What is Zuppa Toscana? 

Zuppa Toscana, which can be loosely translated as Tuscan Soup, is known to many as “Olive Garden Soup.” This hearty, comforting soup is beloved by many because of its unique combination of flavors. However, this soup is actually an Italian classic that originated in Tuscany. This soup features sausage, bacon, kale, onion, and garlic in a creamy broth. 

Today, I am sharing a shortcut recipe that is made in an Instant Pot. It only takes 5 minutes of prep time and 5 minutes of pressure cooking time! As a bonus, this recipe is low-carb and keto-friendly by making one clever substitution without sacrificing its incredible taste! 

Ingredients for Keto Zuppa Toscana

As always, this is a quick overview of the ingredients you need for this low-carb soup recipe. For the complete recipe, just keep scrolling. 

  • Meat: Ground Italian Pork Sausage and Bacon (you could use turkey sausage if looking to reduce fat)
  • Vegetables: onion, garlic, turnips, kale
  • Spices: onion powder, garlic powder, salt and pepper
  • Liquids: Chicken broth, heavy cream (you can make this recipe dairy-free by subbing coconut milk for the heavy cream)
  • Optional Ingredients: shredded parmesan cheese or Asiago are highly recommended! Spinach is another common addition.

How to make Zuppa Toscana in an Instant Pot?

  • Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon, remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
  • Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
  • Add the spices, cubed turnip and broth. Secure the lid and pressure cook for 5 minutes. Allow it to naturally release pressure for 10 minutes. 
  • Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
  • Stir in the cooked, crumbled bacon and parmesan if desired, just before serving. 

How do you make Keto Zuppa Toscana?

This recipe is very easy to make keto. Instead of Russet potatoes, we use peeled, cubed turnips. Hear me out, turnips have a very similar consistency to potatoes when cooked in a soup like this. This is the same method I used for my Keto Beef Stew

When I served this my family members did not even realize these were turnips, so give it a shot! It really is a great low carb alternative for potatoes. 

What other low-carb substitutes can you use instead of potatoes?

While I love turnips, there are other keto variations! If you don’t have turnips but do have radishes available, I have read that those make great replacements, though I haven’t used them in this recipe. Cauliflower florets are another good option. I love Keto Roasted Radishes instead of roasted potatoes, and these Keto Fries are made with rutabaga. It makes sense that these would work as replacements in soup, too!

Tips for the Best Low Carb Sausage and Kale Soup

  • Make sure your ingredients are in bite size chunks for the best results. For example, large cubes of turnip or long ribbons of kale will be hard to enjoy with a spoon. 
  • Brown and break up the sausage well so there are no big chunks. 
  • Do not add the kale or heavy cream until after the pressure cooking cycle. 
  • For a little more heat, try adding some red pepper flakes.

What should I serve with Zuppa Toscana?

I love to have a whole Italian night when I serve this Instant Pot Zuppa Toscana! This Keto Antipasto Salad brings in beautiful Italian flavors without even needing to cook. Ingredients

  • 4 slices bacon, cut into small pieces
  • 2 pounds ground Italian sausage
  • 4 cloves of garlic, minced
  • 1/2 cup white onion, chopped
  • 2 cups turnip, peeled and cubed
  • 32 ounces chicken or vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 cups of kale, chopped very finely, tough stems removed
  • 1 cup heavy cream

Instructions

    1. Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon.

How do I make tender pork chops?

This easy keto dinner recipe comes together in only 4 easy steps!

  1. Add your pork chops and ranch seasoning to a bag and shake to coat. Turn the Instant Pot to the saute function and add the olive oil and pork chops. Sear for 2-3 minutes on each side and remove.
  2. Place the butter, garlic and onion inside the Instant Pot. Saute until onions are soft. Add the beef broth and deglaze the bottom of the pan. Stir in the Worcestershire sauce and mustard and add the pork chops back to the Instant Pot.
  3. Cook for 6 minutes and allow the Instant Pot to release the pressure for 10 minutes.
  4. Remove the pork and allow the gravy to cool a little, then stir in the sour cream. If you want the gravy to be thicker, add your thickening agent here. Add the pork back to the sauce and serve.

