  • ⅔ cup powdered erythritol
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon baking soda
  • ½ cup sugar-free chocolate chips (optional)

How to cook Keto Chocolate Chip Peanut Butter Skillet Cookie

  1. Preheat oven to 350° F and grease an 8” cast iron skillet.
  2. In a medium bowl, mix together all of the ingredients except 1/4 cup of the chocolate chips until smooth. Pour the batter in the prepared pan, top with remaining chocolate chips and transfer to the oven.
  3. Bake for 22-25 minutes until the edges are crispy but the center is still soft. Remove from oven and let cool completely before slicing.
