My family LOVES brownies–Seriously, all of our childhood friends knew our house as the “Brownies for Breakfast” place when we were growing up. Some Sunday mornings, I still wake up and wonder, “Where are the brownies?”

However, now that I’ve had more than a few years to discover new tastes, I’m realizing that there are some other options out there! Now these Lemon Blondies have found a place in my dessert-filled heart, too!

We keep the nice dense texture of a brownie but brighten the whole thing up with a citrusy punch of lemon! To take it to the next level, I added lemon icing, too!

Not only is this twist delicious, it’s also great for all kinds of diets. There’s no gluten and no refined sugar, so you can just focus on how great they taste instead of what they may be doing to your insides! These are also keto and low-carb, so feel free to indulge a little! I won’t tell if you choose to have them for breakfast, either!

Ingredients for Lemon Blondies

This is just a quick overview of the ingredients you will need for this recipe. The complete recipe and instructions are below, just keep scrolling. 

  • Butter: unsalted, softened butter
  • Granular Monkfruit Sweetener: Granular Swerve also works.
  • Eggs: room temperature eggs are ideal for this recipe. 
  • Almond Flour and Coconut Flour: you need both flours to get the right rise and consistency for this recipe.
  • Lemon juice and lemon zest: this is about 2 medium size fresh lemons
  • Baking powder and Salt: provides lift for the blondies. 
  • Additional ingredients for the glaze: Powdered Monkfruit Sweetener, cream cheese, almond milk or heavy cream, vanilla extract.

How do you make Keto Blondies?

To make this low carb blondie dessert, you’ll start out by using a handheld electric mixer to cream together the unsalted butter, and granular sweetener until creamy. Then, mix in the eggs, one at a time until smooth.

In another bowl mix the almond flour, coconut flour, baking powder, salt and combine. Add the flour mixture to the butter mixture and beat with the electric mixture until combined. Add in the lemon juice and lemon zest.

Prepare a 8×8 baking pan with parchment paper and lightly spray with cooking spray. Spoon the batter into the pan and bake at 350 degrees F for approximately 25 minutes or until a toothpick placed in the center comes out clean.

Allow the blondies to cool completely and add the keto lemon glaze (recipe below).

Tips and Tricks for the Best Gluten Free Blondies

  • Line your pan with aluminum foil or parchment paper and leaving some overhang. This will make it much easier to remove the blondies from the pan. It also makes clean up a breeze!
  • Make sure the butter is softened before blending.
  • Be sure to use the correct size pan. Using anything larger than an 8×8 pan will result in very thin bars. 
  • My personal preference is to enjoy these bars at room temp. Remove the bars from the fridge 30 minutes before serving to allow the butter in the blondies to soften slightly for the best taste and texture.

Yes, these easy gluten free blondies will freeze well for up to 3 months if stored in an air tight container in the freezer. Thaw overnight in the refrigerator and bring to room temperature before serving.

Ingredients

Lemon Blondie

  • 8 tablespoons butter, softened
  • 1 cup granular monkfruit sweetener
  • 2 large eggs, room temperature
  • 1 cup almond flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons lemon juice
  • 2 tablespoons lemon zest

Lemon Frosting

  • 1 cup confectioners monkfruit sweetener
  • 3 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons almond milk or heavy cream (as needed to thin)

Instructions

    1. Preheat oven to 350 degrees F. Line an 8x8 baking pan with parchment paper and lightly spray with cooking oil. Set aside.
    2. In a large mixing bowl beat the softened butter, and granular sweetener with an electric mixer until creamy and well incorporated.
    3. Beat the eggs into the sugar mixture until completely combined.
    4. In another bowl combine the almond flour, coconut flour, baking powder and salt.
    5. Spoon the flour mixture into the sugar mixture, beating with an electric mixer until smooth.
    6. Stir in the lemon zest and lemon juice.
    7. Spoon batter into the prepared baking pan. Bake 22-26 minutes or until a toothpick inserted in the center comes out clean.
    8. Allow the blondies to cool completely before frosting.

