Ingredients for Margarita Popsicles

Here’s a quick overview of what you’ll need for this recipe. For exact measurements, keep scrolling down to the printable recipe card below.

  • Strawberries – Cored and halved for easy blending. Taste your batch first–If the strawberries are already on the sweeter side, you may want to start with a bit less simple syrup, especially if you’ve been keto or sugar free for long.
  • Tequila – This is what gives that great margarita flavor. If you prefer to make a batch without alcohol, replace with water to keep it low carb or orange juice to add more flavor. Water with sugar-free orange flavoring would work great as well.
  • Lime juice + limes – Unsweetened bottled juice is fine, but you want two limes for the cute garnish slices that get skewered onto the stick.
  • Sugar Free Simple Syrup – There are store-bought versions you can find (either with the mixers or sometimes in the coffee aisle), but we prefer making our own Keto Simple Syrup with liquid monk fruit. This is the least expensive and easiest option we’ve found (plus there’s no sugar alcohols in case you’re sensitive to those).

How to Make Sugar-Free Strawberry Margarita Popsicles

These easy keto-friendly popsicles are simple and quick to make! You’ll need a blender, 6 popsicle sticks, 6 5-ounce cups, and a freezer. Here’s a step-by-step guide for making this strawberry margarita recipe.

Blend margarita

Place all of your ingredients in the blender and give it a whirl! You just want to make sure there are no big chunks of strawberry; the smoother the margarita, the easier the popsicles are to eat.

Pour margaritas

Line up 6 5-ounce cups and pour about 4 ounces of margarita into each one. Get these as even as you can so that they will all be frozen at the same time when you’re ready to serve.

Assemble lime popsicle sticks

Cut and discard the ends of the limes. Cut each lime into three slices (about 1/4″ thick, depends on the size of your limes). Place a slice on the cutting board, then stab the popsicle stick through the center. Push it in 1 1/2-2″, then put in one of the margarita cups. The lime should sit right on top of the margarita. Continue until all cups have lime-skewered popsicle sticks.

Freeze

Transfer cups to the freezer and freeze for 4-6 hours. Once frozen solid, you can serve immediately! If the popsicle doesn’t pull out immediately, gently rub the outsides of the cup with your hands to warm it slightly, then lightly tug the popsicle again.

Store

These popsicles will last 3-6 months, but they have the best flavor and texture the sooner you eat them. If you plan to keep them longer than 2 weeks, place them in a freezer bag to protect them from other freezer smells in the freezer.

Tips and tricks for the BEST popsicles with alcohol

  • Get the right ratio – You want to have 4 or 5 times as much non-alcoholic liquid as you have alcoholic liquid so that the popsicle will freeze. For this recipe, there 2-2.5 cups of pureed strawberries, lime juice, and simple syrup to just over 1/2 cup of tequila.
  • Test before freezing – Strawberries can range from super sweet to a bit tart, so you want to taste test the margarita before pouring and freezing. Add more lime juice if it’s too sweet, more simple syrup if it’s too tart.
  • Salt just before serving – Salt is tricky because it will cause the popsicle to melt much faster. If you want to salt them, I recommend placing one side of the popsicle (out of the cup) in a plate of salt and then serving immediately. We enjoyed these without salt, so feel free to skip this if you’re worried about melty messes.
  • Change it up – This is a great base recipe that can be tweaked for tasty popsicles no matter your season or vibe! Swap out the strawberries for raspberries or blueberries, maybe use vodka or rum instead of tequila, or use lemon juice instead of lime juice. Infuse your simple syrup (this post has great tips for spicy, fruity, or herby syrups). If you’re watching the carbs, be careful when switching fruits as most have more sugar than strawberries.

Instructions

Smoky bourbon, vinegary pickle juice, and tangy lime juice are all evened out with a homemade sugar-free simple syrup. It’s a well-balanced cocktail that is great to serve with a lot of bar food, grilled dishes, and meaty meals. It’s a great option for those who normally don’t like overly sweet or fruity drinks!

