Summer desserts should be easy, simple, and require no baking! These No Bake Cheesecake Parfaits fit the bill perfectly! This is a treat I have been taking to cookouts for years. In my opinion, it is the perfect party food because it is easy, requires very few ingredients and you can double or even triple the recipe if needed. It is also low carb, keto-friendly, gluten and grain free so it fits a wide range of dietary restrictions. Though these treats look quite impressive they are actually incredibly simple to make. I have documented the entire process below so you can see exactly how to make the best no bake cheesecake.

  • Monkfruit Sweetener: this is a low-carb, sugar-free sweetener.
  • Sour Cream: this balances the cream cheese and sweetener as well as creates a rich and creamy texture.
  • Heavy Cream: no substitutions for this ingredient, this is responsible for the volume in these cheesecake jars. When using an electric mixer heavy cream becomes stiff and creamy like whipped cream. 
  • Vanilla Extract: adds richness and depth to the dish. 
  • Berries: I use strawberries and blueberries. You will need this to make the sauce as well as fresh berries. 

How to Make No Bake Cheesecake

In addition to the ingredients listed above you will need a few mixing bowls, a saucepan for the berry sauce, and jars for serving! To make the best no-bake cheesecake just follow the instructions below:

Make the Homemade Berry Sauce

To make homemade berry sauce you need to add strawberries, confectioners monkfruit, and vanilla in a saucepan. Heat the mixture over medium-high heat until it begins to simmer. Stir the mixture and reduce the heat to medium for approximately 10 minutes, stirring occasionally. When the mixture has reduced and begun to thicken remove from heat. Allow the sauce to cool completely before adding to the cheesecake mixture.

Mix the Cheesecake Ingredients

In a medium to large size mixing bowl add the softened cream cheese and sweetener. Use an electric mixer to cream the mixture until it is smooth. Next, add the sour cream and vanilla extract and beat the mixture again until combined. The final step is to add the heavy cream and beat the mixture until it has doubled in volume and is thick, fluffy, and creamy like the second photo above.

Assemble the Cheesecake Parfait

Layer the cheesecake jars as you see in the photos. Begin by adding the cheesecake mixture, then the cooled strawberry sauce, and fresh berries, and repeat! I used these jars and it fills 6 very full jars. 

Serve

After assembling these jars chill for at least 1 hour. You can serve it with extra strawberry sauce or whipped cream on the side, but personally, I think these are delightful as is! One thing to consider is as written this makes 6 servings. This is a very indulgent treat, it is definitely possible to put this in smaller tasting cups to stretch this to 12 servings.

Storage

Store these jars in an airtight container in the fridge. This cheesecake parfait can be stored for up to 4 days, although I do find the fresh berries in the jars tend to soften after 2 days. 

Are Strawberries Keto?

Fruit is a controversial topic among keto dieters. The truth is, it can be confusing because fruit does contain carbohydrates as well as natural sugars. Fortunately, most fruits contain fiber which brings the net carb count down. For strawberries specifically, this is a keto-friendly fruit if you watch your portion sizes. Tips and Tricks

  • Make it your own, add cocoa powder, peanut butter powder or instant espresso powder for different flavor options
  • Use a different low-carb fruit such as blackberries or raspberries, just remember if you are sensitive to the seeds you will need to strain the sauce mixture.
  • Use softened cream cheese for the best results. Cold cream cheese is harder to blend and will not incorporate with the other ingredients as well.
  • Make the strawberry sauce first and allow it to cool as you make the cheesecake. 
  • Use an electric mixer, this can be a handheld or stand mixer. It will be very difficult to whip the cream cheese and heavy cream as well as you need to for the correct consistency.

  • Strawberries – Cored and halved for easy blending. Taste your batch first–If the strawberries are already on the sweeter side, you may want to start with a bit less simple syrup, especially if you’ve been keto or sugar free for long.
  • Tequila – This is what gives that great margarita flavor. If you prefer to make a batch without alcohol, replace with water to keep it low carb or orange juice to add more flavor. Water with sugar-free orange flavoring would work great as well.

