Crock Pot Buffalo Chicken

A keto slow cooker recipe is always going to be a huge win in my book. This slow cooker buffalo chicken recipe is one of my best yet! The recipe features tender, slow cooked shredded chicken that’s been tossed in a super easy and creamy buffalo sauce! It is absolutely full of flavor! We love this recipe even more than buffalo chicken wings and it is easier to prepare!

This easy chicken recipe is perfect for sandwiches, lettuce wraps, quesadillas, tacos or in your favorite salad. It is also a great recipe for game day or keto meal prep! You probably already have most of the ingredients for this meal on hand, and a large serving is only 1.4 net carbs and under 300 calories!

Ingredients for Buffalo Chicken in Slow Cooker

As always, here is a quick overview of the ingredients used in our slow cooker chicken. For the complete recipe, just scroll to the bottom of the page.

  • Chicken (we prefer boneless skinless chicken breasts but skinless chicken thighs would also work)
  • Ranch seasoning packet
  • Buffalo sauce, apple cider vinegar
  • Minced garlic, butter, cream cheese

How do I make this Slow Cooker Chicken?

You won’t believe how simple this meal is. It comes together in only 2 easy steps!

  1. Spray your slow cooker with cooking spray, or use a liner. Add your chicken to the crock pot and sprinkle with Ranch seasoning. Add your buffalo sauce, vinegar and minced garlic to the top of the chicken. Top with butter and cream cheese.
  2. Cook on low for 6 hours. Shred the chicken and toss back in the buffalo wing sauce in the slow cooker.(*Optional-garnish with some cheddar cheese and blue cheese crumbles prior to serving)

Do I need anything special for this recipe?

One of the best things about this recipe is that there’s no prep and barely any cleanup. Just put your ingredients in the slow cooker and come home to a delicious low carb dinner! My Crockpot Buffalo Chicken is a great recipe for weeknights, as a healthy lunch or if you have picky eaters. This meal is definitely kid-friendly! You can easily adjust the amount of spice to make sure everyone in your house will enjoy this buffalo chicken. Try this easy slow cooker chicken this week!

How to Store and Reheat Crock Pot Chicken?

To store this crockpot chicken, store in airtight containers and keep in the refrigerator. This chicken will stay fresh for up to four days. To reheat, just pop onto a microwave safe plate and heat in 30 second increments until hot enough for you.

What should I serve with shredded Buffalo Chicken?

This meal is fantastic as a topping to a salad or served in a lettuce wrap. We also like to serve as a buffalo chicken dip with celery sticks and ranch dressing. You could also wrap in a low carb tortilla and either have easy Buffalo Chicken tacos or pop into the Air Fryer for a delicious Air Fryer Quesadilla!

Another fun family idea is to serve this creamy chicken in the middle of a Chicken Taco Salad Board. Everyone in the family could decide what they wanted on their tacos, or you could have each member assemble their own! This is a fun way to get kids involved in dinner.

Tips for this Slow Cooker Buffalo Chicken

  • I recommend cubing the cream cheese versus adding it as a block. It will melt more evenly and be easier to spread in the sauce.
  • If you have family members that are more sensitive to spice than others, you can prepare this chicken with a smaller amount of buffalo sauce. When those who want more of a kick to their meal are ready to eat, they can top theirs with extra sauce!
  • I personally prefer cooking this chicken on low and letting it slowly cook all day. If you are short on time, you could cook this meal on high for 4 hours.
This Crockpot Buffalo Chicken is going to become one of your favorites for keto meal prep! This chicken recipe is easy, delicious and under 2 net carbs!

Is this good for keto meal prep?

This Crockpot Buffalo Chicken was made for keto meal prep! Simply prepare ahead of time and store in your favorite meal prep containers. Pack with Ham and Cheese Pinwheels, Keto Lunch Skewers or Keto Chicken Salad for extra protein. Add Air Fryer Broccoli, Crispy Zucchini Chips or Air Fryer Green Beans for a serving of vegetables. For dessert, try Lemon Cookies, Turtle Brownies or Pumpkin Cheesecake Truffles!

Slow Cooker Ginger Garlic Pork Tenderloin is an effortless Asian dish that is the perfect combination of sweet and savory!

At the end of a busy day, I really love reliable meat recipes that can be paired with whatever random vegetable I happen to have around that day. Preferably, these recipes are simple and forgiving like this Keto Slow Cooker Zesty Ranch Chicken, this Keto Parmesan Tilapia, these Sesame Shrimp Skewers, or Pecan-Crusted Pork Chops

Let me introduce you to my new staple recipe: this Slow Cooker Ginger Garlic Pork Tenderloin! With a handful of ingredients and spices, you’ll have a juicy, flexible entrée worthy of company!

