  • Vegetables: cauliflower florets or large head cauliflower, yellow onion (sliced), garlic (peeled), carrots (shredded), celery stalks (diced)
  • Avocado oil: any neutral oil, such as olive oil will work but we like the rich flavor of avocado oil for this recipe
  • Unsalted butter: Part of the base for the soup. If you only have salted butter, you may not need to add any additional salt
  • Low-sodium vegetable broth: choosing a high-quality vegetable stock makes a noticeable difference in the flavor quality
  • Fresh thyme leaves: this will be used in the recipe and for garnish so be sure to save a bit for the garnish
  • Spices: salt and black pepper
  • Shredded cheddar cheese: A good sharp cheese is delicious, but something like Colby jack will also work well if you don’t like cheddar cheese

How to Make Creamy Cauliflower Soup

Aside from the ingredients listed above, you will need a baking sheet, Dutch oven or large pot, as well as a cutting board and knife. I’ve documented each step so you can easily make this at home! Follow this step-by-step guide to easily make this Cauliflower Soup! Scroll to the recipe card at the bottom of the page for the exact measurements. 

Roast the vegetables

Preheat oven to 425 degrees and line a large baking sheet with parchment paper. Then place the cauliflower florets, sliced onion, and peeled garlic in a single layer on the prepared baking sheet and toss with the avocado oil. Roast the vegetables for 30-35 minutes, until the cauliflower is becoming golden brown and softened. Set aside. 

Saute the carrots and celery

When the vegetables are just about done roasting, heat the butter in a large pot or Dutch oven over medium heat. Add the shredded carrots and diced celery and saute until tender, about 2-3 minutes.

Simmer

Add the roasted vegetables, vegetable broth, fresh thyme, salt and pepper to the pot. Bring to a boil, then allow to simmer for 10 minutes, uncovered, stirring occasionally. You may need to reduce the heat as it cooks.

Blend the soup

Remove the pot from heat and blend the soup with an immersion blender or transfer to a blender and blend until smooth. 

Add the cheese and heavy cream

Return the soup back to the pot and stir in the cheese and heavy cream. Heat again over medium heat until warmed through. Ladle the soup into bowls, garnish with more thyme leaves, salt and pepper to taste and serve!

  • Reheating Instructions: To reheat, my preferred choice is heating on low on the stovetop. Stirring intermittently. To reheat from frozen, allow to thaw in the fridge overnight before reheating. 
  • Refrigerator Storage: Allow to cool completely. Then, you can store this soup in an airtight container for up to 3 days in the refrigerator. We like to store leftovers in single serving containers so we can just grab and go!
  • Freezer Storage: This cauliflower soup freezes well. After allowing to cool completely, freeze in a freezer-safe container for up to 3 months. This recipe provides 6 servings so we prefer to store in multiple containers so we don’t have to thaw it all at once.

  • Yellow onion and Mushrooms – You can use white onion if you prefer, but it’s got a sharper, less sweet flavor. Feel free to use white or crimini mushrooms–Both work perfectly in this recipe.
  • Unsalted butter, Low-sodium vegetable broth, and Low-sodium soy sauce – I’ve not tried any butter substitutes in this recipe, but you could use a cooking oil instead if you prefer. If you don’t have vegetable broth, you can use chicken or beef stock (or make your own). Coconut aminos are a great soy-free substitute for soy sauce.
  • Smoked paprika, Fresh dill, Garlic powder, Salt, and Black pepper – The paprika is the “loudest” flavor in the soup, but you could use sweet or Hungarian paprika if you prefer. If you only have dried dill, use 1/3rd the amount.
  • Heavy cream and Sour cream – This adds a great dose of fat (perfect for the keto diet) and helps make a super smooth soup.
  • Lemon juice and Fresh parsley – These brighten the flavor of the soup and balance out that earthy mushroom flavor.

You’ll need a large pot or Dutch oven and a stovetop or hot plate.

How to Make Keto Mushroom Soup

This easy low-carb mushroom recipe is SO simple! Here’s a step-by-step guide to making this bright soup.

Saute veggies

In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and mushrooms and saute for 10 minutes. Add the smoked paprika and cook for another minute. 

Simmer

Stir in the broth, fresh dill, soy sauce, garlic powder, salt, and pepper. Simmer over medium heat for about 10 minutes, stirring occasionally. 