These easy keto-friendly popsicles are simple and quick to make! You’ll need a blender, 6 popsicle sticks, 6 5-ounce cups, and a freezer. Here’s a step-by-step guide for making this strawberry margarita recipe.

Blend margarita

Place all of your ingredients in the blender and give it a whirl! You just want to make sure there are no big chunks of strawberry; the smoother the margarita, the easier the popsicles are to eat.

Pour margaritas

Line up 6 5-ounce cups and pour about 4 ounces of margarita into each one. Get these as even as you can so that they will all be frozen at the same time when you’re ready to serve.

Assemble lime popsicle sticks

Cut and discard the ends of the limes. Cut each lime into three slices (about 1/4″ thick, depends on the size of your limes). Place a slice on the cutting board, then stab the popsicle stick through the center. Push it in 1 1/2-2″, then put in one of the margarita cups. The lime should sit right on top of the margarita. Continue until all cups have lime-skewered popsicle sticks.

Freeze

Transfer cups to the freezer and freeze for 4-6 hours. Once frozen solid, you can serve immediately! If the popsicle doesn’t pull out immediately, gently rub the outsides of the cup with your hands to warm it slightly, then lightly tug the popsicle again.

Store

These popsicles will last 3-6 months, but they have the best flavor and texture the sooner you eat them. If you plan to keep them longer than 2 weeks, place them in a freezer bag to protect them from other freezer smells in the freezer.

Tips and tricks for the BEST popsicles with alcohol

  • Get the right ratio – You want to have 4 or 5 times as much non-alcoholic liquid as you have alcoholic liquid so that the popsicle will freeze. For this recipe, there 2-2.5 cups of pureed strawberries, lime juice, and simple syrup to just over 1/2 cup of tequila.
  • Test before freezing – Strawberries can range from super sweet to a bit tart, so you want to taste test the margarita before pouring and freezing. Add more lime juice if it’s too sweet, more simple syrup if it’s too tart.
  • Salt just before serving – Salt is tricky because it will cause the popsicle to melt much faster. If you want to salt them, I recommend placing one side of the popsicle (out of the cup) in a plate of salt and then serving immediately. We enjoyed these without salt, so feel free to skip this if you’re worried about melty messes.
  • Change it up – This is a great base recipe that can be tweaked for tasty popsicles no matter your season or vibe! Swap out the strawberries for raspberries or blueberries, maybe use vodka or rum instead of tequila, or use lemon juice instead of lime juice. Infuse your simple syrup (this post has great tips for spicy, fruity, or herby syrups). If you’re watching the carbs, be careful when switching fruits as most have more sugar than strawberries.

This drink is a combination of fresh lime juice, a delicious sugar free strawberry rose syrup, sweet strawberries, vodka and soda water! I love this keto cocktail because it’s perfect for almost any occasion- a bridal shower, brunch, picnic, family get-together–really, anything!

This sugar free limeade has a delicate floral aroma that is complimented by the strawberries. Add in the vodka and soda water and this tastes just like a limeade from your favorite restaurant, but without the carbs! You can enjoy this low carb alcoholic drink for only 3.2 net carbs! And if you aren’t a fan of vodka, omit it and add more soda water instead! This drink is incredibly delicious with or without alcohol.

Muddling means to gently mash ingredients in a cocktail. So for this vodka limeade, you will muddle together the strawberries, lime juice and syrup. You can use a cocktail meddler to make the process a little smoother.
 

Substitutions for this low carb alcoholic drink

  • If you want to make this a vodka lemonade, swap out the lime juice for lemon juice!
  • You can switch out the rose syrup for this Blueberry Lavender flavor, then muddle blueberries for a fun blue/purple drink!
  • If you don’t like vodka or want to make this a mocktail, leave out the vodka. This cocktail is still incredibly delicious without the alcohol. Just replace the amount with soda water.
  • To cut more carbs from this drink, don’t add the strawberries. The syrup has a lovely strawberry flavor on its own… It’s not as bold this way, but it’s still tasty.
  • Some people don’t like the strawberry pieces in their drink. Instead, make the drink in a shaker instead of your cup, then strain before pouring into your glass.