This versatile, tender Asian pork tenderloin recipe comes with a delicious sauce that you’ll want to spoon over whatever veggie you happen to have handy! It’s meant to be prepared in a slow cooker, but I’ve provided Instant Pot instructions too, just in case.

Ingredients for Ginger Garlic Pork Tenderloin

As always, you will find the recipe and instructions below, just keep scrolling. This is a quick overview of the ingredients you will need for the Asian pork tenderloin marinade and the remainder of the recipe:

  • Pork tenderloin
  • Garlic salt
  • Garlic powder
  • Onion powder
  • Ground cinnamon
  • Red pepper flakes
  • Paprika
  • Garlic cloves
  • Soy sauce
  • Brown sugar monkfruit or Swerve
  • Rice vinegar
  • Fresh ginger
  • Sesame oil
  • Water

Slow Cooker Ginger Garlic Pork Tenderloin is an effortless Asian dish that is the perfect combination of sweet and savory!

How to Make Ginger Garlic Pork Tenderloin

We love pork tenderloin. Our go-to has always been grilled pork tenderloin, but this keto slow cooker pork tenderloin is great for the chilly months or times when you just don’t feel like grilling.

This Ginger Garlic Pork Tenderloin is slow cooked until it’s perfectly tender! You can make this recipe in a few easy steps:

  1. Combine the spice mix and rub generously over the pork tenderloin.
  2. Place the pork in the bottom of the slow cooker with a few whole garlic cloves. Pour in some water to keep your meat moist, taking care not to pour it directly on the spice mix.
  3. Cook on low for 6-8 hours.
  4. When ready to serve, combine the keto pork tenderloin marinade ingredients in a small sauce pot over medium heat. Bring to a simmer and allow the sauce to simmer a few minutes and thicken.
  5. Remove the Asian pork tenderloin from the slow cooker onto an oven proof pan. Pour half of the sauce mixture over the pork and broil 3-4 minutes until it begins to crisp.
  6. Spoon the remaining sauce over the meat before serving.

How Long to Slow Cook Pork Tenderloin?

You’ll need to cook the keto pork tenderloin on low for 6 to 8 hours. I prefer cooking the pork on low, because I find it’s not as tender when I cook it for a shorter amount of time on high.

Can Pork Tenderloin Be Made in an Instant Pot?

Yes, you can also make this Asian-inspired ginger garlic pork tenderloin in an Instant Pot.

  1. Place the seasoned pork tenderloins, garlic and water to the Instant Pot.
  2. Secure and seal the lid, set the Instant Pot to 8 minutes, and allow it to manually release pressure for an additional 10 minutes.
  3. After venting, remove the pork tenderloin to an oven-safe pan and discard any liquid remaining in the Instant Pot.
  4. Add the sauce ingredients to the Instant Pot, using the sauté function bring the ingredients to a simmer, stirring occasionally, for approximately 5-6 minutes until it has thickened.
  5. Follow the remaining instructions for broiling the tenderloin if desired.

Each serving has less than three net carbs each.  Slow Cooker Ginger Garlic Pork Tenderloin is an effortless Asian dish that is the perfect combination of sweet and savory! What to Serve with Pork Tenderloin

Not sure what sides to serve with this Asian pork tenderloin? Here are some side dishes I recommend:

Tips for Making Slow Cooker Pork Tenderloin

  • I recommend cooking the pork tenderloin low and slow for about 6 to 8 hours rather than on high for a shorter period of time. This creates an ultra juicy, tender pork tenderloin.
  • Be careful when adding the water or broth to the slow cooker. You don’t want to pour it directly over the pork tenderloin as that would remove the spice rub.
  • Leftover pork tenderloin can be reheated gently in the oven or on the stovetop and used to make sandwiches, salads, and more.

Ingredients for Low Carb Crockpot Candy

  2. Heat the mixture on low heat for 1.5-2 hours, stirring occasionally.
  3. Scoop the mixture using a 1-inch cookie scoop onto wax paper or a silicone-lined baking sheet.
  4. Top with sea salt or sugar-free sprinkles, then chill the candy until hardened.

Low-Carb CrockPot Candy is the perfect keto and diabetic-friendly holiday dessert! You only need four simple ingredients!