Finish with cream

Whisk in the heavy cream, sour cream, and lemon juice. Bring back to a simmer for 1-2 minutes, then top with fresh parsley and serve!

What to Serve with Mushroom Soup

If you’re stretching this meal further for company, start with a simple arugula salad or some artichokes with garlic butter for a light appetizer. Add some keto dinner rolls or these low-carb cheddar garlic biscuits to sop up anything left in the bowl! You could also serve zucchini fritters, smashed brussels sprouts, or keto garlic bread to stretch it even further.

Can you freeze soup with sour cream?

Soups with sour cream can be frozen, but you may notice that the dairy in the soup may begin to separate during reheating. It could possibly become a bit gritty and unpleasant. Here are a few tips to avoid this:

  • Thaw slowly – Allow your frozen soup to thaw in the fridge over 1-2 days. A quick thaw (in the microwave or in warm water) can cause the dairy products to separate more.
  • Reheat slowly – If you speed up the reheating process, the shock is likely to cause the dairy to separate. Reheating the soup on low (or 50% power if using the microwave) helps prevent this.
  • Whisk while reheating – If you continuously whisk while you slowly reheat your soup, this helps the dairy stay mixed in with the rest of the soup.
  • Add warm cream – Heat up 1-2 tablespoons of heavy cream, then slowly stir it in as you whisk the reheating soup. This helps re-incorporate the dairy into the soup (it’s also how you fix a “broken” or separated ganache!).

To avoid all of this, you could freeze this soup BEFORE adding the cream, sour cream, and lemon juice. Simply freeze, thaw, then add in these remaining ingredients as you reheat the soup.

Reheat

You can reheat this soup in the microwave, on the stove, or with a slow cooker.

  • Microwave – Reheat in 1-minute increments on 50% power. Cover with paper towel to avoid any splatters. This method is not the best if the soup has been frozen.
  • Stovetop – Reheat soup on medium-low, stirring occasionally as you reheat. If soup has been previously frozen, reheat on low and stir continuously to prevent the dairy from separating.
  • Slow cooker – Reheat soup on low, stirring occasionally as you reheat. Once warm, you can switch slow cooker to “warm” to prevent anything from sticking to the bottom if you’re serving it potluck style.

Is mushroom soup keto?

This mushroom soup is keto-friendly and low-carb with just 10 net carbs per bowl (12.2 g carbs – 2.2 g fiber). Most mushroom soup uses a flour-based roux and is not safe for a keto or gluten-free diet. If you wish this soup were thicker (like it were made with a roux), you can mix 1-2 teaspoons of cornstarch with 1-2 teaspoons of water to create a slurry, then stir it in at the very end. This will add carbs but not as much as a flour roux would.

    What is Zuppa Toscana? 

    Zuppa Toscana, which can be loosely translated as Tuscan Soup, is known to many as “Olive Garden Soup.” This hearty, comforting soup is beloved by many because of its unique combination of flavors. However, this soup is actually an Italian classic that originated in Tuscany. This soup features sausage, bacon, kale, onion, and garlic in a creamy broth. 

    Today, I am sharing a shortcut recipe that is made in an Instant Pot. It only takes 5 minutes of prep time and 5 minutes of pressure cooking time! As a bonus, this recipe is low-carb and keto-friendly by making one clever substitution without sacrificing its incredible taste! 

    Ingredients for Keto Zuppa Toscana

    As always, this is a quick overview of the ingredients you need for this low-carb soup recipe. For the complete recipe, just keep scrolling. 

    • Meat: Ground Italian Pork Sausage and Bacon (you could use turkey sausage if looking to reduce fat)
    • Vegetables: onion, garlic, turnips, kale
    • Spices: onion powder, garlic powder, salt and pepper
    • Liquids: Chicken broth, heavy cream (you can make this recipe dairy-free by subbing coconut milk for the heavy cream)
    • Optional Ingredients: shredded parmesan cheese or Asiago are highly recommended! Spinach is another common addition.

    How to make Zuppa Toscana in an Instant Pot?

    • Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon, remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
    • Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
    • Add the spices, cubed turnip and broth. Secure the lid and pressure cook for 5 minutes. Allow it to naturally release pressure for 10 minutes. 
    • Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
    • Stir in the cooked, crumbled bacon and parmesan if desired, just before serving. 

