Last Friday I got a call to pack a bag and head back to my hometown. My sweet sister-in-law has been expecting her third child, and my new niece decided to make an appearance four weeks early! Saturday my family welcomed little Haddie Josephine and we are so thrilled. Mom and baby are doing really well.
Haddie is in the NICU because her little lungs aren’t quite developed yet, but she is making big strides every day. So this is a really exciting time for our family. I have been making some freezer meals and some meal prep type dishes to make life a little easier, and these Keto Sausage Cream Cheese Pinwheels happen to be perfect for keto meal prep! I also threw in some Keto Ham, Egg and Cheese Muffins this Keto Cheesy Chicken Bake for some easy meals!

What is the best keto dough for sausage pinwheels?
These little rolls make the perfect low-carb appetizer, breakfast, or even an easy dinner. This recipe uses a fathead-style dough which includes mozzarella cheese, cream cheese, almond flour, and ground flax seed. This dough is gluten- and egg-free and very low-carb, so it is perfect for keto meals.
I love this dough because it is so easy to work with. You can manipulate it without it tearing easily. I’ve made Keto Hot Pockets, these delicious Brie Bites, and Pizza Rolls with this dough.
Tips and Tricks for Fathead Dough
- Make sure the mozzarella and cream cheese is completely melted and smooth. You don’t want any little chunks remaining or it will mess with the consistency of your dough.
- Prep all of your ingredients ahead of time so you can work quickly. The dough is easy to work with and pliable when warm, but it can become difficult as it cools. Warm it by microwaving in 15-20 second increments (easiest method) or by heating it in a double boiler until it’s nice and malleable again.
- Don’t make any substitutions. Other grain-free and gluten-free flours have not been successful, so stick with the almond flour. Also, the gooey-ness and mild flavor of mozzarella truly makes it the best cheese for the dough’s texture and taste.
- If you don’t have ground flax seed, you can leave it out. However, I’ve found that (besides adding a great boost of fiber) it makes the dough less sticky and easier to work with.
- Because this dough is cheese-based, it does brown quickly. Feel free to cover with foil while baking if it’s getting browner than you like, but that hasn’t been much of an issue with these pinwheels.
How many carbs are in Keto Sausage Cream Cheese Pinwheels?
The net carbs will depend on how thick you slice your rolls. I felt the average person would probably slice them a little thicker and you would get 10 rolls per recipe. At 10 per recipe these come to 2 net carbs per roll.
My personal preference is to slice them a little thinner and get 12 out of the recipe, but I prefer a slightly crisper crust so thinner works. Just keep this in mind when calculating your carbs.
How should I store and reheat sausage pinwheels?
These should be refrigerated in an air-tight container and eaten within four days. To reheat, microwave in 30-second intervals until warmed throughout. If you like them crispy, you can also warm in an Air Fryer at 350 degrees for 3-4 minutes.
Are these good for meal prepping?
Yes, these work well for meal prepping! You can make these 3-4 days ahead of time, and then warm them when you are ready to eat. These can also be frozen for up to three months. If frozen, thaw in the refrigerator over night before warming in the microwave or Air Fryer or reheat from frozen in the oven.

Keto Sausage Cream Cheese Pinwheels
The perfect keto appetizer! Keto Sausage Cream Cheese Pinwheels are made with fat head dough and loaded with sausage and cream cheese! Just two net carbs per serving!
Ingredients
- 2 cups shredded mozzarealla cheese
- 2 ounces cream cheese
- 3/4 cup almond flour
- 2 tablespoons ground flax meal
- For the Filling:
- 1/2 pound cooked breakfast sausage, drained
- 3 ounces of cream cheese
Instructions
Preheat oven to 400
For the Rolls:
In a microwave proof mixing bowl combine the shredded mozzarella cheese and cream cheese. Heat in 30 second increments, stirring in between until completely melted. Add the almond flour and ground flax meal.
Mix the dough well until you have a soft ball
Between two silicone baking mats or parchment paper roll the dough into a rectangle roughly 12x9.
For the filling:
Combine the sausage and cream cheese.
Spread the sausage cream cheese mixture evenly on the dough.
Starting at one end roll the dough as tightly as you can into a log.
Slice into rolls about the width of two fingers, be careful not to slice them too thick because it will be difficult for the dough in the center to cook through.
Place the rolls on a greased baking sheet.
Bake 12-15 minutes until golden brown.
Notes
These are great with breakfast sausage or switch things up by using Italian sausage!

Could this be made with dair free cheese/ cream cheese and corm meal instead of flax meal?

Hi Kimberly I have never used dairy free cheese or cream cheese so I can’t so for sure. However, I don’t think the corn meal would work. If you don’t want to use flax meal sub additional almond flour in its place. I hope that helps!