How to Store Keto Crockpot Candy

As with most chocolate treats, this candy is best stored in the refrigerator to avoid any melting disasters. If you’re planning on gifting someone your homemade Keto Crockpot Candy, just keep it cool for as long as possible before handing over their surprise!

Can the Peanuts Be Substituted?

Yes, most definitely! To make peanut-free Crockpot candy, simply swap out the peanut butter and peanuts for a deliciously smooth almond butter and roasted almonds.

In fact, you can use pretty much any nut butter you fancy to suit your unique dietary requirements or taste preferences.

Low-Carb CrockPot Candy is the perfect keto and diabetic-friendly holiday dessert! You only need four simple ingredients!

Tips for Making Crockpot Peanut Clusters

  • Be sure not to forget that the Crockpot chocolate peanut clusters are cooking! If you overcook the candy, the chocolate will become hard.
  • If you do find your chocolate is slightly overcooked, you can add a spoonful of coconut oil and it will help to soften and blend beautifully.
  • Do a taste test before adding salt. Depending on the brand and type of peanut butter or peanuts you use, it might already have the perfect amount of salt. Do a quick taste test before adding extra sea salt.

More Low-Carb Desserts:

I don’t know about you, but I have a real sweet tooth!  I absolutely love cooking up new and exciting keto-friendly desserts. Because who says being on a keto diet means you can’t enjoy something sweet and delicious?

This Keto Cabbage Soup is a true low carb winter staple! At just under 6 net carbs with Instant Pot, Slow Cooker and stove top instructions this is a keto soup perfect for any occasion!

I wanted to squeeze in one more keto soup recipe for you before we close out the year! This keto cabbage soup with ground beef is not only a delicious, hearty low-carb soup you will love, but it is also perfect for New Years!

As I mentioned a few days ago when I shared this easy one pan Cajun Pork Chops with Fried Cabbage, cabbage is a traditional ingredient served on New Year’s Day. Serving something like this low-carb cabbage soup is great on New Year’s because it serves eight.

However, there are some other really great cabbage recipes that are also keto, including this Cheesy One Pan Cabbage Casserole and this Keto Sausage and Cabbage Breakfast Hash.

Ingredients in Keto Cabbage Soup

This easy and delicious ground beef and cabbage soup is based off of my favorite One-Pan Cabbage Casserole. It has many of the same elements, like a spicy tomato sauce and great flavor from chili powder, which complements the cabbage so well.

For this recipe, you will need the following basic ingredients:

  • Ground beef or turkey
  • Cabbage
  • Bell Pepper
  • Canned Tomatoes with Green Chilies
  • Tomato Paste
  • Spices
  • Beef Broth

This Keto Cabbage Soup is a true low carb winter staple! At just under 6 net carbs with Instant Pot, Slow Cooker and stove top instructions this is a keto soup perfect for any occasion!

How to Make Keto Cabbage Soup 3 Ways

One of my favorite things about this keto unstuffed cabbage soup recipe is how incredibly versatile it is. Keto cabbage soup can easily be made in an Instant Pot, slow cooker, or right on your stove top.

Each cooking method is listed below, with more details in the recipe card.

However, the general method is the same: cook the beef and drain off any fat. Add the remaining ingredients and stir well. Cover and allow the cabbage to cook down and give the flavors a chance to meld.

1. Instant Pot Method

Here are the basic instructions for making Instant Pot cabbage soup:

  1. Use the sauté function and lightly spray the bottom of the pan.
  2. Brown the meat and drain off any grease, turn the sauté function off.
  3. Add remaining ingredients, stir well.
  4. Secure the lid to the instant pot and make sure the steam valve is CLOSED. Set the pressure cooker cycle for 15 minutes.
  5. Once the cook time ends, allow the steam to naturally release for 5-10 minutes, then carefully release the steam manually.

2. Slow Cooker Method

Here are the basic instructions for making slow cooker cabbage soup:

  1. Brown meat in a large skillet, then drain off any grease.
  2. Add the cooked meat to the bottom of the slow cooker and then add remaining ingredients. Stir well.
  3. Cover and cook on high for 3-4 hours or on low for 7-8 hours.

3. Stove Top Method

Here are the basic instructions for making hamburger cabbage soup on the stovetop:

  1. Heat a large stockpot or dutch oven to medium heat, lightly spray the bottom.
  2. Brown the meat and drain off any grease.
  3. Add remaining ingredients, stir well.
  4. Bring mixture to a simmer and cover, reduce heat to low and simmer 30-40 minutes until the cabbage has reduced in size.