    How do you make Keto Zuppa Toscana?

    This recipe is very easy to make keto. Instead of Russet potatoes, we use peeled, cubed turnips. Hear me out, turnips have a very similar consistency to potatoes when cooked in a soup like this. This is the same method I used for my Keto Beef Stew

    When I served this my family members did not even realize these were turnips, so give it a shot! It really is a great low carb alternative for potatoes. 

    What other low-carb substitutes can you use instead of potatoes?

    While I love turnips, there are other keto variations! If you don’t have turnips but do have radishes available, I have read that those make great replacements, though I haven’t used them in this recipe. Cauliflower florets are another good option. I love Keto Roasted Radishes instead of roasted potatoes, and these Keto Fries are made with rutabaga. It makes sense that these would work as replacements in soup, too!

    Tips for the Best Low Carb Sausage and Kale Soup

    • Make sure your ingredients are in bite size chunks for the best results. For example, large cubes of turnip or long ribbons of kale will be hard to enjoy with a spoon. 
    • Brown and break up the sausage well so there are no big chunks. 
    • Do not add the kale or heavy cream until after the pressure cooking cycle. 
    • For a little more heat, try adding some red pepper flakes.

    What should I serve with Zuppa Toscana?

    I love to have a whole Italian night when I serve this Instant Pot Zuppa Toscana! This Keto Antipasto Salad brings in beautiful Italian flavors without even needing to cook. If you make a half portion as an appetizer, you’re only adding 2.8 net carbs. These Italian Baked Mushrooms are always a hit, whether served as an appetizer, protein, or side dish!       1. Turn the sauté function on the Instant Pot. Cook the chopped bacon until crisp, about 3-5 minutes. Using a slotted spoon remove the bacon from the pressure cooker. Drain off all of the grease except 1 tablespoon. 
      2. Add the ground Italian sausage. Brown and break up the sausage as it cooks. Once it is brown add the minced garlic, chopped onion and sauté until soft. Drain off any grease.
      3. Add the spices, cubed turnip and broth.
      4. Secure the lid and pressure cook for 5 minutes. Once the cooking cycle has ended allow it to naturally release pressure for 10 minutes. 
      5. Remove the lid, add the chopped kale and heavy cream. Stir the soup well, the kale will wilt and cook through as you stir. 
      6. Stir in the cooked bacon and parmesan if desired, just before serving.

    How to Make Turkey Soup with Leftovers

    This wholesome, delicious soup comes together easily. Here’s a quick step-by-step guide for this easy keto dinner.

    Saute veggies

    Place a large pot or Dutch oven over medium heat, then add in olive oil. Pour in the chopped onion, celery, carrots, and garlic, then saute for 4-5 minutes. Stir occasionally until the vegetables have softened and the garlic is fragrant.

    Simmer

    Add the cooked, seasoned turkey and the broth into the pot and increase the heat to medium-high. Bring the broth to a boil, then reduce the heat to medium-low. Simmer, stirring occasionally, for 15 minutes.

    Temper eggs

    In a mixing bowl, whisk the eggs and lemon juice together. Scoop 1/2 cup of the hot broth out of the soup and very slowly pour it into the egg and lemon mixture while you continue whisking. This process allows the eggs to slowly warm up, preventing them from cooking too quickly and turning into scrambled eggs. Repeat this two more times until you have 1 1/2 cups of broth mixed into the lemon and egg mixture.

    Stir together

    Once the eggs have been tempered, slowly pour them into the soup pot with the chicken and veggies, stirring as you pour. Serve the soup immediately with fresh dill, salt, and pepper. Add lemon wedges for a nice additional hit of acidity.

    I love garnishing this soup with some fresh chopped dill and cracked pepper. You can add croutons (to stay keto, cut and toast a chaffle) if you love a little crunch.     Allow soup to cool, then store in an airtight container in the fridge up to 3 days. Pouring leftovers into individual-sized containers is great for grab-and-go lunch packing!     Freeze

    Cook the Bacon

    Heat a Dutch oven or large pot to medium heat. Add the chopped bacon to the skillet, stirring occasionally until the bacon is crisp. Once the bacon is crisp, use a slotted spoon to remove the bacon from the pot and set aside on a paper towel-lined plate to drain.