Tips for the best Instant Pot Pork

  • If you are wanting your gravy to be thicker, there are two different thickening agents you can use. You can use corn starch, but if you are strict keto, you can also use xantham gum.
  • Do not release the pressure inside of the pressure cooker- allow the Instant Pot to do so.
  • Be sure to scrape the bottom of the pan when you are adding in your beef broth.
  • You do not have to thicken the gravy- it’s totally optional!

How to Store and Reheat Sour Cream Pork Chops

To store this Instant Pot Pork, keep in a plastic or glass container with an airtight lid and store in the fridge. These pork chops will stay fresh for up to four days. To reheat, microwave in 30 second increments until it’s warm enough for you.

I served these with Keto Mashed Cauliflower and steamed broccoli and it was fantastic! I also think this meal would be delicious with a Simple Arugula Salad or a Wedge Salad. These Instant Pot pork chops are so easy to make, and take less than half an hour. They're packed with flavor from ranch seasoning and Worcestire sauce, and they're tender and juicy.

Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 1 tablespoon olive oil
  • 4 (2-inch thick) pork chops
  • 1 (1-ounce) package Hidden Valley Ranch seasoning
  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 2 teaspoons garlic, minced
  • 1 cup beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1/2 cup sour cream

Instructions

  1. Place the pork chops and ranch seasoning in a large plastic bag. Seal the bag and shake to coat.
  2. Turn on the sauté function on the Instant Pot. Add the olive oil and carefully place the pork chops in the base of the pressure cooker. If there is any seasoning left in the bag then sprinkle it over the chops. Allow the chops to sear 2-3 minutes on each side until golden brown. Remove the prok from the pressure cooker.
  3. Add the butter, garlic and onion. Sauté until the onions are soft, then add the beef broth to deglaze the pan. Be sure to scrape up all the little brown bits that have stuck to the bottom of the Instant Pot.
  4. Stir in the Worcestershire sauce and mustard. Add the pork chops back to the Instant Pot.
  5. Close the lid and and set the cook time to 6 minutes. When the cooking cycle has ended allow the machine to manually release the pressure for 10 minutes.
  6. Remove the pork chops from the Instant Pot. Let the gravy to cool slightly so it doesn't curdle, then add the sour cream and stir until smooth.
  7. If you wish to thicken the sauce you can use corn starch (if not keto) or xanthan gun. See notes below.
  8. Add pork chops back to sauce and serve.

Notes

  • If you want to thicken the sauce, then turn the Instant Pot onto the sauté setting after you've added the sour cream. Add 1/2-1 teaspoon of xanthan gum or, if you're not keto, a combination of 1 tablespoon water and 1 tablespoon cornstarch stirred together. Cook until the sauce is the desired thickness, then turn off the Instant Pot and add the pork chops.
  • Store leftover pork in an an airtight container in the fridge for 4 days, or in the freezer for 3 months.
  • Reheat in the microwave in 30-second increments, or in a 350F oven for 10 minutes.

How to cook a Boston Butt

You can make this easy pulled pork recipe with only 3 easy steps!

  1. Combine the spices. Rub over the trimmed meat. Set in Instant Pot the saute function and add olive oil. Sear the pork on each side and remove.
  2. Add the vegetables to the Instant Pot and saute. Add the tomatoes and wine and scrape the bottom of the pan. Add the pork back to the Instant Pot and pressure cook for 15 minutes per pound- I cooked mine for 60 minutes, since I had a 4 pound Boston Butt.
  3. Allow the machine to manually release the pressure for 15 minutes. Shred the pork and drizzle with the leftover juice. Broil until the ends are crispy, add salt and pepper and serve!

