These indulgent chaffles are so easy to make and freeze very well, making them perfect for keto meal prep. They also only have about 2 net carbs, so you can enjoy a sweet meal guilt free!

These chaffles are full of flavor. The warm cinnamon makes every bite so delicious, and the sugar free cream cheese icing is the perfect topping. How to make chaffles with cinnamon

First, preheat your waffle maker. Beat your eggs and add the rest of the ingredients- mix well. Spray your waffle maker with nonstick spray and add your mixture. I recommend filling until about 2/3rd of the way full, or about 1/8 of a cup. Cook until the steam stops coming out of the waffle maker- for me, this was about 5-6 minutes. Repeat with the remaining mixture. This does make a softer chaffle, but you can toast them or put them in the Air Fryer if you prefer a crispier texture.

For the icing, add your cream cheese, heavy cream and powdered swerve into a blender and blend until smooth. Next, combine the cinnamon and monkfruit. Top your cinnamon chaffle with the icing and the monkfruit mixture.

Do you taste the cheese?

No, you definitely do not taste the cheese. I know it sounds like an odd combo, but trust me! These chaffles are great! If you new to the world of chaffle this Basic Chaffle recipe is a great way to experiment. These are great eaten as traditional waffles, as bread for sandwiches, or make a great appetizer! 

Do chaffles get crispy?

Savory chaffles, like Jalapeno Cheddar Chaffles, tend to crisp up as they cool. Since these cinnamon chaffles have more cream cheese than mozzarella, they stay softer than traditional chaffles. To make your low carb chaffles crispy, just pop into your toaster or Air Fryer!

What to serve with chaffles

These are the perfect breakfast for a buffet or whenever you have company. I served mine with these Keto Cinnamon Frappuccinos, but I also think a Keto Caramel Frappuccino would be so good with these. Serve with Air Fryer Sausage, Sausage Cheese Keto Egg Muffins, Easy Frittata or a Breakfast Chaffle Bowl!

Ingredients

Chaffle Batter

  • 3 eggs
  • 1/4 cup almond flour
  • 3/4 cups shredded mozzarella
  • 2 ounces cream cheese
  • 2 tablespoons Monkfruit Sweetener
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Cream Cheese Frosting

  • 2 ounces cream cheese
  • 1/2 cup confectioners Monkfruit sweetener
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream (use as needed to thin the frosting)

Instructions

    1. Preheat your mini waffle maker. Spray with oil before adding chaffle batter.
    2. Whisk your eggs, then add the shredded cheese, softened cream cheese, almond flour, baking powder, sweetener, cinnamon, and vanilla extract. Mix until the cream cheese is smoothly incorporated throughout.
    3. Fill the waffle maker 2/3rd full (just a little more than 1/8th a cup). Don't overfill!
    4. Allow to cook 4-6 minutes or until waffle is crisp.

    To make the Cream Cheese Frosting:

    1. Combine the softened cream cheese, confectioners monkfruit, vanilla and heavy cream as needed until it has reached your desired consistancy.

This recipe was the result of a happy accident, don’t you love when that happens? I had been working on some strawberry cheesecake fat bombs for Valentine’s Day and also happened to be eating my basic vanilla chia seed pudding for breakfast when I realized if I combined the two I would have an amazing parfait! 

This recipe has the benefits of a fat bomb but by adding the chia seed pudding layer it really stretches this into a nutritious snack that is quite filling! It also makes a great meal prep option because it can be made in advance. 

What ingredients Keto Strawberry Cheesecake Parfaits?

This recipe requires only a handful of basic ingredients and is highly customizable based on your personal preferences. The ingredients you need are:

  • Unsweetened Almond Milk
  • Chia Seeds
  • Vanilla Extract
  • Confectioners Swerve Sweetener
  • Cream Cheese
  • Strawberries
  • Heavy Cream (can sub almond milk if you want to lower the fat content or do not have it)

How do you make Keto Cheesecake Parfaits?

