Foil packs were a summer staple in our household growing up. It was always served as an assembly line, there would be a protein, various veggies, and sauces and everyone made their own creation, sealed up their parcel, and tossed it on the grill. It was a fun and easy way to do dinner while camping, and also works really well for entertaining.

Over the years I’ve stumbled across a few incredible flavor combos that deserve to be shared, this is one of them! Below you will a step-by-step guide to making the best steak foil packs. And if you’ve never attempted them before, don’t worry this is super easy!

Ingredients for Steak Foil Packs

As always, this is a quick overview of the ingredients needed to make the best steak foil-pack dinner! For the complete, printable recipe scroll to the recipe box below.

  • Steak: I suggest using sirloin steak cut into 2-inch pieces.
  • Avocado Oil: oil is used in the homemade steak marinade. I recommend avocado oil over olive oil due to the high smoke point. If you only have extra virgin olive oil it will work.
  • Soy Sauce and Worcestershire Sauce: use low-sodium options if you can find them. This is used in the steak marinade and adds depth and flavor.
  • Garlic: freshly minced garlic is best.
  • Mushrooms: any variety will work, if you use large mushrooms you will need to halve them so the cooking time matches the steak.
  • Steak Seasoning: this is common and can be found in your spice aisle, use any brand you prefer.
  • Fresh thyme: optional, but adds flavor and color to the finished dish.

How to Make Steak Foil Packs

In addition to the ingredients listed above you will need foil and a grill! Follow the step-by-step guide below to learn how to make homemade steak marinade and a delicious foil pack!

Marinade the Steak

Combine the avocado oil, soy sauce, Worcestershire sauce, and minced garlic. This is a delicious steak marinade that is salty, tangy, and delicious. You will need to marinate the steak for the best flavor and texture. I know this is an extra step that you have to think of in advance, but it only takes a few minutes and greatly improves the flavor of the dish. For best results marinade the steak for 8-24 hours.

Add the Mushrooms

After the steak has soaked in the marinade at least 8 hours remove it from the fridge. Add the washed mushrooms to the steak and marinade and toss to coat. This ensures the mushrooms have the same excellent flavor as the steak. It is not required to allow the mushrooms to sit and marinate in the mushrooms because it will alter the texture. Simply toss to coat.

Assemble the Foil Packs

Tear off four 12-inch x 12-inch squares of foil. Divide the steak and mushrooms among the four sections of foil. Important! Reserve the remaining steak marinade from the bottom of the bowl. You will need it in just a second.

Sprinkle 1/2 teaspoon of the steak seasoning over the steak and mushrooms and drizzle with 1 tablespoon of the reserved steak marinade.

Fold the Foil Packs

Fold the foil packets by bringing 2 sides together and folding them over, then closing the ends. You want to leave a little bit of room for air to circulate so be sure you aren’t closing the package so tightly that it prevents it from cooking evenly.

Grill

Heat a grill to medium-high heat, approximately 400 degrees F. Once the grill is hot carefully add the foil packs seam-side up to the grill. Grill the packets 15-20 minutes, until the steak has cooked to your preference. For me, 18 minutes of cooking time gave me medium rare steak, this will be different depending on your grill and the thickness of your steak. Carefully remove the packets from the grill and allow them to rest for 5 minutes.

Serve

This foil pack can certainly be considered a complete meal. Just garnish with a little fresh thyme and you are all set! If you’d like to add a side dish or two to round things out here are some ideas:

Storage and Reheating

Transfer any leftovers to an airtight container and store them in the fridge for 2-3 days. Reheat in the microwave in 30-second increments until warmed through.

Do I have to marinate the steak?

Yes, you need to marinate the steak. Steak tenderizes as it marinates and improves the texture as well as the taste. The marinade only takes a minute to whip up and it is worth the effort!

Is this recipe gluten-free?

If you use gluten-free steak seasoning and soy sauce this recipe is gluten-free.

Can I make this without foil?

If you wish to skip the foil you will need to prepare the ingredients as directed but instead of placing them in a foil pack thread them onto skewers. Cook the skewers about 3 minutes on each side on a 400 degrees grill, or until the steak reaches your desired doneness.