This keto pork recipe is perfect for meal prepping! Since there is a large bit of fat retained in the meat, it will not dry out easily, which means it can be warmed without getting too dry. You can divide your meat into individual portions, so when you’re ready to warm it you already have it separated. For the Tomato Sauce

  • 1 1/2 cup chopped onion
  • 1 1/2 cup chopped celery
  • 2 whole heads of garlic
  • 1 (15 ounce) can of crushed tomatoes
  • 1 cup dry white wine
  • 1/4 cup pepperocini peppers

Instructions

  1. Combine the spices and set aside. Trim the fat from the pork and rub the spices over the meat. Turn the saute function on on your Instant Pot and add enough olive oil to lightly coat the bottom of the skillet. Sear the pork on each side until golden brown. Remove from the Instant Pot and set aside.
  2. Add the onion, celery and garlic to the Instant Pot. Saute for 2-3 minutes. Next, add the tomatoes and wine. Scrape the bottom to deglaze the pan.
  3. Add your pork back to the Instant Pot and secure the lid. Pressure cook 15 minutes per pound (60 minutes for a 4 pound butt).
  4. When the cooking has ended, let the machine manually release pressure for 15 minutes.
  5. Shred your pork, drizzle with a little bit of the juice and broil until the ends are crispy, but be sure to watch closely. Add salt and pepper to taste.

Notes

You can use the leftover juice from the Instant Pot as a marinara sauce. Just blend with an immersion blender.

Talk about an appliance that’s pulling its weight. So when we were craving Mexican the other day, I knew I didn’t want to heat up the house by using the stove or oven. So I broke out my trusty slow cooker and made this Crock Pot Salsa Chicken!

You sure can! For the Instant Pot, add all of your ingredients and cook on high for 12 minutes. Allow the pressure to naturally release for 10 minutes before shredding.

How long to cook chicken breasts in crock pot

This depends on what you put the temperature setting to. If you’re starting this recipe in the morning for dinner that night, I would cook for 8 hours on the low setting. If you don’t have as much time, set your crock pot to high and cook for 4 hours.

  • 2 pounds chicken breast
  • 1 cup onion, chopped
  • 2 minced garlic cloves
  • 1 (1 ounce) package taco seasoning
  • 1 cup enchilada sauce

Instructions

  1. Spray the bottom of a slow cooker with cooking oil. Place the chicken, onion, garlic, taco seasoning, enchilada sauce and salsa in a slow cooker. Place the lid on the slow cooker and cook on low for up to 8 hours, or high for 4 hours.
  2. When cooked through, remove the chicken from the slow cooker and shred. Add back to the slow cooker and toss to coat. Top with shredded cheese, green onions, jalapenos or tomatoes if desired.

I tend to lean towards lighter dishes (like Cacio e Pepe Zoodles or this Keto Shrimp & Broccoli Stir Fry), but sometimes the occasion calls for something heartier. I’ve been missing my girls’ night tradition at our local Mexican restaurant, so I fixed up these Instant Pot Carnitas to make up for it! To put it over the top, I added a spicy keto coleslaw mix for the perfect combination of flavors and textures.

These pork carnitas are packed with a TON of flavor and take barely any effort to throw together. It’s not the fastest meal, but it can be easily meal prepped so you can end a hectic weeknight with a satisfying, keto-friendly dish. It freezes and reheats beautifully, too, making it an amazing freezer meal option when you just can’t stand the thought of another soup.

I made Keto Street Taco Carnitas by using the Mission Carb Balance Street Taco tortillas, bringing 2 tacos + slaw to just 4.7 net carbs. For a super filling, low-carb meal, serve with 3/4 cup of Cilantro Lime Cauliflower Rice (4.1 net carbs), about 1/3 cup of this Avocado Bacon Dip (7.6 net carbs), and two Carb Balance street taco tortillas cut up and toasted into chips (3 net carbs). Add some tequila shots, and you’ve got a fun Mexican night under 20 net carbs!

How to make carnitas in an Instant Pot:

This recipe is super easy! First you’ll place your pork, spices, and vegetables into the Instant Pot. In a small bowl, mix your broth, Worcestershire, and sweetener to make a tasty sauce. Pour this sauce over the meat and give it a little stir to get everything coated.

Next, allow your Instant Pot to come to pressure and cook for 1 hour and 15 minutes. Once it is finished, allow the pressure to release naturally for 10 minutes. Discard your vegetables and shred your meat. Reserve at least 1 cup of the juices!

Transfer the shredded pork to a rimmed baking sheet or dish and place under the broiler on high. Allow this to broil for 2-3 minutes or until you see that the meat is nice and crispy. Make sure to keep a close eye on it while this is happening–You don’t want to allow the edges to burn! Once it has crisped up, remove from oven and pour the juice over the meat. This results in crispy-yet-tender, super flavorful carnitas!