This easy low carb parfait has two components. The base is a creamy no bake strawberry cheesecake layer that is made by combining cream cheese, strawberries, confectioners swerve heavy cream and vanilla extract. To make this simple I do not drag out my mixer I just add the ingredients to my small blender and pulse until the mixture is creamy. 

The second layer is basic vanilla chia seed pudding. This is my go to recipe that I have most mornings. It is simply unsweetened almond milk, chia seeds, swerve confectioners and vanilla extract. I love this combination because it is so basic. It has a mildly sweet but vanilla flavor that I love and it works great with toasted coconut, chopped nuts or berries. 

As with any chia seed pudding you must allow the mixture to set and absorb the liquid. I find that stirring the mixture vigorously occasionally speeds up the process tremendously. 

To assemble the parfaits I use my favorite 7 ounce mini Wreck jars. This makes three servings so spoon the strawberry cheesecake layer among 3 jars and top with the chia seed pudding. If you wish, you can add whipped cream on top. I like to use the Rediwhip Almondmilk version, it is very low in carb and handy to keep in the fridge.

What are some other easy keto snacks?

My favorite keto meal prep are these easy sausage egg and cheese bites. They have less than one net carb each. You can easily make a batch over the weekend and have a delicious grab and go breakfast or snack all week. I also love this Lemon Chia Seed Pudding when I want something sweet and tangy. Ingredients

  • Vanilla Chia Seed Pudding Layer:
  • 1 cup almond milk
  • 3 tablespoons chia seeds
  • 1 tablespoon confectioners Swerve sweetener
  • ¼ tsp vanilla extract
  • Strawberry Cheesecake Layer:
  • 3 oz cream cheese
  • ½ cup sliced strawberries
  • ¼ cup confectioners Swerve sweetener
  • 2 tbsp heavy cream (sub 1 tablespoon unsweetened almondmilk if you don't have or need to cut the fat content)
  • ½ tsp vanilla extract

Instructions

  1. Combine all the Vanilla Chia Seed Pudding ingredients and stir vigerously for 1 minute.
  2. Chill in the fridge overnight or for at least 30 minutes until liquid as been absorbed and the chia seeds are inflated. TIP: Stirring vigerously occasionally speeds up this process significantly.
  3. For the Strawberry Cheesecake Layer: Combine the ingredients in a small blender or food processor, pulse until smooth and creamy.
  4. In three small 7 ounce jars spoon equal amounts of cheesecake layer into each jar. Top with chia seed pudding.

Ingredients in a Peppermint Mocha Frappuccino 

  • Strongly Brewed Coffee
  • Unsweetened Almond Milk
  • Heavy Cream
  • Sweetener of choice (I used swerve to keep this recipe keto) 
  • Cocoa Powder
  • Ice
  • Peppermint Extract

Can I Omit the Coffee? 

Yes! If you’d like to make a classic low-carb peppermint frappuccino, I recommend following this recipe instead. It still contains peppermint extract and cocoa powder, but there’s no caffeine or coffee in it. 

Can I Use Another Non-Dairy Milk?

This recipe simply could not get an easier. You just need a good blender! 

Once you combine the coffee, almond milk, cream, sweetener, cocoa powder, ice and peppermint extract, just blend until smooth.

You can top your peppermint mocha frappe with extra whipped cream, sugar-free chocolate chips, or a crushed sugar-free peppermint for a real treat!

Tips for Making a Sugar-Free Frappuccino 

  • The one thing this recipe does require is a good strong cold coffee. I like to make a batch of iced coffee to have in the fridge, but if you prefer to do small batch you can brew extra strong coffee or espresso the night (or a few hours) before and let it chill in the fridge. 
  • I made my copycat Starbucks peppermint mocha frappuccino keto-friendly and sugar-free, but you’re welcome to use regular sugar instead of a sugar-free alternative if desired. 
  • I recommend enjoying your keto frappuccino right away, as it doesn’t keep well in the freezer.