What cut of steak should I use?

I use a sirloin steak, cut into 2-inch pieces.

How to fold a foil pack?

You will close the foil pack like a parcel. Start with a square section and bring opposite sides of the foil together and fold down. Take the remaining ends and fold them closed. Leave enough room in the packet so air can circulate.

  • 2 lbs top sirloin steak, cut into 2-inch pieces
  • ½ cup avocado oil
  • ⅓ cup low-sodium soy sauce
  • ¼ cup Worcestershire sauce 
  • 8 garlic cloves, minced
  • 16 oz mushrooms, (halved if large)
  • 2 tsp steak seasoning
  • Fresh thyme, optional for garnish 

Instructions

    1. In a large bowl, combine the steak pieces, oil, soy sauce, Worcestershire sauce, and minced garlic. Cover and marinate for at least 8 hours. 
    2. Heat the grill to medium-high heat. Lay out 4 large pieces of aluminum foil on your counter or work surface. 
    3. Uncover the marinaded steak and add the mushrooms, tossing to coat in the liquid. 
    4. Divide the mixture evenly between the 4 pieces of aluminum foil, reserving the liquid at the bottom of the bowl. 
    5. Add 1 tbsp of the reserved marinade to each foil packet, and sprinkle each foil packet with ½ tsp steak seasoning. 
    6. Fold the foil packets by bringing 2 sides together and folding them over, then closing the ends.
    7. Grill the packets for 15-20 minutes, until the steak is cooked per your preference. For my grill, it took 18 minutes for the steak to reach medium-rare consistency. Remove the packets from the grill, and allow them to rest for at least 5 minutes. 
    8. Open the packets, garnish with fresh thyme, and serve!

This flavorful Chimichurri sauce is a cinch to make in a food processor and you will want it on everything!

  • Flank Steak: for this recipe, I suggest a flank steak between 2.5 -3 pounds.
  • Oil: a neutral oil such as canola, olive, or avocado oil.

  • Lime: you will need the juice and zest from the lime.
  • Cilantro: you will need fresh cilantro, not dried.

How to Cook Flank Steak

Combine the marinade ingredients in a large container or gallon ziplock bag. Add the steak and toss to coat. Refrigerate overnight, or for at least 8 hours. This step is absolutely imperative, you have to marinate flank steak for the best taste and texture. Flank steak can be tough and if you marinate it properly it tenderizes the meat nicely and will result in a much better dish.

Make the Chimichurri

Add all chimichurri ingredients to a food processor or high-speed blender and pulse until smooth and well combined. Do a quick taste test and add salt and pepper to your liking. Transfer to a jar or container and refrigerate until ready to use.

Grill the Steak

Oil a grill pan or outdoor grill, and preheat to medium-high heat. Grill the flank steak for 8-9 minutes on each side. The cook time is determined by your preference. The most reliable way to monitor your steak is to use a meat thermometer to ensure it has reached your preferred level of doneness. After you remove your steak from the skillet or grill, remember that the temperature will rise a few degrees while resting. Here’s a simple guide to temperatures and doneness:

  • Medium Rare: 135 degrees F or 57 degrees C
  • Medium: 145 degrees F or 63 degrees C
  • Medium Well: 150 degrees F or 66 degrees C
  • Well: 160 degrees F or 71 degrees C

Serve

Remove the steak and set it on a cutting board for at least 10 minutes to rest. This is important because you want to give the juice inside the meat a chance to settle. Storage

Odds are you won’t have any leftovers of this delicious, juicy steak! But just in case you do store leftover steak in tightly wrapped plastic wrap or in an airtight container. Leftover steak can be stored in the refrigerator for up to three to four days. Be sure to store the chimichurri sauce in an airtight leftover container separately from the steak.

Reheating

Steak will dry out quite easily when reheating. It is best to reheat it low and slow to prevent it from being dry and tough. Turn your oven to 275 degrees and place it on a baking sheet and cover it with foil. Heat for 15 minutes, then 5 additional minutes at a time until it has warmed through.