    Saute the Vegetables

    Once the bacon has been cooked and removed from the pot pour off some of the bacon grease if desired. Leave at least 1 tablespoon in the skillet to saute the vegetables. Next,  add the garlic, onion, celery, bell pepper and carrots. Saute the vegetables, stirring occasionally, for 4-5 minutes. Remember, the vegetables continue to cook as the soup cooks so you do not need to cook them until they are totally soft.

    Cook the Cabbage

    Stir in the broth, crushed tomatoes, chopped cabbage, spices and ham. Allow the soup to simmer (not boil) for 10-15 minutes or until the cabbage has reached your desired consistency. Then stir the bacon into the soup, and add salt and pepper to taste.

    • Reheating Instructions: To reheat, my preferred choice is heating on low on the stovetop. Stirring intermittently. However, if you’re in a hurry, this recipe reheats well in the microwave. Reheat in 30-second increments until heated to your desired level. To reheat from frozen, allow to thaw in the fridge overnight before reheating.
    • Refrigerator Storage: Allow to cool completely. Then, you can store this soup in an airtight container for up to 3 days in the refrigerator. We like to store leftovers in single serving containers so we can just grab and go!
    • Freezer Storage: This cabbage soup freezes well. After allowing to cool completely, freeze in a freezer-safe container for up to 3 months. This recipe provides 8 servings so I usually store in multiple containers so we don’t have to thaw it all at once.

    Tips and Tricks

    • Add some kick with pepper bacon or cayenne pepper. Pepper bacon is my personal favorite.
    • Personalize this soup with your preference of protein and/or vegetables. Add pulled pork, beef chunks, extra vegetables, or even potatoes just to name a few ideas!
    • Easily make this a vegetarian dish. Substitute the beef broth with vegetable broth and hold the bacon and ham. You will also need to use some olive oil (any neutral oil) to saute the vegetables.

    • Chicken: boneless skinless chicken breast are suggested, but tenderloins or boneless thighs will also work.
    • Bacon: an essential ingredient! Just use your favorite variety.
    • Vegetables: onion, celery, and carrots are used in this recipe. As written this dish is low carb and keto-friendly, but to reduce the carbs even further you can skip the carrots.
    • Ranch: for this recipe we we will be using Ranch seasoning, verses a liquid dressing.
    • Broth: use a good quality chicken stock.
    • Cream Cheese: full fat, softened cream cheese is suggested because reduced fat cream cheese does not melt as smoothly.

    Cook the Bacon

    In a large stock pot or dutch oven add the chopped bacon and brown until crispy over medium heat. When the bacon is crisp remove from the pot with a slotted spoon and set aside. Drain off all of the grease except two tablespoons.

    After 30 minutes check the chicken to see if it is fork tender. At this point remove the chicken from the pot and shred. While the chicken is out of the pot add the softened cream cheese, heavy cream and one cup of the cheddar cheese. Whisk the mixture until the cheese has melted and the soup has reached a nice creamy texture. Add the shredded chicken back to the soup and heat through.

    Yes. You will need to cook the bacon on the stove top ahead of time. Then add the vegetables (you don’t have to sauté) chicken, ranch, half the bacon and broth to the slow cooker. Cook on high 4 hours or on low up to 8 hours. Remove the chicken from the slow cooker and shred. Add the cream cheese, heavy cream and cheese and whisk until smooth. Add the chicken back to the soup.

    Is this soup gluten free?

    Yes! This soup is naturally gluten and grain free. It is also low carb and keto-friendly.

    How do I make sure the cream cheese melts?

    Make sure you soften the cream cheese ahead of time. This ensures it will melt smoothly. Whisk the soup well and you shouldn’t have any trouble.

    • 6 slices of bacon
    • 1 1/2 cup onion, chopped
    • 1 1/2 cup carrots, chopped

    • 3 cups chicken broth
    • 1/4 cup heavy cream

    Instructions

      1. Heat a large pot or dutch oven to medium heat. Add the chopped bacon and cook until crisp, remove with a slotted spoon and set aside. Drain off all of the grease except about 2 tablespoons.
      2. Add the onion, celery, and carrots and sauté until the vegetables are tender and the onions are translucent.
      3. Add the chicken to the pot, top with the ranch seasoning, half the cooked bacon, and chicken broth. Bring the mixture to a simmer, place the lid on the soup and reduce the heat to medium low.
      4. Allow the soup to cook 30 minutes, stirring occasionally. When the chicken is tender and cooked through remove from the pot and shred.
      5. While the chicken is on the cutting board add the heavy cream, softened cream cheese and one cup of the shredded cheddar cheese. Whisk until the cream cheese has dissolved. Stir the chicken back into the soup and serve immediately.
      6. Top with the remaining bacon and shredded cheddar cheese.