    To make the frosting: Combine the sweetener, cream cheese, lemon juice, lemon zest, vanilla and 1 tablespoon of the milk or heavy cream in a food processor or beat with an electric mixture until smooth and creamy. Add 1 tablespoon additional liquid if needed until it reaches your desired consistency.

Notes

Garnish with toasted, unsweetened coconut flakes or poppy seeds if desired.

Have you heard of a chaffle? These are low carb keto friendly waffles that are usually made from shredded cheese and eggs, and sometimes the addition of coconut or almond flour. Actually, I can’t believe I haven’t posted one before because I make them all of the time!

Recently, I began thinking ahead to Spring and those old favorites I know I will be craving and the first thing that came to mind was a Strawberry Shortcake! That is when I knew I wanted to make a keto friendly waffle that wasn’t cheese based so that I could create low carb Strawberry Shortcake Waffles. 

These almond flour keto waffles fit the bill perfectly. One recipe makes two small waffles you can enjoy anyway you would like! They would be great with butter and keto friendly syrup, or like this with strawberries and whipped cream!

What ingredients do you need to make Keto Waffles?

The great thing about this recipe is that just need 7 pretty basic ingredients! They are:

How do you make Keto Strawberry Shortcake Waffles?

For this recipe I use my favorite tiny waffle maker, it makes exactly 2 perfectly sized waffles. The first step is to plug in your waffle maker and it is ready to go when the light goes off. Though this waffle maker does have a nonstick coating I always spray a very light coat of cooking spray just to be careful.

Next, in a small bowl combine the almond flour, egg, sweetener, heavy cream and baking powder and whisk until smooth. Carefully pour half of the mixture into the waffle maker. It will take 2-3 minutes and the waffle maker will “pop” up a bit when the waffle has expanded and risen. Remove the first waffle and set aside. Repeat the steps for the second waffle.

The final step is to assemble the strawberry shortcake stacks! Place one waffle on the bottom top with 1 1/2 thinly sliced strawberries and whipped cream and repeat for the second layer. 

Lastly, you can dust a bit of powdered keto friendly sweetener if you like to make your waffles extra decadent!

I’ve been following a keto diet for over a year now. For the most part, I rarely crave carbs but every once in while those tricky cravings sneak back and I need something that reminds me of my “carbful” days.

Most recently, my cravings for a good old ham and biscuit were absolutely out of control! Fortunately, I created a keto version that totally hit the spot!

These Keto Ham and Cheese Biscuits are great as a quick breakfast, amazing little sliders, or the perfect thing to serve with soup!

These Keto Ham and Cheese Biscuits are the perfect easy keto breakfast! Each soft, fluffy biscuit is loaded with cheese and ham and has less than 2 net carbs each!

Ingredients for Keto Ham and Cheese Biscuits

To make these cheesy low-carb biscuits, you’ll need the following simple ingredients: 

  • Cream cheese
  • Shredded cheddar cheese
  • Eggs
  • Almond flour
  • Baking powder
  • Salt
  • Heavy cream
  • Butter
  • Chopped ham

Can the Almond Flour Be Substituted? 

No, this almond flour biscuit recipe must be made as written. Almond flour is the best keto flour I’ve found for this recipe, so that’s what I recommend. 

These Keto Ham and Cheese Biscuits are the perfect easy keto breakfast! Each soft, fluffy biscuit is loaded with cheese and ham and has less than 2 net carbs each!

How to Make Ham and Cheese Biscuits 

This recipe is based off of my Keto Cheddar Garlic Biscuits that I shared on my other website, Maebells. That version tastes insanely like Red Lobster Cheddar Bay Biscuits and only has two net carbs each!

These Ham and Cheese Biscuits have the same cheesy base that contains a cream cheese, cheddar and egg base. This mixture makes the perfect soft, fluffy, cheesy biscuits.

