How to Make Slow Cooker Sun Dried Tomato Chicken

Season the chicken

Spray the inside of a 4-quart crock pot with cooking spray. Then place the chicken in the bottom of the dish and top with salt, pepper, Italian seasoning, garlic powder, paprika, and sun-dried tomatoes. 

Make the Alfredo sauce

Melt the butter in a small saucepan or skillet over medium-low heat. Add the garlic and saute for about 30 seconds. Add the white wine and allow the wine to simmer and reduce by half. This step takes about 5 minutes. Once the wine is reduced, add the heavy cream and parmesan and stir well. Allow the alfredo sauce to simmer for 5 minutes until it has thickened. 

Cook the chicken

Pour the sauce over the chicken and place the lid on the slow cooker. Cook the chicken on low up to 8 hours or on high up to 3 hours. (Remember, the cooking time in crock pots can vary tremendously. If your slow cooker runs high (brings things to a simmer on low) you will want to stick to a cooking time of no more than 5-6 hours.)

What is Zuppa Toscana? 

Zuppa Toscana, which can be loosely translated as Tuscan Soup, is known to many as “Olive Garden Soup.” This hearty, comforting soup is beloved by many because of its unique combination of flavors. However, this soup is actually an Italian classic that originated in Tuscany. This soup features sausage, bacon, kale, onion, and garlic in a creamy broth. 

Today, I am sharing a shortcut recipe that is made in an Instant Pot. It only takes 5 minutes of prep time and 5 minutes of pressure cooking time! As a bonus, this recipe is low-carb and keto-friendly by making one clever substitution without sacrificing its incredible taste! 

Ingredients for Keto Zuppa Toscana

As always, this is a quick overview of the ingredients you need for this low-carb soup recipe. For the complete recipe, just keep scrolling. 

  • Meat: Ground Italian Pork Sausage and Bacon (you could use turkey sausage if looking to reduce fat)
  • Vegetables: onion, garlic, turnips, kale
  • Spices: onion powder, garlic powder, salt and pepper
  • Liquids: Chicken broth, heavy cream (you can make this recipe dairy-free by subbing coconut milk for the heavy cream)
  • Optional Ingredients: shredded parmesan cheese or Asiago are highly recommended! Spinach is another common addition.

How to make Zuppa Toscana in an Instant Pot?

  • Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon, remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
  • Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
  • Add the spices, cubed turnip and broth. Secure the lid and pressure cook for 5 minutes. Allow it to naturally release pressure for 10 minutes. 
  • Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
  • Stir in the cooked, crumbled bacon and parmesan if desired, just before serving. 

How do you make Keto Zuppa Toscana?

This recipe is very easy to make keto. Instead of Russet potatoes, we use peeled, cubed turnips. Hear me out, turnips have a very similar consistency to potatoes when cooked in a soup like this. This is the same method I used for my Keto Beef Stew

When I served this my family members did not even realize these were turnips, so give it a shot! It really is a great low carb alternative for potatoes. 

What other low-carb substitutes can you use instead of potatoes?

While I love turnips, there are other keto variations! If you don’t have turnips but do have radishes available, I have read that those make great replacements, though I haven’t used them in this recipe. Cauliflower florets are another good option. I love Keto Roasted Radishes instead of roasted potatoes, and these Keto Fries are made with rutabaga. It makes sense that these would work as replacements in soup, too!

Tips for the Best Low Carb Sausage and Kale Soup

  • Make sure your ingredients are in bite size chunks for the best results. For example, large cubes of turnip or long ribbons of kale will be hard to enjoy with a spoon. 
  • Brown and break up the sausage well so there are no big chunks. 
  • Do not add the kale or heavy cream until after the pressure cooking cycle. 
  • For a little more heat, try adding some red pepper flakes.

What should I serve with Zuppa Toscana?

I love to have a whole Italian night when I serve this Instant Pot Zuppa Toscana! This Keto Antipasto Salad brings in beautiful Italian flavors without even needing to cook. If you make a half portion as an appetizer, you’re only adding 2.8 net carbs. These Italian Baked Mushrooms are always a hit, whether served as an appetizer, protein, or side dish! I’m a big fan of using my slow cooker. Especially during the middle of the week. A slow cooker is practically a cheat code for getting rich and flavorful meals on weekdays. This keto slow cooker zesty ranch chicken is the perfect example. It takes less than 5 minutes to get the recipe started, and then the slow cooker does the rest. At the end of the day, you’ll have a perfect keto chicken dinner with basically no work.