While I used dill pickle juice, you could easily use the juice from bread and butter pickles, spicy pickles, or whatever type you prefer. When you finish a jar of pickles, it’s easy to freeze the juice in ice cube trays, then you can thaw just enough for cocktails whenever you’d like! 

Because this isn’t a frozen drink and doesn’t include soda water, you can mix it up ahead of time, then serve on the rocks whenever you’re ready. Make a big jug of it and take for parties, camping, potlucks, tailgating, and more!

How to make a Pickleback sugar free

This drink is very straightforward! Simply put the whiskey, pickle juice, lime juice, and sugar free simple syrup into a shaker with ice. Shake for about 30 seconds before straining over ice with a pickle garnish.

How to make sugar free simple syrup

Keto Simple Syrup is incredibly easy to make! I’ve had success using two different ways — One using liquid monk fruit sweetener and one using allulose sweetener! I did not have success making simple syrup by dissolving any erythritol-based products (like Swerve or monk fruit sweeteners that contain erythritol). The erythritol will begin to crystalize as it cools down, so it’s not great for mixed drinks.

Simple Syrup with Allulose:

Bring 1 1/4 cup of allulose and 1 cup of water to a boil and stir until allulose has dissolved. Let cool completely, then store in an airtight container in the fridge up to a month. This syrup has very little aftertaste and is thicker like normal simple syrup.

Simple Syrup with Liquid Monk Fruit:

Pour about 1 tablespoon of liquid monk fruit sweetener into 1 cup of water. Adjust a few drops at a time until you’ve reached your taste preference. This syrup is fairly inexpensive to make, you don’t have to bother heating up and cooling down the syrup before using it, and it makes the sweetness of your drinks to be easily adjustable.

How many carbs in whiskey?

There are zero carbs in bourbon. The danger of a whiskey cocktail usually resides in the mixers often tossed in the glass with it. However, if you can make sure to use sugar free simple syrup and choose low-carb additions, you can enjoy several bourbon cocktails without consuming too many carbs. This Keto Mint Julep has 0 net carbs (and only 0.1 total carbs)!

Often, people on the keto diet will recommend drinking pickle juice and eating pickles. Skinny Mango Margarita

Going keto doesn’t mean you can’t still enjoy sipping a margarita on the porch! If you like my original Keto Margarita, you’ve got to try this version using just enough fresh (or frozen) mango for a fun summer twist! This drink is low carb, low calorie and has no added sugars, making it a great skinny drink option. This smooth, sweet low carb drink is so good, you’ll make it again and again!

There’s no margarita mix, erythritol, or sucralose in this keto cocktail, so there are no sugar alcohols. There is also no aftertaste and no cooling effect- this low carb cocktail tastes just like a restaurant margarita! There is also no triple sec, but you can add an orange flavored soda water for a sparkling margarita, just in time for summer!

This keto margarita can be easily doubled or tripled for your next pool get together, beach day or a party! All of your friends and family are going to be begging you for the recipe. The sweet mango and monk fruit are the perfect contrast to the tequila and lime juice for a beautifully balanced drink! Feel free to blend with ice to make a skinny frozen margarita!

Mango Margarita recipe

As always, here is a quick overview of the ingredients used in our keto Mango Margarita. For the complete recipe, just scroll to the bottom of the page.

  • Tequila – Silver tequila is best for margaritas
  • Lime juice – freshly squeezed or bottled is fine
  • Simple syrup – I made a keto simple syrup using Organic Monk Fruit Liquid Sweetener mixed in water
  • Ice – You’ll need some for the shaker and some for the glass (whether you’re serving on the rocks or blended frozen)
  • Mango – This can be fresh or frozen.
  • Orange sparkling water/soda water – This is optional, mainly used to add that citrus flavor a normal margarita gets from triple sec. Can be left out or replaced with lime or plain sparkling water. 
  • Garnish- salt, additional lime wedges or a mixture of monkfruit and salt would all work well

How to make a keto margarita

This keto cocktail is so simple to make and comes together quickly! First wet the rim (I like to use a lime wedge for this) and dip the outside edges of the rim in your salt. If serving on the rocks, add your ice.