Tips for the Best Flank Steak with Chimichurri

  • MARINATE: you absolutely must marinate a flank steak, there just isn’t a way around it. This cut of meat needs to be marinated to improve the overall taste and texture. Remember, marinades are not just for flavor, they also tenderize the meat.
  • TEMPERATURE: check the temperature chart above and use an instant-read meat thermometer to make sure your steak is perfectly cooked.

The meat is unbelievably tender, and the garlic flavor is strong (but not too strong!). The meat is seasoned with fresh herbs and a kick from some chili flakes, and it goes without saying that there’s a lot of butter.

This recipe also has a secret ingredient: soy sauce. It might seem unconventional, but the soy sauce adds a strong umami flavor to the beef. It makes these juicy keto steak bites even more irresistible. And did I mention how quick and easy this recipe is? Gourmet steak has never been so simple to make at home. You’ve got to give this recipe a try.

Sear the Steak

The first step is to heat a large skillet over medium heat. Add the butter and allow it to melt completely. Add the steak cubes to the skillet, being careful not to overcrowd them. Cook the steak undisturbed for 2 minutes, then use tongs to carefully flip each piece of steak over. Cook on the other side for 1-2 minutes, until the steak has good color. Remove from the skillet and set aside.

Make the Sauce

Reduce the heat to low, if you feel the skillet is still quite hot remove it from the heat entirely for a few minutes to allow it to cool. Next, add the rest of the butter, along with the garlic, herbs, chili flakes, and soy sauce. Sauté for 1 minute, making sure not to burn the garlic.

This is one of my favorite recipes, and it’s so easy to make. Here are a few tips for making it perfect every time.

  • Use fresh garlic. As the name would suggest, garlic is one of the stars of this recipe. Because of that, it’s really important to use high-quality garlic. Always use fresh garlic for this recipe, instead of pre-minced or pre-peeled garlic. 
  • Don’t overcrowd. When searing the steak bites, make sure you don’t overcrowd them. You don’t want the cubes of beef to be too close together, or the meat won’t be able to get a good sear. If you have too many cubes of steak to cook in the skillet, then cook in batches. Once the meat has been seared, you can add it back to the sauce without worrying about crowding. 
  • Get a good sear. The best way to make steak taste good is to get a good sear on the meat. If your steak cubes don’t have a golden brown sear, they won’t taste very good. Make sure your skillet is hot enough, and that you cook your steak long enough to get a great sear on it. 
  • Pick your doneness. It’s important to always cook steak to the doneness that you like. The best way to do this is to use an instant-read meat thermometer to see what the internal temperature of the steak is. Cook the steak bites to 130F for medium rare, 140F for medium, 150F for medium well, and 160F for well done.

How to make Surf and Turf?

You won’t believe how simple this recipe is. First, just combine all of your ingredients in a large bowl and coat with olive oil and your seasonings. Heat a large skillet or griddle to medium high heat and add nonstick spray. Add your seasoned ingredients to the hot skillet.

Try to align everything in one layer, if you can. Cook for three minutes, stir and then cook for an additional 3-4 minutes, or until the shrimp is pink and the veggies are fork tender.

Ingredients

  • 1 pound steak tips, or 1 inch cubes of your favorite cut
  • 1 pound thawed shrimp, peeled and deveined
  • 2 cups zucchini, sliced
  • 1 cup asparagus, sliced
  • 1 cup red bell pepper, chopped
  • 1/2 cup red onion, chopped
  • 1 tablespoon minced garlic
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons Cajun seasoning*

Instructions

    1. Combine all of the ingredients in a large bowl and toss with olive oil and seasoning.
    2. Heat a large skillet or griddle to medium heat. Spray with cooking oil. Add the meat and veggies to the skillet, trying to place everything in a single layer if possible.
    3. Cook the veggies 3 minutes without tossing, stir and cook an additional 3-4 minutes until the shrimp is pink and cooked through and the vegetables are tender.