The cooking time is determined by the size of your Boston Butt. A good rule of thumb is 15 minutes per pound of meat. This is the same whether you are cooking it as one large roast or as smaller 1-pound pieces.

Are Instant Pot Carnitas good for Keto Meal Prep?

Yes, this recipe is great for meal prepping! Cook your carnitas, then portion them out for salads, wraps, tacos, and more! The meat will keep up to 4 days in the fridge or up to 3 months in the freezer. Store the meat in some of the juice to ensure your meat is flavorful, tender, and moist after reheating.

If you are cooking ahead of time and plan to serve later, reserve an extra cup of the juice and skip the broiler step until you’re getting ready to serve. Once the meat is nice and crispy, pour some of the juice over the meat. You may not need all of the juice, depending on how much the meat soaked up during storage, but it’s better to have it and not need it than wish you had more later!

Can I freeze Pork Carnitas?

Yes, pork carnitas freeze wonderfully and reheat easily. If I plan to freeze these, I skip the broiler step and save that for when I’m reheating so that it doesn’t get overcooked. Allow the meat to cool completely, then freeze in a freezer bag with some of the juice to prevent the pork from drying out.

You can freeze it all together or freeze in 10 equal portions so that you can pull out the exact number of servings you may need. To reheat, allow the meat to come to room temperature, then you can reheat in the microwave or in a baking dish in the oven. Right before serving, I like to broil the meat 2-3 minutes and add additional juice.

  • Cabbage slaw mix, cilantro, and jalapeño
  • Mayonnaise, ranch dressing and lime juice
  • salt and pepper to taste

How do you make slaw keto?

It couldn’t be easier–Just combine all the ingredients, mix together well, and then add salt and pepper to taste. Store in the fridge until ready to serve! Many coleslaws call for a sweetener (making them not keto-friendly), but I don’t feel like this mix needs any sweetener at all.

I wouldn’t freeze this coleslaw as the mayonnaise tends to separate. You can, however, make this 3-5 days in advance and store in the fridge. Just give it a good stir before serving! It also comes together SUPER quickly and requires no cooking, so it’s simple to prepare on a busy weeknight if you need to!

Instructions

To make the carnitas:

  1. Place pork, seasonings, garlic, jalapeno, and onion in the pressure cooker.
  2. In a bowl, stir together broth, sauce, monkfruit, and lime juice until mixed well. Pour over pork.
  3. Pressure cook the meat 15 minutes per pound (1 hour and 15 minutes for a 5 pound butt), then allow the pressure to release naturally for 10 minutes.
  4. Discard the vegetables, shred the meat, and reserve at least 1 cup of the juice.
  5. Place shredded meat in a single layer on baking sheet or in a casserole dish.
  6. Broil meat on high 2-3 minutes or until crisp. Watch VERY closely--All ovens heat differently, so take it out when it looks nice and crispy!
  7. Take meat out of oven and spoon some of the juice over the top of the meat. This helps make the meat super flavorful and moist, so don't skip!
  8. Serve carnitas with warm low-carb tortillas (I used Mission Carb Balance Street Tortillas), lime wedges, and keto slaw.

To make the keto slaw:

  1. In a medium sized bowl, add all ingredients and toss until well coated. Add salt and pepper to your preference. Store in the fridge until ready to serve.

Notes

  • To make this in the slow cooker, add all carnitas ingredients to the slow cooker and cook on low for 8 hours. Once meat is shredded, broil and cover with juice as directed.

This versatile, tender Asian pork tenderloin recipe comes with a delicious sauce that you’ll want to spoon over whatever veggie you happen to have handy! It’s meant to be prepared in a slow cooker, but I’ve provided Instant Pot instructions too, just in case.

We love pork tenderloin. Our go-to has always been grilled pork tenderloin, but this keto slow cooker pork tenderloin is great for the chilly months or times when you just don’t feel like grilling.