Here’s an overview of how these cheesy keto almond flour biscuits come together: 

  1. Once the cream cheese, cheddar and eggs have been mixed, until smooth add the almond flour, baking powder, salt, butter and heavy cream.
  2. Next, fold in the chopped ham. The dough will be quite thick and you may be tempted to add more moisture, but don’t.
  3. After you’ve mixed the batter, chill in the fridge for 10 minutes (otherwise they will spread out too much as they bake).
  4. Use a small cookie or ice cream scoop to scoop them out onto a greased or lined baking sheet. Lightly press the dough down to flatten it slightly.
  5. Bake for 13-15 minutes until golden brown. 

How to Store Keto Biscuits 

After baking, store these low-carb biscuits in the fridge. Since the recipe does make 22, I like to freeze about half of my batch for quick sandwiches or a side dish.

They freeze beautifully, so just store in an airtight freezer bag and reheat in 20-second increments until warm.

  • I use a SMALL cookie/ice cream scoop to get 22 biscuits. If you want to use a large/full size scoop, you will get approximately 12 biscuits with about 4 net carbs each. The baking time is 16-18 minutes for the large biscuits.

    2. In a mixing bowl combine the softened cream cheese, cheddar cheese and eggs. Stir until cream cheese is smooth with no clumps.
    3. Add almond flour, baking powder, salt, heavy cream and melted butter.
      Stir until combined.
    4. Fold in the chopped ham. Do not overmix or biscuits will be tough.
    5. Chill the dough 10-15 minutes.
    6. Using a small cookie or ice cream scoop spoon the biscuits out onto a greased or lined baking sheet. Lightly press the dough down.
    7. Bake 13-15 minutes until golden. Brush with melted butter.

This is a very easy sausage balls recipe. Here’s a look at how it’s made: 

  1. Combine all of the ingredients until well incorporated. 
  2. Lightly spray a large baking sheet or line with silicone baking sheets
  3. Roll the sausage balls into golf ball-sizes balls. 
  4. Bake at 375ºF until done. 

How Long to Cook Sausage Balls? 

These low-carb sausage balls need to cook for roughly 20 to 24 minutes at 375ºF. 

Can This Recipe Be Prepared in Advance? 

Yes, you can mix together the sausage mixture, form the balls, and seal them in an airtight container until you’re ready to bake them off. 

Or, you can prepare the entire recipe as written and either refrigerate or freeze the sausage balls until ready to eat.

Ingredients

  • 1 pound breakfast sausage
  • 4 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine all of the ingredients until well incorporated. I find this easiest in my stand mixer.
  3. Lightly spray a large baking sheet or line with silicone baking sheets
  4. Tightly roll the sausage balls into golf ball size balls. I had 25 each.
  5. Bake 20-24 minutes.

Notes

Mix up the flavors by using spicy sausage or pepper jack cheese!

These crustless quiche muffins are perfect for busy mornings or an easy protein-packed lunch. This recipe consists of four real ingredients (the extras being salt, pepper and baking powder).

The great part is that the crustless ham and cheese quiche cups are not only easy to prepare, but they’re also budget friendly. This is the kind of meal you can double or triple and still not break the bank. 

These crustless ham quiche muffins are similar to a crustless quiche in many ways. They have a light, fluffy egg batter but they are absolutely packed with ham and cheese to make them extra filling.

There is no crust and no flour so they are ultra low in carbs, which makes them a great keto breakfast option. The exact nutritional value that I calculated is about 1 net carbs per muffin, so you can enjoy more than one!

Ingredients in Crustless Ham and Cheese Quiche Cups 

For these keto crustless quiche cups, you’ll need just four real ingredients (plus some seasonings): 

  • Eggs
  • Heavy cream
  • Smoked ham
  • Shredded cheese (any kind) 
  • Salt
  • Baking powder

Can I Add Other Mix-Ins? 

Yes! You can add chopped veggies, crumbled cooked bacon, and any other mix-ins you’d like. 

