about that? This recipe uses black forest ham and Swiss cheese, and they go together so well. I promise you that you’ll love this keto dinner! 

Why You’ll Love This Cheesy Keto Chicken

This is one of my favorite recipes to make. And it’s definitely one of my favorite recipes to eat! Here’s why I know you’ll be a big fan of it. 

  • So much flavor. This is one of the most flavorful recipes I know. Think of a ham and cheese sandwich, but then imagine the bread is made out of chicken. That’s basically this recipe! But the secret to this dish is the breading. It’s packed with herbs and spices that give the chicken a great kick. 
  • Impressive. If you ever need to impress someone, I recommend making them this dish. This is the kind of recipe that people won’t believe is homemade. Everything about this dish is restaurant quality, but it’s still easy to make at home.
  • Protein-packed. There are really only 3 main ingredients in this keto recipe: chicken, ham, and cheese. That’s about as full of protein as you can get!

  • Dijon mustard
  • Eggs
  • Almond flour – Almond flour is my go-to, but you can use any type of gluten-free flour.
  • Grated parmesan – You can use pre-grated parmesan or grate your own.
  • Italian seasoning
  • Garlic powder
  • Salt
  • Pepper – Be sure to use freshly-cracked black pepper.
  • Butter – You want to use unsalted butter.
  • Lemon – Lemon is an optional garnish.
  • Parsley – Parsley is also an optional garnish. 

What is Italian Seasoning?

Italian seasoning is a fairly common herb blend that you can find at most grocery stores. Each company has a different recipe, but it usually includes dried basil, rosemary, thyme, oregano, and marjoram. If you don’t have any Italian seasoning, you can replace it with those individual ingredients. 

How to Make Chicken Cordon Bleu

Here’s how to make this rich keto dinner. It’s surprisingly quick and easy! 

  • Cut the chicken. Cut your chicken breasts in half lengthwise, the way you would if you were butterflying the chicken.
  • Pound. Cover the chicken with plastic wrap and hit it with a mallet until it’s about ¼-inch thick. 
  • Assemble. Spread the mustard on top of the chicken, then add ham and cheese. 
  • Roll. Place each piece of chicken on a large square of plastic wrap. Roll the chicken like a log, as tight as you can make it. Hold it in place with the plastic wrap.
  • Chill. Put the rolled chicken breasts in the fridge for at least 1 hour.
  • Prep the breading. Put the eggs in one bowl and beat them until well combined. In a second bowl, add the almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir to combine. 
  • Bread the chicken. Remove the chicken from the fridge, and place it in the eggs until well covered. Then place them in the breading until well coated. 
  • Freeze. Put the breaded chicken on a plate or on a wire rack, and place them in the freezer. Leave them there for 15 minutes.
  • Turn on the oven. While the chicken is in the freezer, preheat your oven to 400F, and grease an oven-safe dish with melted butter. 
  • Bake. Remove the chicken from the freezer and place it in the baking dish. Put the dish in the oven and bake until the chicken has an internal temperature of 165F. This should take 25-30 minutes. Remove from the oven and serve!  

Tips and Tricks 

These are a few of my favorite tips for making the best chicken cordon bleu. 

  • Let it rest. Anytime you’re cooking meat, you want to let the meat rest before cutting into it. After removing the chicken from the oven, let it rest for at least 5 minutes, and ideally 10. This gives the chicken time to reabsorb its juices. If you cut into the cordon bleu immediately after removing it from the oven, all the juices will spill out. Then you’ll be left with dry chicken, which nobody wants. 
  • Mallet alternatives. If you don’t have a meat mallet, don’t worry! There are plenty of kitchen items you can use to pound the chicken breast flat. I like to use a small cast iron skillet or the back of a big wooden spoon. You can also use a rolling pin and simply roll the chicken until it’s flatter. 
  • Use the dry hand method. When breading your chicken, make sure to use the dry hand method. Use one of your hands for the egg mixture and the other hand for the breading mixture. That will keep your hands from getting unnecessarily messy and will make the breading stick better on the chicken.

Honestly, this chicken cordon bleu is a complete meal all by itself. But I never turn down the opportunity to make some good side dishes! Here are a few of my favorite sides to serve with this keto chicken.

Leftover chicken cordon bleu will last in the fridge for at least 3 days if you store it in an airtight container. To reheat, place it in a 350F oven for 10 minutes. You can also reheat the chicken in the microwave, but the breading will likely get soggy. 

Can This Recipe Be Frozen?

Yes, you can absolutely freeze this recipe. Store it in an airtight container and it will last in the freezer for up to 3 months. Thaw or defrost before reheating, or reheat straight from the freezer in a 350F oven for 15-20 minutes.

  3. Cut 4 12x12-inch squares of plastic wrap and place a chicken breast on each square. Roll one of the chicken breasts tightly, then secure it with plastic wrap. Repeat with the other breasts.
  4. Place the rolled chicken in the fridge to chill for 1 hour.
  5. While the chicken is in the fridge, set up the breading stations. Put the beaten eggs in one bowl, and the almond flour, parmesan, Italian seasoning, garlic powder, salt, and pepper in the other.
  6. Remove the chicken from the plastic wrap. Place it in the eggs until covered, then put it in the breading. Make sure the chicken is well coated.
  7. Put the breaded chicken in the freezer for 15 minutes to help the coating stay on the meat.
  8. While the chicken cools, preheat your oven to 400F and grease an oven-safe dish with melted butter.
  9. Put the chicken in the dish, and bake for 25-30 minutes, until the meat has an internal temperature of 165F.