This Ginger Garlic Pork Tenderloin is slow cooked until it’s perfectly tender! You can make this recipe in a few easy steps:

  1. Combine the spice mix and rub generously over the pork tenderloin.
  2. Place the pork in the bottom of the slow cooker with a few whole garlic cloves. Pour in some water to keep your meat moist, taking care not to pour it directly on the spice mix.
  3. Cook on low for 6-8 hours. 
  4. When ready to serve, combine the keto pork tenderloin marinade ingredients in a small sauce pot over medium heat. Bring to a simmer and allow the sauce to simmer a few minutes and thicken. 
  5. Remove the Asian pork tenderloin from the slow cooker onto an oven proof pan. Pour half of the sauce mixture over the pork and broil 3-4 minutes until it begins to crisp. 
  6. Spoon the remaining sauce over the meat before serving. 

How Long to Slow Cook Pork Tenderloin? 

You’ll need to cook the keto pork tenderloin on low for 6 to 8 hours. I prefer cooking the pork on low, because I find it’s not as tender when I cook it for a shorter amount of time on high. 

Can Pork Tenderloin Be Made in an Instant Pot? 

Yes, you can also make this Asian-inspired ginger garlic pork tenderloin in an Instant Pot.

  1. Place the seasoned pork tenderloins, garlic and water to the Instant Pot.
  2. Secure and seal the lid, set the Instant Pot to 8 minutes, and allow it to manually release pressure for an additional 10 minutes.
  3. After venting, remove the pork tenderloin to an oven-safe pan and discard any liquid remaining in the Instant Pot.
  4. Add the sauce ingredients to the Instant Pot, using the sauté function bring the ingredients to a simmer, stirring occasionally, for approximately 5-6 minutes until it has thickened.
  5. Follow the remaining instructions for broiling the tenderloin if desired.

  • I recommend cooking the pork tenderloin low and slow for about 6 to 8 hours rather than on high for a shorter period of time. This creates an ultra juicy, tender pork tenderloin. 
  • Be careful when adding the water or broth to the slow cooker. You don’t want to pour it directly over the pork tenderloin as that would remove the spice rub. 
  • Leftover pork tenderloin can be reheated gently in the oven or on the stovetop and used to make sandwiches, salads, and more.

This Instant Pot Sausage and Cabbage Casserole is an excellent low carb dinner, at about 5 net carbs per serving this is the perfect keto comfort food! 

One of the most popular recipes on this website is this Low Carb Cheesy Cabbage Casserole. It is one of my favorites too! I think what has made this one a standout is that it has really basic ingredients, is made quickly and has a lot of the markers of traditional “comfort food”.

I wanted to create a new version for the Instant Pot and this fits the bill perfectly! Instead of ground beef I used smoked sausage but the cabbage and spices remained the same. You won’t believe how quicky this comes together!

What ingredients do you need for Instant Pot Sausage and Cabbage Casserole?

As I mentioned this recipe has no strange or hard to find ingredients. For the most part, the majority of the recipe has pantry staples that you probably keep on hand. The ingredients you will need are:

  • Smoked Sausage
  • Garlic
  • Cabbage
  • Canned tomatoes with green chilies
  • Tomato sauce
  • Spices: chili powder, garlic powder, salt and pepper
  • Shredded cheese

How do you make Instant Pot Cabbage Casserole?

As written, this is an Instant Pot recipe, however it can be made in the skillet if you do not have an Instant Pot. I have included instructions for both below:

Instant Pot Instructions:

  1. Turn on the saute function on the Instant Pot. Spray the bottom of the pan with cooking spray or add 1/2 tablespoon olive oil. Add the minced garlic and smoked sausage, brown over medium heat until sausage is lightly browned.
  2.  Turn the saute function off.
  3. Add the cabbage and spices, stir well.
  4. Add the tomato sauce and canned tomatoes, do not stir.
  5. Place lid on Instant Pot and seal the vent. Set the pressure cooker to 3 minutes.
  6. Manually release the pressure when done. Remove lid and top with shredded cheese.  

Skillet Instructions:

  1. In a medium size skillet add the minced garlic and  brown the smoked sausage over medium heat.
  2. Add the cabbage, tomatoes with green chili, tomato sauce, spices and stir well.
    Cover and reduce heat to medium cooking for 15-18 minutes stirring occasionally.
  3. Top with cheese, cover for a few minutes and allow it to melt.

