Season the chicken

Spray the inside of a 4-quart crock pot with cooking spray. Then place the chicken in the bottom of the dish and top with salt, pepper, Italian seasoning, garlic powder, paprika, and sun-dried tomatoes. 

Make the Alfredo sauce

Melt the butter in a small saucepan or skillet over medium-low heat. Add the garlic and saute for about 30 seconds. Add the white wine and allow the wine to simmer and reduce by half. This step takes about 5 minutes. Once the wine is reduced, add the heavy cream and parmesan and stir well. Allow the alfredo sauce to simmer for 5 minutes until it has thickened. 

Cook the chicken

Pour the sauce over the chicken and place the lid on the slow cooker. Cook the chicken on low up to 8 hours or on high up to 3 hours. (Remember, the cooking time in crock pots can vary tremendously. If your slow cooker runs high (brings things to a simmer on low) you will want to stick to a cooking time of no more than 5-6 hours.)

You can make this easy pulled pork recipe with only 3 easy steps!

  1. Combine the spices. Rub over the trimmed meat. Set in Instant Pot the saute function and add olive oil. Sear the pork on each side and remove.
  2. Add the vegetables to the Instant Pot and saute. Add the tomatoes and wine and scrape the bottom of the pan. Add the pork back to the Instant Pot and pressure cook for 15 minutes per pound- I cooked mine for 60 minutes, since I had a 4 pound Boston Butt.
  3. Allow the machine to manually release the pressure for 15 minutes. Shred the pork and drizzle with the leftover juice. Broil until the ends are crispy, add salt and pepper and serve!

Instructions

  1. Combine the spices and set aside. Trim the fat from the pork and rub the spices over the meat. Turn the saute function on on your Instant Pot and add enough olive oil to lightly coat the bottom of the skillet. Sear the pork on each side until golden brown. Remove from the Instant Pot and set aside.
  2. Add the onion, celery and garlic to the Instant Pot. Saute for 2-3 minutes. Next, add the tomatoes and wine. Scrape the bottom to deglaze the pan.
  3. Add your pork back to the Instant Pot and secure the lid. Pressure cook 15 minutes per pound (60 minutes for a 4 pound butt).
  4. When the cooking has ended, let the machine manually release pressure for 15 minutes.
  5. Shred your pork, drizzle with a little bit of the juice and broil until the ends are crispy, but be sure to watch closely. Add salt and pepper to taste.

Notes

You can use the leftover juice from the Instant Pot as a marinara sauce. Just blend with an immersion blender.
