Close your eyes, take a sip of this sugar-free, skinny mojito, and pretend you’re in the Caribbean! This perfect poolside sipper is low-carb and made easily with just 5 ingredients. It goes with a variety of cuisines and meals, doesn’t taste too strongly of alcohol, and is perfect for your next party!
Unlike your classic mojito, I don’t use sugar in my simple syrup–I use the same keto simple syrup as I did in the Keto Margarita recipe. This homemade sugar-free simple syrup is made from liquid monk fruit sweetener and water! This two-ingredient syrup requires no cooling/dissolving time and is perfect in cold beverages. You can easily adjust for your preferences by adding a couple extra drops in your drink if you’d like, too!
Ingredients for Skinny Mojito

- Light rum: White or silver, I used 80 proof.
- Lime juice: I prefer freshly squeezed, but bottled works just as well (just make sure it’s unsweetened).
- Mint leaves: Some for muddling, some for garnish
- Keto simple syrup: A mixture of monk fruit liquid sweetener and water
- Lime sparkling water: I liked the extra flavor this added, but plain sparkling water will work fine, too.
How to make a Keto Mojito
This keto cocktail comes together easily! In a shaker, add 4-5 mint leaves and your simple syrup. Muddle the two for a minute, until the leaves have infused the syrup with their minty oil. Fill the shaker with ice, then pour in rum and lime juice.
Shake vigorously until very cold, then strain into a highball glass filled with ice. Top with lime sparkling water and garnish with a lime slice and mint crown.
If you prefer a strong mint flavor, add additional mint leaves to the glass before pouring.
Homemade Sugar Free Simple Syrup
Simple syrup is usually made by dissolving sugar in water and creating a syrup. To avoid all the carbs in the classic cocktail staple, this keto simple syrup uses Now Monk Fruit Liquid Sweetener. Monk fruit is much, much sweeter than sugar, so we’re able to use a small amount–Just 1 tablespoon per 1 cup of water.
Different brands of liquid monk fruit may have varying levels of sweetness. If using a different brand, it’s best to start with maybe 1/2 tablespoon of sweetener per cup of water, then add until you reach an appropriate level of sweetness. Some brands may require less, some brands may require more.
Can I use Swerve or Erythritol for Keto Simple Syrup?
While erythritol has a lot of great uses, it unfortunately does not dissolve in a cold beverage. Even if you try to dissolve it in boiling water, it begins to crystallize as soon as the syrup starts to cool off. This leads to inconsistent taste and a gritty texture in your cocktails, so I would not recommend using Swerve or any sweeteners with erythritol in your simple syrup.
If you add a pinch of xanthan gum to your hot water with erythritol, this should prevent the crystallization process, making it possible to use as a simple syrup. I prefer using pure liquid monk fruit for the ease and taste, though.
Can I make sugar free simple syrup ahead of time?
Yes! This simple syrup with liquid monk fruit stores easily in the fridge for weeks. Mix up a batch, store in an air-tight bottle or jar, and bring it out for happy hour whenever you’d like. Shake before using to make sure you get consistent sweetness in every drink.
What to serve with Keto Mojitos
A refreshing rum drink like this pairs well with other “light” dishes… Think fish, chicken, and fresh veggie options.
- Pool side snacks: Sliced cucumbers and peppers with Keto Tzatziki, toasted & cut low-carb tortillas served with Roasted Tomatillo Salsa or Avocado Bacon Dip.
- Brunch ideas: A Charcuterie Board with Marinated Mozzarella and Blackberry Brie Bites would be incredibly easy, hit a lot of different flavors, and complement the rum and lime perfectly.
- Seafood dinner: Bacon-Wrapped Scallops, the BEST Keto Crab Cakes, Shrimp Fajitas, or this Parmesan Tilapia and Asparagus would all make great main entrees with mojitos.
- Chicken dinner: Bacon-Wrapped Chicken with Avocado Salsa, Keto Chicken Wings, Jalapeno Lime Chicken, or Sheet Pan Fajitas would all have a great bit of spice to balance and complement the lime and mint in the mojito.

Ingredients
- 2 ounces rum
- 4-5 mint leaves (plus more for garnish)
- 1/2 ounce keto simple syrup (see notes for recipe)
- 3/4 ounce lime juice
- 2-3 ounces lime sparkling water
Instructions
- In a shaker, add 4-5 mint leaves and the simple syrup, then muddle together.
- Add ice, lime juice, and rum, then shake.
- Strain over a highball glass full of ice, then top with lime sparkling water.
- Garnish with a slice of lime and additional mint leaves.
Notes