Next, add your mango, tequila, simple syrup, and lime juice to your blender. If serving these margaritas frozen, add your ice as well. Blend until well incorporated. Pour into your prepared glass and top with orange sparkling water if you choose.

Sugar Free Simple Syrup

Simple syrup is usually a 1:1 mixture of sugar and water. Using sugar substitutes can be tricky as some have side effects, some don’t dissolve very well, and some can be expensive. Using the Monk Fruit Liquid by Now Foods is the best product I’ve used for this simple syrup. 

This monkfruit is 0-calorie, 0-carb and 0-sugar, making it perfect for a keto diet. I also have not experienced a cooling effect or aftertaste.  You only need 1 tablespoon for just over a cup of simple syrup, so a small 2 ounce bottle is enough about 4.5 cups of simple syrup (or over 60 margaritas)!

You can try this method with other liquid sweeteners, but be aware that not all liquid sweeteners have the same level of sweetness. Depending on the brand, you may need a little more or a little less — You may want to try adding 1 teaspoon at a time until you reach a reasonable level of sweetness for your syrup.

How to store homemade simple syrup

This sugar free syrup can be stored in the fridge for several months. Before you use it, just give it a good shake to be sure everything is mixed well.

What should I serve with this keto margarita?

I always like to start a Mexican night with this Chuy’s Jalapeno Copycat Dip. For your main course, try Marinated Flank Steak, Instant Pot Tacos or Keto Sour Cream Enchiladas! Another favorite of mine is Shrimp con Queso or Grilled Shrimp Skewers. For dessert, try these Keto Cinnamon Twists!

Mango Margarita

  • 1.5 ounces tequila
  • 3/4 ounce lime juice
  • 1/2 ounce sugar free simple syrup
  • 1/2 ounce chopped mango
  • 2 ounces orange sparkling water (optional: this gives the hint of orange that triple sec usually provides)

Instructions

To make the simple syrup:

  1. Combine 1 tablespoon of liquid monk fruit sweetener with 1 cup of water. Store in an airtight container; it'll last several weeks in the fridge.

To make the mango margarita:

  1. In a blender, add the mango, tequila, simple syrup, and lime juice. If making a frozen margarita, add the ice as well. Blend until well incorporated.
  2. Wet and salt the rim of your glass and fill it with ice (unless serving the margarita frozen). Pour the margarita into the glass and top with sparkling water if you'd like to add a citrus flavor most margaritas have.

This keto cocktail is going to be your go-to drink of the summer! Made with a sugar free jalapeno simple syrup, lime juice, chopped watermelon and your favorite tequila, you won’t be able to get enough of this skinny cocktail! At only 3.4 net carbs and 111 calories a serving, you can still enjoy this refreshing drink while sticking to your keto diet!

This keto drink is perfect for entertaining. The pretty light pink color makes it a great addition to any table, but especially bridal showers, brunch or any celebration you’re having! This sugar free cocktail doesn’t use any margarita mix and it also doesn’t contain erythritol, so if you are sensitive to sugar alcohols, you won’t have a problem with this low carb drink!

I added some orange sparkling water to this skinny margarita as a substitute for triple sec, but it’s completely optional. I also think a lime sparkling water would have complimented this very well. Serve with Shrimp con Queso or Steak Fajitas for an amazing keto meal! This recipe can easily be made as a frozen margarita or on the rocks.

Whether you want your margarita sparkling, on the rocks, or frozen, it’s super easy to customize. You can also adjust the amount of spice in your simple syrup to your personal preference. This drink will cure your summer watermelon craving!

Ingredients for Watermelon Margarita

As always, here is a quick overview of the ingredients used in our keto margarita. For the complete recipe, just scroll to the bottom of the page.