The chicken in this recipe is so juicy and tender. You can’t beat the texture of meat that slowly cooks for 8 hours. There’s a kick of spice from pepperoncini peppers and there’s the creamy, decadent flavor of ranch. I like to put this chicken in tacos and sandwiches, or on top of salads. But you can put it on pretty much anything!

  • Saves well. Because this chicken is made in the slow cooker, you can double or triple the recipe without adding any extra work, if your slow cooker is large enough. It saves really well in the fridge or freezer, so I love to make a large batch to have whenever I need an easy meal.

  • Add the ingredients. Place all of the ingredients in the slow cooker.
  • Cook. Turn your slow cooker on to low, and cook for 8 hours.
  • Shred. Shred the chicken and pepperoncini peppers, and serve. 

Tips for Success

Here are some tricks and tips to use when making this keto chicken.

  • Check the seasonings. You might notice that this recipe doesn’t have any salt in it. There should be enough salt in the cream cheese, ranch, and pepperoncini peppers to season the chicken. However, the salt level can change depending on your ingredients. After shredding the chicken, give it a taste, and add more salt if needed.
  • Shred with forks. The easiest way to shred slow cooker chicken is by using 2 forks. Press the forks into the chicken with the back of the forks pressed against each other. Pull the forks away from each other to shred the chicken. 
  • Adjust the spice level. I really love the pepperoncini peppers in this recipe. They give the chicken a little kick. Plus, the vinegar balances out the cream cheese and ranch. If you don’t like spice, you can get rid of the peppers and the recipe will still work just fine. And if you’re a fan of heat, add more pepperoncinis!

What to Serve With Keto Chicken

You can serve this slow cooker chicken in anything, on anything, or with anything. I love to use it as the meat in a Chicken Salad, or in a Chicken Bacon Ranch Lettuce Wrap. Zesty ranch chicken works wonderfully in Mexican food, so I recommend using it in Quesadillas, or in a Keto Taco Salad.

How to Store and Reheat Leftovers

Leftover keto slow cooker zesty ranch chicken will last in the fridge for up to 5 days, so you can eat it all week long. Store it in an airtight container, and reheat in the microwave in 30-second intervals until it’s warm.

You can definitely freeze this keto chicken recipe. Store it in an airtight container in the freezer, and it will last for up to 4 months. Thaw in the fridge overnight, or defrost fully before reheating.

How to make Crock Pot Beer Cheese Dip

This beer cheese dip is extremely easy to make, so it’s perfect when you’re getting ready for a party! Here are your step by step instructions:

Combine your ingredients

Add all of your ingredients into the slow cooker. If you want to help your dip turn out as smooth as possible, you could melt the cream cheese in the slow cooker completely before adding the remainder of the ingredients.

Cook on low

With all ingredients in, cook your dip for 1-2 hours on low. 1 1/2 hours was perfect for me, but some slow cookers may cook faster or slower. Make sure to gently stir the dip every 20-30 minutes to make sure it doesn’t burn.

Blend for a smooth dip

This step is completely optional, but it’s my preferred way. If you have an inversion blender, you can blend the dip right there in the slow cooker. If you don’t, simply pour or ladle the soup into a blender and give it about 30 seconds on medium power.

Serve

This dip would be great with other appetizers like Keto Sausage Stuffed Jalapeno Poppers, Chorizo Sausage Balls, or Keto Chicken Wings. Crispy Zucchini Chips or Keto Pretzel Bites are great low-carb dippers. Keto chips make for an easy snack!

How to store Keto Beer Cheese Dip

This dip should be stored in an airtight container in the fridge up to 4 days. If you are leaving it out for 2+ hours, make sure it is heated so that bacteria doesn’t start growing.

Freeze

This dip can be frozen, but the texture will be altered because of the cream cheese. If you do freeze it, eat within 3 months. The longer it is frozen, the more the texture will change. To try to return the dip back to its former texture, try blending and then stir in a bit of warm heavy cream.

Reheat

To reheat a large portion (or the entire recipe), return to the slow cooker or a pot on the stove. Warm on low, stirring occasionally until dip is warm throughout. For small portions, blast for 30-second intervals in the microwave.