My go to Instant Pot recipe is this Cheesy Buffalo Chicken Soup. It is loaded with shredded chicken, peppers and celery in a creamy cheesy soup. I add additional buffalo sauce because I love a bit of spice, but if you have kiddos you can skip that and just have a cheesy chicken soup.

Imagine Italian sausage, tender mushrooms, bell pepper and spinach in a creamy Italian style broth. I top my soup with loads of shredded mozzarella and fresh basil. This also reheats super well so it is great for keto meal prep.

Ingredients

  • 1 teaspoon minced garlic
  • 1 (16 ounce) package Smoked Sausage, sliced
  • 1/2 small head of cabbage chopped into medium chunks
  • (roughly 3 cups)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1 (10 ounce) can tomatoes with green chilies (undrained)
  • 1 (8 ounce) can of tomato sauce
  • 1 cup shredded cheese

Instructions

    1. Turn on the saute function on the Instant Pot. Spray the bottom of the pan with cooking spray or add 1/2 tablespoon olive oil. Add the minced garlic and smoked sausage, brown over medium heat. 
       Turn the saute function off.

I wanted to squeeze in one more keto soup recipe for you before we close out the year! This keto cabbage soup with ground beef is not only a delicious, hearty low-carb soup you will love, but it is also perfect for New Years!

As I mentioned a few days ago when I shared this easy one pan Cajun Pork Chops with Fried Cabbage, cabbage is a traditional ingredient served on New Year’s Day. Serving something like this low-carb cabbage soup is great on New Year’s because it serves eight.

However, there are some other really great cabbage recipes that are also keto, including this Cheesy One Pan Cabbage Casserole and this Keto Sausage and Cabbage Breakfast Hash.

Ingredients in Keto Cabbage Soup

This easy and delicious ground beef and cabbage soup is based off of my favorite One-Pan Cabbage Casserole. It has many of the same elements, like a spicy tomato sauce and great flavor from chili powder, which complements the cabbage so well.

For this recipe, you will need the following basic ingredients: 

  • Ground beef or turkey
  • Cabbage
  • Bell Pepper
  • Canned Tomatoes with Green Chilies
  • Tomato Paste
  • Spices
  • Beef Broth

How to Make Keto Cabbage Soup 3 Ways

One of my favorite things about this keto unstuffed cabbage soup recipe is how incredibly versatile it is. Keto cabbage soup can easily be made in an Instant Pot, slow cooker, or right on your stove top.

Each cooking method is listed below, with more details in the recipe card.

However, the general method is the same: cook the beef and drain off any fat. Add the remaining ingredients and stir well. Cover and allow the cabbage to cook down and give the flavors a chance to meld. 

1. Instant Pot Method

Here are the basic instructions for making Instant Pot cabbage soup: 

  1. Use the sauté function and lightly spray the bottom of the pan.
  2. Brown the meat and drain off any grease, turn the sauté function off.
  3. Add remaining ingredients, stir well.
  4. Secure the lid to the instant pot and make sure the steam valve is CLOSED. Set the pressure cooker cycle for 15 minutes.
  5. Once the cook time ends, allow the steam to naturally release for 5-10 minutes, then carefully release the steam manually. 

2. Slow Cooker Method

Here are the basic instructions for making slow cooker cabbage soup: 

  1. Brown meat in a large skillet, then drain off any grease.
  2. Add the cooked meat to the bottom of the slow cooker and then add remaining ingredients. Stir well.
  3. Cover and cook on high for 3-4 hours or on low for 7-8 hours. 

3. Stove Top Method

Here are the basic instructions for making hamburger cabbage soup on the stovetop: 

  1. Heat a large stockpot or dutch oven to medium heat, lightly spray the bottom.
  2. Brown the meat and drain off any grease.
  3. Add remaining ingredients, stir well.
  4. Bring mixture to a simmer and cover, reduce heat to low and simmer 30-40 minutes until the cabbage has reduced in size.

Can Cabbage Soup Be Frozen? 

Technically yes, but I avoid freezing this low-carb cabbage soup because the cabbage often changes texture once frozen. 

Can I Use Another Ground Meat? 

Yes, of course! I made this as a hamburger cabbage soup recipe, but you may substitute ground chicken or turkey if desired. 

