This Spicy Gouda Bacon Dip is perfect for entertaining! Creamy Gouda gets paired with spicy serranos and smoky bacon for one delicious dip. 

I don’t know about you, but dips are probably my favorite part about holiday parties. The cheesy goodness with crackers or fresh vegetables, man I could make a meal just off dips alone. This Spicy Gouda Bacon Dip has become one of my favorites that I tweak year after year. It’s like a grown-up more sophisticated version of a Jalapeno Popper Dip and, well, what could be better than that?

I’m using Castello Gouda which is a mild and creamy cheese that’s perfect for any occasion and recipe. It has a rich, buttery, and slightly sweet flavor with a silky smooth texture that mixes into a piping hot dip perfectly. Castello has been making delicious cheese since 1893, and it shows! You’ll start by shredding the Gouda, then mixing it up with cream cheese, sour cream, serranos, bacon, green onions, garlic powder, and white pepper. Yes, white pepper. Have you ever had it? It’s one of my secret ingredients in the kitchen, I love it! White pepper is milder than black with less of a bite; it still adds plenty of peppery spice, but without the harshness. It’s perfect in dips like this. 

While the dip would be delicious as is, at this point we’re popping it in the oven to get nice and bubbly before serving. This makes it perfect for holiday parties since you can prep the dip ahead of time by mixing it all up and placing it in your skillet, then heating it up when you get to the party. You can also mix it up a day or two ahead of time to cut down on your day-of cooking.

Let’s get to some common questions I can foresee being posed about this recipe:

Do I have to make it spicy?

Nope! Have picky eaters or kiddos that don’t like spicy foods? Just leave out the serranos, the dip will still taste amazing. 

Can I use Jalapenos instead of serranos?

Yes, you can! I like the serrano flavor better than jalapenos in this dip but both will work if you can’t find serranos. You could also use a Fresno chili or even crushed red pepper flakes if needed.

What should I serve this Spicy Gouda Bacon Dip with?

For a holiday party, I would serve it with a variety of keto and non-keto dippers. Here are our go-to’s:

Keto Dippers:

  • Keto-friendly crackers

  • Celery sticks

  • Strips of bell pepper

  • Pork rinds

Non-Keto Dippers:

  • French bread slices

  • Carrots

  • Melba toast

  • 8 ounces Castello Gouda Cheese, shredded
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 2 serranos, minced
  • 8 slices bacon, cooked and crumbled
  • 4 green onions, minced
  • ½ teaspoon garlic powder
  • ½ teaspoon white pepper

Keto-Friendly Dippers:

How to cook Spicy Smoked Gouda Bacon Dip

  1. Preheat oven to 350° F.
  2. In a medium bowl mix together the shredded Castello Gouda Cheese, cream cheese, sour cream, minced serranos, crumbled bacon, minced green onion, garlic powder, and white pepper until combined. Transfer to an 8” cast-iron skillet.
  3. Transfer to the oven and bake for 25 minutes until hot and bubbly. Serve with keto-friendly dippers listed above.