  • 12 ounces Cream cheese, room temperature & cut into cubes
  • 3 cups Cheese, freshly shredded* (I used white and yellow sharp cheese, but using a gouda would have been smoother)

  3. After about 1 1/2 hours, stir the dip -- If there are still clumps after stirring, continue to cook another 30 minutes or until it's smooth.
  4. Allow the dip to cool a bit, then transfer to a blender. Start on low, then work your way to the highest level. Blend until it looks beautifully smooth (it took me about 2 minutes total).
  5. Return to slow cooker and serve immediately with keto chips, vegetables, and chaffles!

Notes

* Cheddar doesn't melt to a super-smooth texture, so replace half (or all) of the cheddar with gouda. Gouda melts smoothly and will reduce any "gritty" texture the dip may have.

** Liquid smoke is not necessary, but I believe that the flavor adds depth and complements the sharp cheddar.

  • Lit’l Smokies – I used Hillshire Farm pork, but other brands work, too. They carry pork, beef, and turkey. Check the nutrition label — Some have higher carbs, but Hillshire Farm pork has just 2 carbs.
  • Sugar-Free Hickory Barbecue Sauce – I used G Hughes hickory sauce, but you can use whatever low-carb barbecue sauce you like best. Adding 1/2-1 teaspoon of liquid smoke can help give more of that hickory flavor.
  • Golden Monk Fruit – I used the Lakanto brand, but you can use another 1:1 brown sugar replacement if you prefer something else. Granular sugar replacements also work just fine, but you don’t get quite the depth of flavor.
  • Worcestershire Sauce – This adds a great depth of flavor and helps balance out the sweetness of the recipe. If you don’t have this, replace it with your favorite steak marinade.

Little Smokies can be frozen, and it’s very easy! Allow your cooked sausages to cool completely before storing — Warm food lowers the temperature of the freezer, and the condensation from warm food can lead to freezer burn.

Pour your Keto Little Smokies into a freezer bag, closing and sucking out any remaining air in the bag. Double bag if your freezer struggles with freezer burn. If possible, lay the bag flat in the freezer for 1 day, then it can be leaned up vertically to save you freezer space. These are best eaten within 2 months as the freeze can alter the texture.

Raw little smokies can be frozen, too! For a super easy meal prep appetizer, just pour your sauce ingredients in a freezer bag and mix or shake until all the ingredients are well combined. Add your raw sausages, close, and freeze like the cooked sausages above. When frozen raw, this can keep in the fridge 6-12 months.

Reheating Lil Smokies

Lil Smokies can be reheated using a slow cooker, skillet, microwave, or oven.

  • Slow Cooker – Just pour back into the slow cooker, then turn on low to reheat. You can reheat on high, just make sure you’re nearby to stir and check it often.
  • Skillet – On medium low, pour the sauce and Lil Smokies into the skillet. Cover with a lid and reheat 5-15 minutes, stirring occasionally.
  • Microwave – Add 1-2 servings to a microwave safe bowl and heat in 30-second bursts, stirring between cooking times. Cover with a paper towel as the sausages can burst and pop.
  • Oven – Preheat to 350 degrees F, and pour your leftover Lil Smokies into a baking dish. Cover with foil or a lid, and reheat 10-20 minutes. Stir occasionally. If the sauce looks too thick, thin it out with a bit of water or broth.

FAQ’S ABOUT LITTLE SMOKIES

Do you have to use pork for little smokies?

No, this recipe works great with little smokies made of other meats, too. Beef, turkey, and other options will use the same cooking instructions.

What size crock pot is best for lil smokies?

I used a small 2 quart slow cooker, and it was the perfect size. If you are making a double batch, you will want a larger slow cooker. If you are bringing this to a party or potluck, try finding a slow cooker with the “warm” function so you aren’t burning them on low for hours. Do not make a single batch in a large crock pot — Manufacturers recommend filling your cooker at least 1/2 full for proper cooking.

What if I don’t have a crock pot?

You can still enjoy this appetizer without a slow cooker! In a medium sized pot, combine your ingredients and cover with a lid. On medium low heat, cook 30 minutes to an hour. Make sure to stir every 10 minutes or so to make sure the sauce isn’t burning.

We love this recipe even more than buffalo chicken wings and it is easier to prepare!

This easy chicken recipe is perfect for sandwiches, lettuce wraps, quesadillas, tacos or in your favorite salad. It is also a great recipe for game day or keto meal prep! You probably already have most of the ingredients for this meal on hand, and a large serving is only 1.4 net carbs and under 300 calories!