  • Butter: I use salted butter, but unsalted will also work. 
  • Almond flour- I have had a lot of success with Anthony’s brand.
  • Keto confectioner’s sweetener- I use Swerve or Monkfruit.
  • Cream cheese: room temperature cream cheese creates the creamiest cheesecake layer. 
  • Egg yolk: size large egg is recommended. 
  • Vanilla extract: a good quality extract makes all the difference in this dessert! 
  • Strawberry sauce: prep this ahead of time!
  • Pecans: crushed, halves or whole, it doesn’t matter because we blend them to make the crumble topping.

How do you make easy keto Strawberry Cheesecake Bars?

First, combine butter, almond flour and swerve in a bowl and place into a lined pan. Bake the crust for 7 minutes. Second, combine the cream cheese, egg yolk, sweetener and vanilla with a mixer and mix until smooth. Spread over your crust. Add the strawberry sauce over the cheesecake layer.

For the topping, combine butter, almond flour, pecans and sweetener to a blender or food processor. Pulse until it has a crumb like texture and sprinkle over the sauce layer. Bake for 18-20 minutes and allow to cool completely before serving.

You will need to make this low carb strawberry sauce ahead of time. It is so easy, you just need fresh strawberries, confectioners keto-friendly sweetener and vanilla extract. You will want to opt for the strawberry sauce verses just adding fresh strawberries to your cheesecake bars because fresh fruit will add too much moisture. If you go that route you will have very soggy bars. 

Just follow the steps and simmer the strawberries until you get a lovely thick sauce. Allow the sauce to cool completely before assembling your cheesecake bars.

Are strawberries keto?

Yes! A half a cup of strawberries is only 4.3 net carbs. Strawberries do contain natural sugars, so they do need to be enjoyed in moderation. But strawberries also contain antioxidants, are high in fiber as well as vitamin C, so they are a very nutrient rich food.

How to store Keto Cheesecake Bars

Place in a plastic or glass container with an airtight lid and keep in the fridge. These bars will remain fresh for up to a week. If you would like to freeze them, then the bars will be good for up to two months in the freezer.

If you are planning on freezing these bars, wrap each bar in plastic wrap and then wrap again in aluminum foil- this prevents freezer burn. When you are ready to thaw your bars, let them sit at room temperature for 2-4 hours in the fridge overnight.

Tips for the best low carb Strawberry Cheesecake Bars

  • Use an 8×8 pan. If you use a larger pan such as a 9×9 or pie pan your bars will be too thin. 
  • Allow the crust to cool completely before adding the cheesecake layers. It is a soft, buttery crust and if you spread the cold cheesecake over the warm crust before it cools and sets, your crust will tear. 
  • For the best cheesecake texture, use room temperature cream cheese and eggs. 
  • Line the bottom of the pan and allow the parchment paper to hang over the sides. After bars have cooled, lift the entire batch out by carefully pulling up the liner.
  • For pretty, clean slices, place in the freezer for 15 minutes before slicing.

Pecan Crumble

  • 1 tablespoon Keto friendly confectioners sweetener such as Swerve or Monkfruit

Instructions

    1. For the Crust: Preheat oven to 350 degrees.
      Line an 8x8 pan with foil or parchment paper.
      Combine the melted butter, almond flour and sweetener in a small bowl and press into the lined pan.
    2. Pre-bake crust for 8 minutes, it should not be firm just slightly beginning to brown around the edges.
    3. Remove crust and allow it to cool completely.
    4. For the Vanilla Cheesecake Layer: Using an electric mixer or small blender combine the cream cheese, egg yolk, sweetener and vanilla extract until smooth.
    5. Spread the cheesecake layer evenly over the cooled crust.
    6. For the Strawberry Layer: Spread the prepared low carb strawberry sauce over the cheesecake mixture.
    7. For the Pecan Crumble: Combine the cold butter, almond flour, pecans and sweetener in a small blender or food processor and pulse until it resembles a crumb like mixture. Sprinkle over the berry layer.
    8. Bake 22-26 minutes until the top is lightly browned and the bars have set.
    9. Allow bars to cool completely before slicing.