  • Sugar free simple syrup- made with liquid monkfruit sweetener and Jalapenos
  • Tequila- Silver tequila (sometimes referred to as tequila blanco) is best for margaritas
  • Lime juice- I used freshly squeezed, but the bottled version is also fine.
  • Watermelon- chopped & seedless
  • Optional: Orange sparkling water- you can use a different flavor or an unflavored sparkling water here. This just adds back some citrus flavor since we are omitting the triple sec
  • Ice
  • Garnish- lime wedges, salt or watermelon wedges (don’t add too much watermelon if you’re keto- it does have a high amount of carbs)

How to make Sugar Free Simple Syrup with Jalapenos

To make this keto simple syrup, slice up 1-2 jalapenos and add to a small pot with 1.25 cups of water. Bring to a boil, lower the heat and simmer for 10 minutes. Strain your water into a jar and add 1 tablespoon of liquid monkfruit. Store in the fridge for several weeks. Give your jar a good shake to make sure you get good, balanced flavor. 

This sugar free simple syrup is so easy to make and can be customized to your particular spicy or sweetness level! If you prefer more or less sweetness, then adjust your liquid monkfruit accordingly. For additional heat, increase your jalapenos. 1 jalapeno without the seeds is going to give you a very mild flavor with just a hint of spice (perfect for those who don’t love spicy recipes). Two jalapenos without the seeds is mildly spicy, but if you prefer a hotter flavor, just add the seeds of the jalapenos!

How to make a Keto Margarita

Add your tequila, lime juice, simple syrup and watermelon to a blender. If you’re making frozen margaritas, add a glass full of ice. Blend until the watermelon is well incorporated with the rest of the ingredients. If you’re using ice, blend to a slushie consistency. Salt the rim of your glass. If you’re serving on the rocks, add ice to your glass. Add your blended ingredients, top with sparkling water and serve!

Can you make frozen margaritas?

Absolutely! Just blend everything with ice, except for the sparkling water, which you’ll add right before serving. You can use fresh or frozen watermelon.

To make the simple syrup

What is in a Mint Julep?

A Mint Julep is a blend of bourbon (which is a type of whisky), mint leaves, water, simple syrup and crushed ice. This Southern cocktail is incredibly delicious, as well as being very refreshing!

How to make a Mint Julep

First, you’ll need to prepare your keto simple syrup. Take your Liquid Monkfruit and mix with water. Monkfruit is very sweet, much sweetener than sugar, so you need a very small amount. One tablespoon per one cup of water is all that’s needed. If you prefer things to be a little less sweet, or if you’re using a different brand, I recommend starting at 1/2 a tablespoon per one cup of water and adjusting as needed. 

In a cocktail glass, add your mint leaves and simple syrup. Muddle, or lightly mash the leaves, for about 30 seconds. Add your crushed ice to your glass, add your bourbon and a splash of water. Stir and serve!

What should I serve with a Mint Julep?

Tips for the best Mint Julep recipe

  • Because there are so few ingredients, the splash of water is important to mellow out the bourbon. You can use sparkling water if you want to add some fizz.
  • Crushed ice is ideal for the Mint Julep because it’s not shaken. The crushed ice melts quickly, chilling the glass and softening the alcohol taste.
  • If you don’t want to make the simple syrup, you can instead add about 1/3 teaspoon of the liquid monkfruit and about 2 tablespoons of water to the mint, then muddle.
  • If you don’t like sweet drinks, start with just 1/2 ounce of simple syrup. Increase sweetener to your preference.

Instructions

  1. In a 12-ounce cocktail glass, add your mint leaves and simple syrup. Muddle about 30 seconds.
  2. Add crushed ice to the very top (mounding over the top if possible), then pour in bourbon and a splash of water.
  3. Stir vigorously for about 15 seconds to chill glass and mix the drink. Serve immediately.

Keto simple syrup: 1 cup of water + 1 tablespoon of Liquid Monkfruit Sweetener

*If you do not like sweet drinks, reduce the simple syrup in the cocktail recipe to 1/2 ounce instead of a full ounce.