This Keto Cabbage Soup is a true low carb winter staple! At just under 6 net carbs with Instant Pot, Slow Cooker and stove top instructions this is a keto soup perfect for any occasion!

Can Cabbage Soup Be Frozen?

Technically yes, but I avoid freezing this low-carb cabbage soup because the cabbage often changes texture once frozen.

Can I Use Another Ground Meat?

Yes, of course! I made this as a hamburger cabbage soup recipe, but you may substitute ground chicken or turkey if desired.

Tips for the Best Ground Beef and Cabbage Soup

  • Because cabbage is so hearty, the soup can be made a couple days before you plan on serving it. It reheats beautifully!
  • I like to garnish individual bowls of cabbage soup with shredded cheddar and chopped chives.
  • For a spicier keto cabbage soup, add extra chili powder or a pinch of red pepper flakes.

Today I am sharing a recipe you guys are going to love! This Instant Pot Buffalo Chicken Soup recipe is the perfect keto dinner. It is easy, delicious, makes plenty, and is ultra low-carb!

In this house, we are huge buffalo chicken fans. Actually, if I ask my husband what he wants for dinner it is always the same three things — buffalo chicken, tacos, or burgers. He is a simple man, ha!

Now, just in case you are reading this and do not have an Instant Pot, don’t worry I have also included slow cooker instructions. This recipe can easily be made in a pressure cooker or a CrockPot, whichever you prefer.

Ingredients in Buffalo Chicken Soup

Soups can be tricky because they are generally so full of carbs. Even if you make something like a vegetable beef soup, it can run on the high side of carbs because of the vegetables.

For this keto buffalo chicken soup, I kept things really simple and used ingredients that complement the buffalo chicken flavor so it really shines.

For this recipe, you need:

  • Chicken breasts
  • Butter
  • Celery
  • Bell Pepper
  • Garlic
  • Paprika
  • Garlic Powder
  • Onion Powder
  • Chicken Broth
  • Buffalo Sauce
  • Ranch Dressing
  • Cream Cheese
  • Shredded Cheddar

How to Make Buffalo Chicken Soup

This easy keto Instant Pot recipe is a really straightforward three-step process. Here’s a rundown of the recipe:

  1. Sauté the celery, bell pepper and garlic in butter. Then add the chicken breast, paprika, onion powder, garlic powder and chicken broth.
  2. Place the lid on the Instant Pot, seal the pressure valve, and set the pressure cooker to 20 minutes. Allow the pressure to naturally release for 5-10 minutes, then manually release the rest.
  3. The last step is to remove the chicken and shred it. While the chicken is out of the pot, add the buffalo sauce, ranch dressing, cream cheese and shredded cheddar. Whisk the mixture until it is completely smooth. Then, add the chicken back to the soup.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon minced garlic
  • 1 1/2 cup chopped celery
  • 1 1/2 cup chopped bell pepper, (I mix green and orange)
  • 2 pounds chicken breast
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 (32 ounce) carton chicken broth
  • 1/2 cup low carb ranch dressing, room temperature
  • 1/3 cup buffalo sauce
  • 4 ounces cream cheese, room temperature
  • 2 cups shredded cheddar

Instructions

Set the Instant Pot to the sauté mode. Sauté the celery, bell pepper and garlic in the butter.

Add the chicken breast, paprika, onion powder, garlic powder and chicken broth.

Place the lid on the instant pot, seal the pressure valve and set the pressure cooker to 20 minutes.

Allow the pressure to naturally release for 5-10 minutes, then manually release the rest then remove the lid.

Remove the chicken and shred it, set aside.

While the chicken is out of the pot add the buffalo sauce, ranch dressing, cream cheese and shredded cheddar. Whisk the mixture until it is completely smooth. This may take 1-2 minutes of vigerious stirring.

Then add the chicken back to the soup.

Top with chopped green onions, cheese and additional buffalo sauce if desired.

Notes

It is important that the cream cheese and ranch dressing are room temperature so they do not curdle and mix smoothly into the soup.

SLOW COOKER: If you do not wish to saute your celery, garlic and bell pepper you can skip the first ingredient, which is butter.

SLOW COOKER DIRECTIONS

  1. Place the garlic, celery, bell pepper, chicken breast, spices and chicken broth in the slow cooker.
  2. Cook on low for 8 hours or on high for 4 hours.
  3. Remove the chicken and shred.
  4. Add the cream cheese, buffalo sauce, ranch dressing and shredded cheddar. Whisk vigerously until smooth. Add the chicken back to the soup.