Today I’m sharing one of my favorite low carb, no bake desserts! Odds are, you have probably enjoyed a Cheesecake Stuffed Strawberry at some point. They are delightful little treats that are often served at parties or potlucks. Fresh, juicy strawberries are packed with a creamy vanilla cheesecake filling. In this instance, the dessert is made with a keto-friendly sweetener so it is perfectly low carb!

Ingredients for Cheesecake Strawberries 

As always, this is a quick overview of the ingredients you will need, for the complete recipe just keep scrolling. To make the simple stuffed strawberries, all you’ll need is: 

  • Fresh strawberries: choose large strawberries for the best results.
  • Cream cheese: full fat as well as reduced fat cream cheese work in this recipe.
  • Confectioners sweetener: Confectioners Monkfruit sweetener if keto, regular confectioners sugar if not low carb
  • Vanilla extract

Can I Use Low-Fat Cream Cheese?

Yes! Low-fat or lite cream cheese will work so long as it’s the kind that comes in a brick (not in a tub).  Alternatively, if you are dairy free readers have reported good success with dairy free cream cheese substitute in this recipe.

How to Make Cheesecake Stuffed Strawberries 

  1. First, you start by prepping your berries. I opted to slice off a teeny tiny portion of the bottom of the berry so they would sit flat, then lopped off the top of the strawberry.
  2. Then, you need to hollow it out. I find this is easiest with a small metal teaspoon. 
  3. Next, combine the  8-ounce block of cream cheese with keto-friendly powdered sugar and vanilla extract until smooth and creamy. 
  4. Then I just scraped all of the filling into a piping bag and filled the strawberries as full as I could! If you don’t have or don’t want to pipe the filling in, no worries just spoon it, shove it, and throw it in there. It will all taste the same.

Can I Prep These in Advance? 

 If you plan on taking these somewhere, I recommend setting them in the freezer for 15-20 minutes before you go. It isn’t long enough to actually freeze them but it helps the cheesecake filling set so if they get knocked around while you are transporting them it doesn’t totally ruin them.

Tips for Cheesecake Strawberries 

  • To hollow out the berries, I tried doing it with a knife but found it was much easier, prettier, and faster to use a small measuring spoon.
  • I do think you have to be a little careful when preparing the berries because if you get carried away you will have no strawberry left. So, whittle them away with caution. 
  • I found the best method is to prep all your berries, set them aside, make your filling, then fill. So basically assembly line style. This would go even faster if you had someone else helping you.

  • 2 pounds large fresh strawberries
  • 8 ounces cream cheese, room temperature
  • 3/4 cup Monkfruit confectioners sweetener
  • 1 1/2 teaspoon vanilla extract

Instructions

    1. Wash strawberries and cut off the tip so they will sit on their own.
    2. Remove the top of the berry and scoop out a bit of the inside. I used a small measuring spoon.
    3. Using a stand mixer or a mixing bowl and spatula, combine the cream cheese, sweetener, and vanilla until completely incorporated and it's the consistency of frosting.
    4. Pipe or spoon the cream cheese filling into the strawberries.

  1. In a blender or food processor combine the almond flour, cream cheese, eggs, sweetener, vanilla, strawberries, baking powder and salt. Blend until smooth.
  2. Heat a greased skillet or griddle to medium heat, when the skillet is hot and the butter is completely melted add the batter to the skillet, about 1/4 cup at a time.
  3. Do not flip until little bubbles form in the center of the pancakes indicating they are ready to be flipped.
  4. Repeat until all of the batter has been used, adding butter to the skillet as needed
