Today I’m sharing a new spin on a classic recipe! We all know and love traditional sausage balls. They are easy breakfast food, and are a staple at most parties! This delicious version features spicy chorizo, cool cream cheese and shredded cheddar cheese! The combination is something all of your party guests will be talking about! 

As a bonus, this recipe is naturally low carb and keto-friendly. It contains just five simple ingredients, can be made ahead of time and freezes beautifully! This is the last sausage ball recipe you will ever need! 

Ingredients in Cream Cheese Sausage Balls

These Chorizo Sausage Balls have all of the qualities you love about traditional sausage balls. They are cheesy, savory and so satisfying! To make this recipe you will need: 

  • Ground Chorizo Sausage: you can of course, use ground breakfast or Italian sausage if you wish, but the chorizo is a new spicy spin on this classic dish! 
  • Cream cheese: we don’t use a lot of cream cheese in this recipe, just enough to compliment the chorizo and make them moist and tender. 
  • Shredded cheddar cheese: Another grated cheese such as gruyere will also work. 
  • Almond Flour and Baking powder: this recipe is low carb, gluten free and keto-friendly!

Yes! Have you ever had a traditional Bisquick Sausage Ball that was dry and crumbly? That will never happen with these easy sausage balls. The combination of cream cheese and sausage is unbeatable. The flavors meld together perfectly and they come out moist and delicious every single time! 

How to Make Sausage Balls

This is a very cream cheese sausage ball recipe. You only need to follow three basic steps:

  1. Combine all of the ingredients until well incorporated. 
  2. Roll the sausage balls into golf ball-sizes balls. 
  3. Bake at 375ºF until done.

How Long to Cook Sausage Balls? 

The cooking time will depend on how large you make them, but for golf ball size sausage balls they will need to cook for roughly 20 to 24 minutes at 375ºF. You will know they are done when they are browned and have reached an internal temperature of 160 degrees F. 

Do I have to use Chorizo?

No, this recipe can be made with regular mild or spicy breakfast sausage. It can also be prepared with ground Italian sausage for a fun pizza version. This chorizo just provides a new and exciting flavor that is great for parties (and amazing dipped in queso or salsa)!

Can Sausage Balls be prepared in advance? 

Yes, you can mix together the chorizo mixture, form the balls, and seal them in an airtight container until you’re ready to bake. Alternatively, you can prepare the entire recipe as written and either refrigerate or freeze the sausage balls until ready to eat. 

How to Store Cream Cheese Sausage Balls?

After cooking allow the sausage balls to cool completely and store in the fridge in an airtight container up to 5 days. These easy keto sausage balls are great warm or cold so they are great for a quick and easy lunch!

Can I freeze Sausage Balls?

Of course, just prepare according to the directions and allow them to cool completely and place in a freezer bag. When ready to eat remove the sausage balls from the bag and microwave in 30 second increments until warmed through.

Tips for Making Sausage Balls

  • Because these use chorizo, there will be a lot of grease. For easy cleanup, you can line your pan with aluminum foil instead of just parchment paper or a silicone liner. After cooking, you may want to let them cool on paper towels to reduce the amount of grease as well.
  • Switch up the flavors for your preferences! You could use a Mexican style blend of shredded cheeses, spicy pepper jack, mozzarella… Whatever you prefer.
  • If changing the protein, you might need to increase the cream cheese to 4 ounces instead of 3 to make up for the loss of fat that the chorizo brings to the recipe.

Ingredients

  • 1 pound ground chorizo
  • 3 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder

Instructions

    1. Preheat oven to 375 degrees.
    2. Combine all of the ingredients until well incorporated. I find this easiest in my stand mixer.
    3. Lightly spray a large baking sheet or line with silicone baking sheets
    4. Roll the sausage balls into golf ball size balls. I had 25 each. Bake 20-24 minutes.

Notes

Why does this recipe use less cream cheese than your other sausage ball recipe?

Chorizo is very greasy so the amount of cream cheese has been reduced with this protein to account for the extra fat in the chorizo.

What do I need for keto sides for Christmas dinner?

If you haven’t been cooking while keto for long, don’t worry- I can help! There’s a few different items that you’ll need to be sure you have stocked before you head off into your keto cooking journey.

I recommend this almond flour and this coconut flour. Both of these flours have a much lower carb count than traditional flour, but they also have very different absorption rates. I wouldn’t recommend substituting one for the other unless the recipe says it’s okay. If a recipe needs to be sweetened, I usually use monkfruit or Swerve. These do not impact your blood sugar, are lower in calories, and are keto- and diabetic-friendly! 

What are some good sides for Christmas dinner?

Many people have a very “Thanksgiving-esque” dinner for Christmas, but not all people! I know many families go for special lobster and crab leg dinners while some prefer steaks, beef roasts, or stuffed chickens! The most important thing is that it fits your family’s tastes and preferences. 

I like to load up on a lot of vegetables, but nothing plain and boring! Roasted vegetables like brussels sprouts, asparagus, and mushrooms are simple yet can be easily punched up with seasonings, butter, and cheese! What do I need for easy Keto Christmas Recipes?

It’s always best to do a little prep before a big holiday cooking spree- so check your cupboard and refresh as necessary! I always recommend that people are sure to read recipes thoroughly so you’re sure that you’re not missing any ingredients.

If you’re new to cooking keto, there are a few different items you’ll need to become familiar with. One of them is flour- to keep your baking keto friendly, use almond flour or coconut flour. There are also several different types of sugar substitutes you’ll need- I like this Swerve sweetener. There’s also a great powdered sugar substitute as well as a brown sugar substitute. Today I am sharing one of my favorite, super easy, go-to recipes! These Pepperoni Pizza Chaffles are a cinch to make. They require very basic ingredients you probably already have on hand, minimal effort and only one bowl for clean up! We enjoy these as an effortless lunch option, but they make a great appetizer too! Simply quarter the chaffles and serve with warm marinara for a low carb, crowd pleasing dish!

What is a Keto Chaffle?

Chaffles are a keto staple for many! While the term chaffle may be new to some, most of you probably know it as a “cheese waffle.” The term chaffle came to be because this is a waffle that is made from a cheese base. Most chaffle recipes contain some variety of egg, cheese and a low carb flour, such as coconut or almond flour.

The mixture may sound off, but I can assure you, they make perfectly crisp waffles on the outside and delightfully fluffy waffles on the inside!

How do you make a Pepperoni Chaffle?

These low carb pizza waffles are so simple to make. Simply beat the eggs, then fold in the almond flour, baking powder, seasoning, shredded mozzarella cheese and pepperoni.

Add the batter to a mini waffle maker, be careful not to overfill, and cook 2-3 minutes until you no longer see any steam coming from the machine. Enjoy hot from the waffle maker with warm, low carb marinara sauce!

What waffle maker should I use for chaffles?

You can make a chaffle with any waffle maker you have. However, I do love this handy little Ms. Dash waffle maker, they are the perfect size. This is the machine I used for this recipe and it makes 5 perfect waffles.

This size is also great as a bread substitute, you can layer your favorite sandwich fillings in between two chaffles and enjoy a quick and easy low carb sandwich!

Are these good for Meal Prep?

These cheese waffles do reheat well. You can microwave until warmed through, reheat in a toaster or air fryer, or enjoy cold! I like to serve these with low carb marinara for dipping and an Italian side salad that consists of greens, parmesan, a few tomatoes, pepperoncini peppers and Italian dressing.