This keto Beef and Broccoli recipe is so easy and delicious! Tender flank steak is sliced thin and seared to seal in the flavor, which is then tossed with a sweet stir fry sauce and broccoli. The sauce is made in the same pan as the steak, making this a one pan meal!

Beef and broccoli is a Chinese-American dish, and it is thought to have originated in San Francisco. Usually, beef and broccoli uses cornstarch and sugar in the sauce, but my keto beef and broccoli recipe uses monkfruit. This gives the recipe the exact same flavor, but cuts way down on the carbs.

Ingredients for Beef and Broccoli

  • Flank steak: skirt steak will also work in this recipe if you prefer. Cut the steak against the grain.
  • Sauce ingredients: ginger, garlic, sesame oil, Chili garlic sauce, low sodium soy sauce, Brown sugar monkfruit, broth
  • Fresh Broccoli florets
  • To thicken the sauce: Xanthan gum or cornstarch if you are not low carb.

What kind of meat do you use in Beef and Broccoli?

Flank steak is the cut of meat usually used for homemade Beef and Broccoli. You can also use skirt steak if that is what you prefer. These types of steak are excellent when cut thin, which is ideal for this recipe. 

You want to be sure that you are cutting your steak diagonally and against the grain. Cutting diagonally helps with breaking down any remaining fiber, which in turn gives you a juicier steak! It is easiest to find the grain when your steak is raw- the grain is the white lines running down the front and the back of the steak. Since we’re cutting our steak diagonally against the grain, we’re cutting across these white lines at around a 45 degree angle.

How to make Beef and Broccoli

Beef and Broccoli is made in three simple steps. The first step is to slice and sear the steak until cooked through, then set aside. The second step is to use the same skillet and make a low carb stir fry sauce, add the broccoli and a thickening agent. The last step is to add the steak back to the skillet and heat through!

This recipe is so easy to make your own! I only included broccoli in mine, but you could easily add any vegetables you want to this low carb stir fry. Any of these combinations would make a delicious low carb stir fry. You can also change the meat to whatever type you prefer- chicken, pork or tofu would all work well here. Some low carb vegetables you could use are:

  • Chopped cabbage
  • Bok choy
  • Bell Peppers
  • Green onions
  • Brussel sprouts
  • Green beans 

How many carbs are in beef and broccoli?

This recipe uses low carb ingredients such as golden monkfruit sweetener verses traditional brown sugar or honey. Those simple changes make this normally high carb dish a very low 4.9 net carbs per 1 1/4 cup serving!

Keto Beef and Broccoli

Ingredients

  • 1 1/2 lb flank steak, sliced into thin strips
  • 1-2 tablespoons oil for cooking the steak
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 2 tablespoons sesame oil
  • 1 teaspoon chili garlic sauce
  • 1/3 cup low sodium soy sauce
  • 1/3 cup brown sugar monkfruit
  • 1 cup broth (any variety)
  • 4 cups fresh broccoli florets
  • 1 teaspoon xanthan gum (or 1 tablespoon cornstarch if not keto)
  • 2 tablespoons water

Instructions

  1. Slice the flank steak against the grain into thin strips. In a large skillet over medium high heat add 1-2 tablespoons of oil. Add the beef in batches and sear until cooked through. Remove from the skillet and set aside.
  2. In the same skillet reduce the heat to medium. Add the garlic, ginger, sesame oil, chili garlic sauce, soy sauce, monkfruit and broth. Stir well and bring the stir fry sauce to a simmer.
  3. Add the fresh broccoli to the sauce, toss to coat. In another small bowl combine the xanthan gum and water. Stir the mixture into the sauce, as it simmers the sauce will begin to thicken.
  4. Add the steak back to the skillet and heat through. Serve immediately with sesame seeds and green onions if desired.

Notes

Xanthan gum is a low carb thickener. If you wish to skip this you can, you will just need to allow the sauce to simmer longer before adding the broccoli so it reduces and thickens on its own. It will not get as thick, if you do not use a thickening agent.

You can also use cornstarch if you prefer, it has 6 net carbs per tablespoon so it will add 1 net carb per serving.