    Yes, you can! Allow this soup to cool completely and add to a freezer bag- I recommend using these bag rack holders to make the process much smoother. Brothy, creamy, cheesy, veggie-packed, they all have a home in my kitchen. Because I love so many soups, it was easy for me to embrace the keto substitutions… We do what we have to for what we love, right?

    The only thing lacking, though, were the garnishes. Where were my crunchy toppers? My carb-loaded dipping bread? My croutons?! Well, as you know, where there’s a will, there’s a way! So here’s a list of all the delicious, low-carb ingredients I’ve been relying on to take my keto soups to the master level! 

    Can I have soup on a keto diet?

    You bet you can! Of course, you can’t have ALL soups, but there are a ton of small changes you can make in recipes to make a soup keto-friendly! Instead of using potatoes, my favorite Keto Beef Stew uses turnips (you could use radishes or rutabaga, too) to lower the carbs. Even favorites that are normally packed with high-carb ingredients like chili can be made without while still being delicious… If you don’t believe me, just try this amazing Instant Pot No Bean Chili

    Here’s a list of the BEST Keto Soups you can save for chilly nights! Whether you prefer stovetop, slow cooker, or Instant Pot, it has something for everyone!

    Keto Soup Toppers to add crunch:

    • Keto Tortilla Strips (just cut a low-carb tortilla into strips and lightly toast)
    • Cheese Crisps (place small mounds of shredded cheese onto a silicone baking mat, then broil until melted and slightly browned around the edges)

I’m obsessed with the flavors of fall but even more so, I love the warmth that fall foods seem to give you from the inside out. Y’all know what I’m talking about, right? Fall foods are just so….comforting. When I decided to start my keto journey, it was earlier in the year. When fall came around, I knew I had to make my favorite fall foods keto friendly.

    I’ve made a Keto Chili, Keto Chicken Tenders, White Chicken Chili and Easy Keto Sausage Stuffing all succumb to my keto requirements- high on flavor, low on carbs. But we all know that ultimate fall favorite- Broccoli Cheddar Soup.

    Broccoli Cheddar Soup is, in my opinion, the perfect food. Filling, warm soup that melts in your mouth as you eat it? Perfection. And this Broccoli Cheddar Soup with Chicken is no exception.

    Ingredients for Keto Broccoli Cheese Soup

    The soup is naturally low-carb, vegetarian and keto-friendly. Also, this is a one-pot meal that comes together in about 20 minutes!

    • Butter
    • Vegetables: Onion, Garlic and Broccoli
    • Chicken Broth
    • Shredded Chicken
    • Cheese: Cream Cheese, Cheddar Cheese
    • Heavy Cream
    • Salt and Pepper to taste

    Ingredients

    • 2 pounds ground Italian sausage
    • 3 garlic cloves, finely minced
    • 1/2 cup green bell pepper, finely chopped
    • 1/2 cup onion, finely chopped
    • 1 (15 ounce) can fire roasted tomatoes, drained
    • 1 (7 ounce) can tomato paste
    • 1 (32 ounce) carton beef broth
    • 8 ounces cream cheese, softened and cut into small cubes
    • 1/4 cup heavy cream
    • 3 cups kale, stems removed and finely chopped
    • 1 cup shredded parmesan

    Instructions

    1. Heat a large stock pot or dutch oven over medium heat. Brown the Italian sausage, breaking it up as you go. Grain off any grease.
    2. Add the garlic, peppers and onion. Sauté 4-5 minutes until softened.
    3. Add the drained fire roasted tomatoes, tomato paste, and broth.
    4. Stir in the cream cheese and heavy cream. Reduce the heat to medium low and stir until the cream cheese is completely incorporated.
    5. Stir in the kale and allow the soup to simmer over low heat for 10 minutes. Stir in the parmesan just before serving.