Ingredients for Buffalo Chicken in Slow Cooker

  • I personally prefer cooking this chicken on low and letting it slowly cook all day. If you are short on time, you could cook this meal on high for 4 hours.

  4. Remove the pork and allow the gravy to cool a little, then stir in the sour cream. If you want the gravy to be thicker, add your thickening agent here. Add the pork back to the sauce and serve.

  • If you are wanting your gravy to be thicker, there are two different thickening agents you can use. You can use corn starch, but if you are strict keto, you can also use xantham gum.
  • Do not release the pressure inside of the pressure cooker- allow the Instant Pot to do so.
  • Be sure to scrape the bottom of the pan when you are adding in your beef broth.
  • You do not have to thicken the gravy- it’s totally optional!

These Instant Pot pork chops are so easy to make, and take less than half an hour. They're packed with flavor from ranch seasoning and Worcestire sauce, and they're tender and juicy.

Ingredients

  • 1 tablespoon olive oil
  • 4 (2-inch thick) pork chops
  • 1 (1-ounce) package Hidden Valley Ranch seasoning
  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 2 teaspoons garlic, minced
  • 1 cup beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1/2 cup sour cream

Instructions

  1. Place the pork chops and ranch seasoning in a large plastic bag. Seal the bag and shake to coat.
  2. Turn on the sauté function on the Instant Pot. Add the olive oil and carefully place the pork chops in the base of the pressure cooker. If there is any seasoning left in the bag then sprinkle it over the chops. Allow the chops to sear 2-3 minutes on each side until golden brown. Remove the prok from the pressure cooker.
  3. Add the butter, garlic and onion. Sauté until the onions are soft, then add the beef broth to deglaze the pan. Be sure to scrape up all the little brown bits that have stuck to the bottom of the Instant Pot.
  4. Stir in the Worcestershire sauce and mustard. Add the pork chops back to the Instant Pot.
  5. Close the lid and and set the cook time to 6 minutes. When the cooking cycle has ended allow the machine to manually release the pressure for 10 minutes.
  6. Remove the pork chops from the Instant Pot. Let the gravy to cool slightly so it doesn't curdle, then add the sour cream and stir until smooth.
  7. If you wish to thicken the sauce you can use corn starch (if not keto) or xanthan gun. See notes below.
  8. Add pork chops back to sauce and serve.

Notes

  • If you want to thicken the sauce, then turn the Instant Pot onto the sauté setting after you've added the sour cream. Add 1/2-1 teaspoon of xanthan gum or, if you're not keto, a combination of 1 tablespoon water and 1 tablespoon cornstarch stirred together. Cook until the sauce is the desired thickness, then turn off the Instant Pot and add the pork chops.
  • Store leftover pork in an an airtight container in the fridge for 4 days, or in the freezer for 3 months.
  • Reheat in the microwave in 30-second increments, or in a 350F oven for 10 minutes.

Ingredients

Italian Pork

  • 4 pound Boston Butt, fat trimmed
  • 2 teaspoons Italian seasoning
  • 1 teaspoon EACH of kosher salt, onion powder, garlic powder and black pepper

For the Tomato Sauce

  • 1 1/2 cup chopped onion
  • 1 1/2 cup chopped celery
  • 2 whole heads of garlic
  • 1 (15 ounce) can of crushed tomatoes
  • 1 cup dry white wine
  • 1/4 cup pepperocini peppers

Instructions

  1. Combine the spices and set aside. Trim the fat from the pork and rub the spices over the meat. Turn the saute function on on your Instant Pot and add enough olive oil to lightly coat the bottom of the skillet. Sear the pork on each side until golden brown. Remove from the Instant Pot and set aside.
  2. Add the onion, celery and garlic to the Instant Pot. Saute for 2-3 minutes. Next, add the tomatoes and wine. Scrape the bottom to deglaze the pan.
  3. Add your pork back to the Instant Pot and secure the lid. Pressure cook 15 minutes per pound (60 minutes for a 4 pound butt).
  4. When the cooking has ended, let the machine manually release pressure for 15 minutes.
  5. Shred your pork, drizzle with a little bit of the juice and broil until the ends are crispy, but be sure to watch closely. Add salt and pepper to taste.

Notes

You can use the leftover juice from the Instant Pot as a marinara sauce. Just blend with an immersion blender.