Tips for the Best Ground Beef and Cabbage Soup

  • Because cabbage is so hearty, the soup can be made a couple days before you plan on serving it. It reheats beautifully! 
  • I like to garnish individual bowls of cabbage soup with shredded cheddar and chopped chives. 
  • For a spicier keto cabbage soup, add extra chili powder or a pinch of red pepper flakes.

    Add remaining ingredients, stir well.

    Secure the lid to the instant pot and make sure the steam valve is CLOSED.

    It will take the machine 15-20 minutes to get up to pressure before the 15 minute cook cycle begins. Once the cook time ends allow the steam to naturally release for 5-10 minutes, then carefully release the steam manually.

Today I am sharing a recipe you guys are going to love! This Instant Pot Buffalo Chicken Soup recipe is the perfect keto dinner. It is easy, delicious, makes plenty, and is ultra low-carb!

In this house, we are huge buffalo chicken fans. Actually, if I ask my husband what he wants for dinner it is always the same three things — buffalo chicken, tacos, or burgers. He is a simple man, ha!

Now, just in case you are reading this and do not have an Instant Pot, don’t worry I have also included slow cooker instructions. This recipe can easily be made in a pressure cooker or a CrockPot, whichever you prefer.

Ingredients in Buffalo Chicken Soup

Soups can be tricky because they are generally so full of carbs. Even if you make something like a vegetable beef soup, it can run on the high side of carbs because of the vegetables.

For this keto buffalo chicken soup, I kept things really simple and used ingredients that complement the buffalo chicken flavor so it really shines.

For this recipe, you need:

  • Chicken breasts
  • Butter
  • Celery
  • Bell Pepper
  • Garlic
  • Paprika
  • Garlic Powder
  • Onion Powder
  • Chicken Broth
  • Buffalo Sauce
  • Ranch Dressing
  • Cream Cheese
  • Shredded Cheddar

How to Make Buffalo Chicken Soup

This easy keto Instant Pot recipe is a really straightforward three-step process. Here’s a rundown of the recipe: 

  1. Sauté the celery, bell pepper and garlic in butter. Then add the chicken breast, paprika, onion powder, garlic powder and chicken broth.
  2. Place the lid on the Instant Pot, seal the pressure valve, and set the pressure cooker to 20 minutes. Allow the pressure to naturally release for 5-10 minutes, then manually release the rest.
  3. The last step is to remove the chicken and shred it. While the chicken is out of the pot, add the buffalo sauce, ranch dressing, cream cheese and shredded cheddar. Whisk the mixture until it is completely smooth. Then, add the chicken back to the soup.

  • 1/2 cup low carb ranch dressing, room temperature
  • 1/3 cup buffalo sauce
  • 4 ounces cream cheese, room temperature
  • 2 cups shredded cheddar

Instructions

    Set the Instant Pot to the sauté mode. Sauté the celery, bell pepper and garlic in the butter.

    Add the chicken breast, paprika, onion powder, garlic powder and chicken broth.

    Place the lid on the instant pot, seal the pressure valve and set the pressure cooker to 20 minutes.

    Allow the pressure to naturally release for 5-10 minutes, then manually release the rest then remove the lid.

    Remove the chicken and shred it, set aside.

    While the chicken is out of the pot add the buffalo sauce, ranch dressing, cream cheese and shredded cheddar. Whisk the mixture until it is completely smooth. This may take 1-2 minutes of vigerious stirring.

    Then add the chicken back to the soup. 

    Top with chopped green onions, cheese and additional buffalo sauce if desired.

Notes

It is important that the cream cheese and ranch dressing are room temperature so they do not curdle and mix smoothly into the soup.

SLOW COOKER: If you do not wish to saute your celery, garlic and bell pepper you can skip the first ingredient, which is butter.

SLOW COOKER DIRECTIONS

  1. Place the garlic, celery, bell pepper, chicken breast, spices and chicken broth in the slow cooker.
  2. Cook on low for 8 hours or on high for 4 hours.
  3. Remove the chicken and shred.
  4. Add the cream cheese, buffalo sauce, ranch dressing and shredded cheddar. Whisk vigerously until smooth. Add the chicken back to the soup.