How to Make Crustless Ham and Cheese Quiche Cups 

If you’ve never made quiche cups before, you’re in for a treat! They’re very simple to prepare: 

  1. In a medium size mixing bowl, combine the eggs, cream, baking powder, salt and pepper.
  2. Stir in the chopped ham and shredded cheese.
  3. Spoon the mixture using a 1/4 cup measuring cup into a greased muffin tin.
  4. Bake until the muffins have set and a toothpick comes out clean.

How to Store Crustless Quiche Cups 

These convenient no-crust ham and cheese quiche cups reheat very well. They are great for meal prepping to make grab-and-go breakfasts easier.

Simply store in the refrigerator in an air-tight container up to 4-5 days. You can also freeze these and pull them out individually over the course of 4-6 months. To protect them from freezer burn, I wrap each quiche muffin multiple times in plastic wrap, then toss into a freezer bag (squeezing all the air out). I reheat in the microwave in 20-second increments until warm. 

Tips for Making Crustless Quiche Muffins

  • I highly recommend using a silicone muffin pan because it will prevent the mixture from sticking and the quiche muffins will release very easily.
  • You can use any kind of shredded cheese you’d like in this recipe. 
  • Try different meats if you prefer! Leftover shredded chicken, holiday turkey or ham, or even pulled pork would create interesting, flavorful variations!
  • Crustless quiche cups freeze well, so consider making an extra batch!

  • Eggs, large: You can use egg replacements if you’re egg-free. Also, if you prefer to only use egg whites, it is okay to replace with only 2 egg whites.
  • Cream cheese: Full- or low-fat cream cheese can be used without a significant change in the texture or flavor. Make sure you allow it to soften to room temperature before using.
  • Bacon: You could also use candied bacon or another meat if you prefer. Store-bought bacon bits can be used if you are short on time and looking for a quick, convenient option.
  • Shredded cheese: We recommend to use a mixture of pepper jack and cheddar cheese because of the sharp and slightly spicy flavor. You could use others such as havarti, Swiss, mozzarella, or another blend based on your personal preference. Easy-melting cheese works best so avoid crumbly options like blue cheese or feta.
  • Coconut flour (or almond flour):  Coconut flour creates fluffy, light muffins. The muffins will be denser and less fluffy if using almond flour. We have used both and each version will create delicious, gluten-free, and low-carb, so choose based on your own personal preferences.
  • Baking powder: Adds lift and structure, making these keto egg muffins light and fluffy.

This grab-and-go breakfast comes together easily and makes a pretty big batch without a ton of work! Here’s a look at how the low-carb breakfast muffins come together: 

Mix the ingredients

Preheat oven to 350 degrees F. Then mix all ingredients in a medium-sized bowl. After well combined, let the mixture sit for 5 minutes so that the coconut flour can absorb the moisture.

Bake

Spray a mini muffin pan and fill each cup until each is about 3/4 full. Bake until golden brown and cooked through. Let cool slightly before popping out of the pan.

  • Freezer Storage: They can be stored in an airtight container for up to 3 months in the freezer.

Do I Have to Make Muffins? 

No, you can bake the egg mixture in a 9-inch baking pan instead. Note that the bake time may need to be increased. 

Tips for Making the Best Bacon Egg Muffin Cups

  • These bacon, egg, and cheese muffins freeze well and are easily customizable. Make a batch for each member of the household so anyone can pull one out to tide them over until lunch time!
  • Use a silicone muffin tray. A regular muffin tin will work but a silicone muffin tray is easier to clean up which will save you even more time!
  • Use any cheese you’d like to make this recipe such as Swiss, cheddar, gouda, or Colby jack. Pepper jack is great if you food with a little heat! Likewise, you can use any kind of bacon. 
  • If you’re out of bacon, feel free to swap in browned, crumbled sausage. Diced ham also works well.

    Allow the mixture to sit for 5 minutes for the coconut flour to absorb some of the moisture.

    Bake 15-18 minutes until golden brown and cooked through.
